easy festive suppers

This is a subtly textured, richly flavoured arrangement of toasted pieces of flatbread topped with meaty aubergine and beef, a garlicky tahini-yoghurt sauce, red pepper flakes, pomegranate seeds, toasted pine nuts and fresh shredded mint. Is it too terrible to say that I think of it as Middle-Eastern nachos? 

Beef and aubergine fatteh 

pitta

Greek-style yoghurt

tbsp tahini,

lemons, juice only

garlic cloves, crushed

1–2 tsp sea salt flakes,

pomegranate seeds

grams/1¾oz pine nuts

tbsp mint leaves

500 grams/1lb 2 ounces beef mince

I just love a good salad recipe. When it is cold outside, having a substantial salad with a warm dressing really is just the ticket. 



Pan-fried pear salad with pancetta, gorgonzola and a warm dressing

x 120 grams/4 ounces packets rocket

pine nuts

pancetta

butter

pears, peeled, cored, quartered

tsp honey, plus extra for the dressing

tsp balsamic vinegar,

Dijon mustard

salt and black pepper

This delicious veggie pie was made to be shared with family and friends, especially good with vegetarian gravy or served cold with salad. 

Each serving provides 406 kcal, 11g protein, 35g carbohydrates (of which 10g sugars), 23.5g fat (of which 5g saturates), 6g fibre and 0.7g salt.


Mushroom, chestnut and squash filo pie

tbsp extra virgin olive oil

250 grams/9 ounces chestnut mushrooms, sliced

red onion, sliced

300 grams/10½oz butternut squash (¼ squash), peeled and cut into 2cm/¾in chunks

grams/2½oz curly kale, shredded, tough stalks discarded

150 milliliters/5fl oz vegetable stock,

grams/1¾oz ready-to-eat dried apricots, quartered

chestnuts,

75 grams/2½oz walnuts, roughly broken

½ tsp dried chilli flakes (optional)

85 grams/3 ounces goats’ cheese,

sea salt and black pepper

filo pastry (each about 48x25cm/19x10in)

fresh parsley, to garnish (optional)

Choose a well-marbled piece of beef brisket if you can, as it will be far more succulent than a very lean cut. You can also make the potato latkes separately and just serve them topped with soured cream and apple sauce.

500 milliliters/18fl oz hot beef stock, stock

200 milliliters/7fl oz red wine

celery sticks, trimmed and cut into 4cm/1½in lengths

tbsp finely chopped fresh parsley leaves or chives (optional)

tbsp sunflower oil,

black pepper

This vibrant bang bang chicken recipe is full of bold flavours from chilli, peanut and lime. Use leftover roast chicken, if you like, but the poached chicken in star anise and ginger is divine.
