This easy Chinese Chow Mein recipe is made with noodles, vegetables, chicken, and a simple chow mein sauce!

Chinese Chow Mein

chicken breasts

Tablespoon oil ((canola

Shredded cabbages ((*see note))

carrots (, shredded

celery (, chopped)

green onions (, sliced with whites and green separated)

garlic (, minced)

refrigerated Yaki-Soba noodles (discard seasoning packet**)

bean sprouts ((optional))

soy sauce

sesame oil

Tablespoon oyster sauce ((***see note))

ginger

light brown sugar

cornstarch

Prepare noodles according to package instructions.

In a small bowl whisk the sauce ingredients together: soy sauce, sesame oil, oyster sauce, ginger, sugar, and cornstarch

Heat a large pan or wok on high heat. Add oil. Add chicken, season with salt and pepper and stir fry just until cooked through.

Add cabbage, carrots, celery, and the whites of the chopped green onion and stir fry for just for 1-2 minutes or until cabbage has wilted.

Add the garlic and cook for 30 seconds.

Add the pasta and sauce and cook for 1-2 minutes until the sauce has thickened. Add remaining green onion and fresh bean sprouts, if desired. Serve immediately.

Recipe video above. The fastest, easiest Chow Mein recipe ever! Made using a couple of cheeky shortcuts - ramen noodles, a Coleslaw mix, with the noodles cooked in the same skillet. It's a quicker version of real Chow Mein - 99% of the flavour, but FASTER!

Chow Mein Ramen Noodles

tbsp oil

chicken (, sliced (thigh, breast))

ramen

200 grams/7 ounces pre shedded Coleslaw mix (, cabbage

green onion stems (,

(250 ml) water

1.5 tbsp light soy sauce ((Note 3))

1.5 tbsp Oyster Sauce ((Note 4))

tbsp Chinese Cooking Wine

tsp sesame oil (, toasted (Note 6))

tsp white sugar (SKIP

Mix Sauce in a bowl.

Heat oil in a large skillet over high heat. Add garlic, cook 10 seconds.

Add chicken and cook until mostly changes from pink to white, then add Sauce.

Cook for 1 minute, then add Coleslaw mix and white part of green onions.

Cook for 1 1/2 minutes until cabbage wilts, then push everything to the side to make room for the ramen (see video &amp; photos in post).

Add water then squidge the ramen cakes in side by side.

When water simmers, leave for 45 seconds. Flip, then leave for 30 seconds.

Loosen noodles, add bean sprouts and green onion, then toss energetically for 1 1/2 - 2 minutes until sauce reduces and coats noodles. (Note 7)

Serve immediately!
