Here&#x27;s a super easy, delicious and highly customizable Creamy Chicken Soup recipe for your pressure cooker or instant pot that you can make with whatever you have in your pantry, freezer, or fridge.

Creamy Chicken Soup

Boneless Skinless Chicken Thighs (diced small)

Frozen Mixed Vegetables ((usually one small bag of frozen veg))

Water

poultry seasoning

Better than Bouillion

Kosher Salt

Ground Black Pepper

Evaporated Milk

Place all ingredients except for the evaporated milk into the inner liner of your Instant Pot or pressure cooker.

Cook for 2 minutes on high pressure and release pressure immediately, being careful to do this in short bursts so as to not get soup all over your kitchen (not that I&#x27;ve ever done that before 😅).

Add in the evaporated milk, stir, and serve.

I sometimes mash up the chicken with the back of a wooden spoon to break up the chicken into shreds, but this is of course entirely optional. Also, fiddly.

Perfect for chilly nights or lazy afternoons, chicken vegetable soup is the ultimate go-to comfort food!

Chicken Vegetable Soup

onion (diced)

butter

potatoes

flour

chicken broth

tomatoes (with juices)

basil

oregano

vegetables

chicken

parsley (chopped)

Cook onion in butter over medium heat until it starts to soften, about 3 minutes.

Add potatoes and cook an additional 3-4 minutes. Stir in flour and cook 1 minute more.

Add broth, tomatoes and seasonings. Simmer 12 minutes or until potatoes are softened.

Stir in vegetables and chicken. Simmer 5 minutes more.

Taste and season with salt and pepper.

Garnish with parsley and serve.

This hearty soup is full of vegetables, chicken and two kinds of beans, all simmered in a tomato broth.

Italian Chicken Bean Soup

olive oil

yellow onion (finely chopped)

celery (stalks, sliced)

carrots (peeled, quartered and sliced)

Can garlic & herb tomatoes (14 oz, do not drain)

chicken (cooked, shredded)

Can red kidney beans (14 oz)

Can white beans (any variety. 14 oz)

salt and pepper

zucchini

tbsp parsley (chopped, optional)

Heat the olive oil in a large pot over medium heat. Add the onion, celery and carrots and season with salt and pepper to taste. Cook, stirring occasionally, until vegetables are just tender, 5-6 minutes.

Add the tomatoes and chicken broth to the pot, and bring to a simmer.

Stir in the chicken, beans, and zucchini and cook for 5-7 minutes more, until zucchini is tender.

Add more salt and pepper as desired.

Sprinkle with chopped parsley and serve.

This Peruvian chicken soup is a delicious winter soup full of rotisserie chicken, rice, vegetables, and LOTS of cilantro. Super simple to make and ready in just an hour. It&#x27;s the perfect weekday or weekend soup!

rotisserie chicken, meat

(4 ounce) can diced green chiles

yellow onion, diced

red bell pepper, seeded,

cumin

Kosher salt,

Black pepper,

baby potatoes, quartered

carrots,

white rice

chicken stock, divided

cilantro leaves

serrano pepper, seeded

lime, juiced

green onions,

Pick the meat off of a rotisserie chicken...

Pick the meat off of a rotisserie chicken and set it aside.

In a soup pot add olive oil and...

In a soup pot add olive oil and set over medium-high heat.

When the oil is hot add the yellow...

When the oil is hot add the yellow onion, bell pepper, green chilies, cumin, kosher salt, and black pepper to the pot. Cook For about 10 minutes or just until the onions start to soften. Don't let the vegetables brown too much. You just want to help soften them.

Add the 2 cloves of minced garlic and...

Add the 2 cloves of minced garlic and saute for another 30 seconds or just until the garlic is fragrant.

Add in the potatoes, carrots, white rice, and...

Add in the potatoes, carrots, white rice, and chicken stock. Stir to combine.

Let the soup simmer for about 30 minutes...

Let the soup simmer for about 30 minutes or until the rice and potatoes are fully cooked. Stir the soup while it's cooking so the rice does not stick to the bottom of the pot.

While the soup cooks add the cilantro, remaining...

While the soup cooks add the cilantro, remaining 2 cloves of minced garlic, remaining 1/2 cup chicken stock, seeded serrano pepper, and lime juice to a blender. Blend until smooth and no large chunks remain.

When the soup is fully cooked turn down...

When the soup is fully cooked turn down to low, add in the rotisserie chicken and the cilantro mixture. Cook for 5 minutes just to help warm the chicken and incorporate the flavors of the cilantro mixture.

Serve with thinly sliced green onions.

Homemade Chinese Chicken Soup tastes just like what you get in Chinese restaurants. Enjoy a pot of easy Asian chicken soup made Paleo and gluten-free!

Chinese Chicken Soup Recipe

3-4.5 lbs whole chicken (giblets removed (see notes))

carrots (optional)

celery (optional)

baby spareribs (dice up or whole, optional)

water

Salt

Cilantro and chopped scallions (optional)

In a 6-quart Instant Pot, add chicken, carrots, celery, spareribs, if using, and one Chinese herbal packet.

Fill the pot with enough water to just cover the entire chicken, 8 to 10 cups. The pressure cooker should not be more than two-thirds full.

Seal the lid and valve. Set for high pressure for 50 minutes. Allow the soup to come to natural pressure release.  Please Do Not use quick release.

For slow cooker, cook on low for 8 to 10 hours or up to 24 hours.

For stovetop, bring the ingredients to a boil in a soup pot, then lower the heat and simmer for 1 ½ to 2 hours. You may need to add a bit more water to compensate for evaporation.

Season with salt to taste. Add garnish before serving if desired.

I would give 10 stars if I could! Absolutely delicious! The spare ribs added a lot of fat so I had to cool after making initially to harden and remove the fat cap but the flavor is just divine!
