Preheat oven to 350 degrees F. and place 12 inch cast iron skillet over medium heat.

Place oil into hot skillet and add potatoes and onions. Cook and stir for 5 minutes then add sausage, bacon and tomatoes, stirring to combine.

Place eggs into a large mixing bowl, whisk to beat eggs and add salt and pepper. Carefully pour eggs into skillet. With rubber spatula, pull in edges to start cooking eggs slightly. When about 3/4 cooked, still some runny, top with cheese and parsley. Place in oven to finish cooking, about 10 minutes or until eggs are set. Remove, cut into slices and serve warm.

How to Make a Frittata

olive oil

mixed vegetables (peppers, mushrooms)

cheddar cheese (shredded)

parsley (or basil)

Preheat oven to 400°F.

Add olive oil to an 8" skillet and cook vegetables until tender-crisp, about 3-4 minutes. Stir in potatoes/hashbrowns and cook an additional 5 minutes.

In a medium bowl, combine eggs, light cream, dry mustard and seasonings.

Add bacon and green onion. Pour egg mixture over top and sprinkle with cheese and fresh herbs.

Bake 14-16 minutes or until eggs are set. Broil 1-2 minutes.

Remove from the oven and cool 5 minutes before cutting. Serve warm.

MUSHROOM, ARUGULA & GOAT CHEESE FRITTATA

milk (almond, coconut, raw)

mushrooms (chopped)

Preheat the oven to 375. Beat the eggs and milk and set aside. Melt the butter over medium-high heat. Add the mushrooms. Then the arugula and let it wilt. Add the eggs. Crumble the goat cheese over it. Bake for 15 minutes.

Easy Frittata with Ham, Tomatoes, and Spinach

Pre-heat oven to 400 degrees F.

In a large bowl combine eggs, garlic powder and salt. Whisk to mix well.

Add cooking oil to cast iron skillet and heat skillet on medium heat.

Add spinach and saute until softened, do not overcook. Then add egg mixture to skillet.

Add cherry tomatoes, ham shredded cheese. Make sure to spread them out all over the skillet.

Remove skillet from heat and bring to oven immediately.

Bake for 20-22 minutes or until egg is completely cooked.

Remove skillet from oven and let it sit for a few minutes. Then slice them into triangular pieces and serve! Enjoy!

This egg white frittata is packed with roasted vegetables including bell peppers, tomatoes and broccoli. It also bas baby spinach and cheddar plus pesto whisked into the eggs.

Egg White Frittata with Roasted Vegetables

bell pepper, (diced)

cherry tomatoes or grape tomatoes

Preheat the oven to 400 degrees F.

On a sheet pan, toss the peppers, tomatoes and broccoli with 1 tablespoon olive oil, 1 teaspoon kosher salt and 1/2 teaspoon black pepper. Spread them in a single layer with the tomatoes cut side up.

Roast the vegetables until they are lightly browned at the edges, about 20 minutes.

In a large bowl, whisk the egg whites, pesto, 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper. 

Heat 1 tablespoon oil in a 10-inch non-stick, oven-safe skillet over medium heat. Sauté the scallions for 1-2 minutes until fragrant.

Transfer the roasted vegetables to the skillet.

Gently fold in the spinach and cheese and pour in the egg whites. Give the frittata 2-3 minutes for the edges to set. 

Then bake the frittata in the oven until it has fully set in the middle, about 12-14 minutes.

Heat the oven to 180C. Tear the leftover flatbreads into large chunks and add them into a tray with 1 tbsp olive oil. Season with salt and bake for 10-15 mins until crispy. If you didn't save any flatbread, use any bread you have! 

Finely slice the broccoli stalks, then roughly chop the florets. Trim and thinly slice the leeks.

Add 3 tbsp of olive oil into a medium sized oven-safe frying pan on a medium-high heat. Add the leeks and broccoli to the pan, season with salt and fry until softened, 4-5 mins, then add the garlic and cook for a further 1 min. 

Meanwhile, crack the eggs into a bowl, and season generously with salt and pepper. Finely chop most of the parsley(stalks and all), saving a few leaves for the salad, then add the chopped herbs to the eggs and whisk until incorporated.

Remove from the pan from the heat, space the veggies out into one layer and pour the eggs over, making sure to get into every nook. Crumble the feta over and bake for 20 mins, or until a knife comes out clean.

While the frittata cooks, zest the lemon and squeeze the juice of the zested lemon into a bowl add the kale, then drizzle 3 tbsp of olive oil, season with salt, pepper. Using your hands massage/squeeze for 3-4 mins, until the kale leaves wilt and are not as tough. Set aside.

Toss your croutons into the salad and drizzle with yoghurt. Top with the reserved parsley leaves and some extra feta, if you like. Slice up the frittata and serve on plates or in meal-prep boxes with a side of salad.
