How do you usually prepare corn on the cob?

So good, so easy!  It's become my go to summer salad recipe. Everyone loves it and can be made ahead.  I've made it without the onion and it is just as good.

Tasty; I add a little honey to tone down the red onion.

You'll Be Making This Corn Salad On Repeat All Summer Long

An EASY salad that’s ready in 15 minutes and you won’t be able to stop eating it!! Tender chicken, juicy corn, crisp bell peppers and tomatoes, creamy avocado, cilantro, and fresh lime juice for the WIN!!

Grilled Chicken and Corn Salad

chicken breasts

lime juice

kosher salt,

black pepper,

sweet corn, husks and silks removed

olive oil, divided

unsalted butter

red bell pepper,

cilantro,

Place all contents in a large ziptop plastic...

Place all contents in a large ziptop plastic bag, seal, and smoosh around to coat evenly. Place bag in the fridge to marinate for at least 30 minutes, or overnight. When you're ready to grill, preheat to medium-high heat.

Evenly drizzle the corn with the olive oil...

Evenly drizzle the corn with the olive oil and rub it in evenly over the corn.

Place the chicken and corn on the grill...

Place the chicken and corn on the grill and cook for about 7 to 9 minutes, turning the ears every couple minutes by one-quarter turn, or as needed so that corn is cooking evenly but isn't burning. Flip the chicken once midway through cooking.

After corn is cooked, cut the corn off the ears with a sharp knife, place into a large bowl, top with the butter, and stir to combine until the butter melts.

Dice the chicken into bite-sized pieces and add...

To the bowl with the corn and chicken, add all remaining ingredients except the olive oil, stir to combine, and taste. If desired, add additional salt, pepper, etc.; or add a pinch of cayenne pepper for heat, or add any of the suggestions given in the blog post. Serve salad immediately.

Black Bean Corn Salad

corn kernels (from 4 to 5 ears, or frozen corn kernels*)

reduced sodium black beans (rinsed and drained)

cherry tomatoes (halved)

mint (basil, parsley,

lime juice (from about 1 lime***)

salt

feta cheese (crumbled (about 1 cup), divided)

Prep

Place your corn kernels in a large mixing bowl. If using fresh kernels, include any of the milk that comes off the cob. If using frozen corn, you don't even need to thaw it all the way first.

To the bowl, add the black beans, tomatoes, mint, olive oil, lime juice, salt, pepper, and two-thirds of the feta.

Stir

Stir to combine, then taste and adjust the salt and pepper as desired. Sprinkle the final one-third feta over the top.

Refrigerate

If time allows, place in the refrigerator to set for 15 minutes. Enjoy!

Enjoyed this dish very much. I love how simple and quick it is to make. We used a frozen roasted corn that we made on the stove. I also added parsley and dill.  I would add avocado in the future. Planning to make again for my family’s 4th of July bbq! Yum!

What a delicious salad! It’s so nice to find a summer salad recipe that is not mayonnaise based! The crunchy sweet corn, the summer tomatoes, the creamy feta, and the healthy black beans! I used cilantro on its own, because it’s my favorite herb. Perfection ⭐️⭐️⭐️⭐️⭐️from me!

This recipe was delicious and easy to make! I used the black bean and corn salad as a base for tacos. To my tacos, I added seasoned ground beef, cheese, guacamole, salsa, and Greek yogurt (as a sour cream substitute which I learned from Well Plated). It was a hit with my family and friends!
