This Creamy Lemon Butter Chicken is an ultra flavorful comfort-food entree that's easy to make in your slow cooker! Tender chicken breasts are cooked in a buttery lemon garlic sauce for a family dinner that will go down in history.

Creamy Lemon Butter Chicken

tbsp unsalted Challenge Butter

boneless, skinless chicken breasts

chicken broth

half and half

lemon juice

garlic cloves, minced (or 1 1/2 tsp minced garlic)

salt

tsp black pepper

thyme

oregano

paprika

cornstarch

Add the butter to a microwave safe bowl and heat until melted. Set aside.

2. Place the chicken breasts into a 6 quart slow cooker.

3. In a large bowl or measuring cup, combine the chicken broth, half and half and lemon juice, then add the garlic, salt, pepper, thyme, oregano and paprika. If it curdles a little bit, that’s fine.

. Add the melted, cooled butter to the lemon mixture and stir to combine.

. Pour the lemon butter mixture over the chicken, then cover the slow cooker and cook on HIGH for 3 hours or LOW for 7 hours. Slow cookers can vary a little so adjust cooking time as needed.

. Remove about 1 cup of the lemon butter mixture from the slow cooker and whisk in the corn starch. Add it back into the slow cooker and stir to combine.

. Place the top back on the slow cooker and cook for another hour, then serve.

Hi there! I'm going to make this tomorrow while I'm away at work so the longer cook time on low is probably the way to go. I have some skin-on bone in breasts that need to be used up. How would I adjust the cooling time accordingly? I also have some heavy cream that needs to be used up. Can I use that instead of half and half? Thanks!

Hmmm, this didn't work out for me. The half and half curdled slightly when I added it to the lemon juice, then curdled further during the cooking process.  After adding the corn starch and completing the cooking time, the whole thing ended up as this gelatinous, curdled, clumpy unappetizing glop! I managed to rescue the chicken from the sauce and we ate that over rice. The flavor was good, I'll give it that, but maybe it would work better to just add the half &amp; half at the end?

I'm thoroughly enjoying this website and all the recipes! I'm starting a cooking book club with your book where we will all bring one item of yours to share!  I made this for dinner and it went over well with the family.  I thought it was a little too lemony ( I used bottled lemon juice). Overall it tasted really good and was easy to make.  I used frozen chicken breasts and cooked on low for 8 hours. I probably could have used less cornstarch as well as it did thicken up quite a bit. Keep the crock pot recipes coming!

I made this recipe yesterday and my husband and my son loved it! I didn't have corn starch so I used some flour to thicken the sauce. I will definitely be making it again. Please post more crock pot recipes. This saved me so much time and tasted delicious.

chicken thigh fillets, trimmed, coarsely chopped

brown onion, finely chopped

carrot, peeled, finely chopped

celery stick, finely chopped

garlic cloves, crushed

20.00 ml plain flour

chicken stock

parsley

(1 cup) self-raising flour

table salt

milliliters (1/4 cup) thickened cream

milliliters (1/4 cup) soda water

Chicken Noodle Casserole

egg noodles

chicken soup

mushroom soup

sour cream (use light sour cream

milk

cheddar cheese

yellow onion, diced

mixed vegetables

garlic powder

tsp pepper

onion powder

Preheat oven to 350 F.

Grease a 9x13 baking dish with non-stick spray.

To a large pot of boiling water add the noodles and cook according to the package instructions. Strain and set aside.

To a large bowl, add in both cans of soup, sour cream, milk, 1/3 cup of the cheese, onion, mixed vegetables, and seasonings and stir well. Stir in the cooked egg noodles.

Pour into the baking dish and sprinkle with the remaining cheese. Bake for 28-30 minutes or until cheese is melted and bubbly.

BBQ Chicken Rolls Ups

3.8 oz can refrigerated pizza crust (or similar size)

bbq sauce, any brand works

oz canned chicken, drained (or any type of cooked shredded chicken)

green onions

Preheat oven to 425 F. Unroll the pizza crust on a large surface. Spread the bbq sauce over the crust and sprinkle with the chicken, onions, and cheese.

Roll the dough up like a cinnamon roll, starting from the long side of the rectangle, then slice into 3-inch slices.

Place onto a greased sheet pan and bake for 15-18 minutes, or until golden brown. Enjoy!

Preheat oven to 425°F. Place chicken, breast side up, on a rimmed baking sheet. Season with salt and pepper.&nbsp;

Combine chili-garlic sauce, lime zest and juice, and ginger in a bowl. Transfer half the mixture to a second bowl (about 3 tablespoons) and stir in honey; set aside. Brush remaining mixture over chicken. Roast 20 minutes.

Toss together potatoes, oil, and coriander in a bowl. Season with salt and pepper. Scatter around chicken. Roast until an instant-read thermometer inserted in the thickest part of the thigh registers 165°F, 18 to 20 minutes. Season asparagus with salt and add to pan. Roast until asparagus is tender, 8 to 10 minutes. Let chicken rest 5 minutes before carving.

Serve vegetables and chicken garnished with cilantro and reserved sauce alongside.

Paprika Chicken

lbs. boneless (skinless chicken breasts, cubed in 1/2-inch pieces)

poultry seasoning

black pepper

Mix paprika, poultry seasoning, salt and pepper in a small bowl.

Sprinkle the seasoning over the cubed chicken and toss to get it coated on all sides.

Heat olive oil in a large saute pan over medium-high heat. Add chicken and saute for 5-6 minutes.

Stir and turn the chicken pieces over and cook for another 3-4 minutes, until cooked through.

Squeeze the fresh lemon juice over the chicken and serve!
