An easy chicken salad, perfect for work lunches throughout the week or a snack.

Easy Chicken Salad

lbs Rotisserie Chicken (*Grocery store rotisserie chicken works

Cups Mayo (I used Duke's Mayo)

Dijon Mustard

Cup Chopped Celery

Cup Chopped Red Onion

Cup Chopped Green Onion

Cup Shredded Carrots

Garlic Cloves

tbsp Basil Paste

Pepper (Season to taste)

Herbs de Provence Seasoning (Season to taste)

Shred rotisserie chicken = in to small pieces using knife and/or fork.  Use all pieces of the chicken including wings and drumsticks.  Add the chicken skin as well if you would like.

Add mayo, dijon mustard, basil, carrots, celery, red onion, green onion, garlic, pepper and herbs de provence seasoning to the chicken.  Stir until completely combined and taste.  Add more mayo, mustard or seasoning as needed.

Serve room temperature or cold.  Store in the fridge.

Easy Chicken Salad made with Pecans and Cranberries in a creamy Poppyseed Dressing.  It's really that easy and delicious.

Place chicken breasts in Instant Pot. Salt and Pepper chicken.  Add Garlic.  Add 1 cup water or broth.  Set to Manual for 18 minutes.  Allow 10 minute Natural Release and then quick release.  Remove from Instant Pot and place in Refrigerator to cool.

Wash and cut Celery and set aside.  Dice Green Onions and set aside.

Cube cold cooked chicken and place in medium size bowl.  Add celery, green onions, cranberries and chopped pecans.  Toss to combine.

Add Poppy Seed dressing and stir to combine.  Add salt and pepper to taste.

Store in Refrigerator.

Serve with crackers or on bread.

Add chopped chicken to a large bowl along with celery, grapes, dried cherries, chopped pecans, mayonnaise, salt and pepper. If using chopped celery leaves, add these as well. Stir together until just combined.

2lb. boneless skinless chicken breasts,

red grapes

green onions

plain greek yogurt

mayo

dijon mustard

sage

smoked paprika

garlic powder

lemon juice

salt & pepper

To a large bowl add shredded chicken, red grapes, pecans, and green onions.

In a small bowl add yogurt, mayo, mustard, sage, smoked paprika, garlic powder, lemon juice, salt, and pepper. Whisk together.

Add the liquid mixture to the chicken dish.

Stir everything together until it is completely combined.

Serve on a slice of bread or in a cup of bibb lettuce.

How did you use MFP because when I imported it it says 360 Cal's per half cup. Someone is wrong here

Preheat oven to 350°F

Rub the olive oil all over the chicken pieces and sprinkle with salt and pepper.

Bake for 45 to 55 minutes, or until internal temp reaches 165°F using an instant-read thermometer.

Remove the chicken from the oven and let cool. &nbsp;Remove the skin then pull the meat from the bones and roughly chop.

In a large bowl, mix together the chicken, grapes, almonds, celery, scallions, dill, &amp; parsley.

In a small-medium bowl, mix together the mayonnaise, lemon, mustard, salt, and pepper. 

Add the mayo/mustard mixture to the chicken mixture and gently stir until well mixed.

Cover with plastic wrap and refrigerate for at least an hour. &nbsp;
