easy dirty rice recipe

Toss all the ingredients together with white rice for a major kick of flavorful Southern-inspired dirty rice!

Dirty Rice

sirloin

onion (chopped. About 1 medium onion)

green pepper (chopped. About 1 large green pepper)

celery (chopped. About 1-2 celery ribs)

beef broth

rice

Tablespoons garlic salt

Tablespoon minced garlic

Tablespoons Slap Ya Mama Cajun seasoning (divided. Or regular cajun seasoning)

Using gloved hands, crumble the ground beef into a Dutch oven. Add garlic salt and half of the Cajun seasoning to the Dutch oven. Cook over medium-high heat, stirring continuously to brown and break up the chunks of ground beef.

Add onion, green pepper, celery, minced garlic, and remaining Cajun seasoning to the meat mixture. Stir to combine, cooking for 3-4 minutes to soften the vegetables.

Reduce heat to medium. Add rice and beef broth to the pan. Stir to combine, ensuring that there are no ingredients (especially rice) up on the sides of the pan.

Cover the pan and allow to cook over medium heat for 15-20 minutes. Rice should be tender and broth will be absorbed.

Easy Classic Cajun Dirty Rice with Sausage

bacon grease (can substitute olive oil)

onion

celery

green bell pepper

garlic (minced)

Italian sausage (ground, not the links)

chicken livers (finely chopped or ground)

cumin

salt

black pepper

Cajun or Creole Seasoning

parsley (plus additional for garnish)

Add the bacon grease or olive oil to a large skillet over medium heat.

When the oil is hot, add the onion, celery, and green pepper. Cook and stir for about five minutes or until the vegetables are soft.

Add the garlic, sausage, and chicken livers. Break up the sausage and add the cumin, salt, pepper, and Cajun seasoning. Cook until the sausage is browned, and no pink remains.

Add the hot rice and parsley to the meat mixture and combine. Garnish with a few sprigs of fresh parsley and serve hot.

½ lb ground beef (, 80/20)

½ lb ground sausage ((I use Jimmy Dean pork sausage))

chicken livers

all-purpose flour

onion (, diced)

celery (, diced)

green bell pepper (, diced)

garlic (, minced)

Cajun seasoning

cayenne pepper

oregano leaves

thyme

bay leaves

chicken broth

green onion

parsley

Add ground beef, sausage and liver to a large saucepan over medium heat. Season with salt and pepper and cook, crumbling with a wooden spoon, until browned.

Add flour and stir. Add onion, bell pepper, and celery and sauté for 2 minutes. Add garlic, Cajun seasoning, cayenne, oregano, thyme and bay leaves and stir to combine.

Add rice and chicken broth. Bring to a boil, cover, reduce heat to low and simmer for 20 minutes. Remove from heat all allow to rest for 5 minutes. Remove lid, gently fluff rice with a fork, reapply lid and rest for 5 more minutes.

Garnish with green onion and parsley before serving.
