This easy chocolate frosting recipe is the BEST! Made with melted chocolate, it's perfect for cakes, cupcakes, brownies... anything!

The Best Chocolate Frosting

unsalted butter,

sugar

vanilla extract

semisweet chocolate (finely chopped)

Place the chopped chocolate in a microwave-safe bowl and microwave in 30-second increments on 50% power, stirring after each, until the chocolate is melted and smooth. Set aside to cool to room temperature.

Meanwhile, using the whisk attachment of your stand mixer, whip the butter on medium-high speed for 5 minutes, stopping to scrape the bowl once or twice.

Reduce the speed to medium-low and gradually add the powdered sugar. Once all of the powdered sugar is incorporated, add the vanilla, mixing until incorporated. Add the melted chocolate and whip at medium-high speed until light and fluffy, about 2 minutes, scraping the bowl as needed to incorporate all of the chocolate.

Use immediately or cover with plastic wrap and keep at room temperature for up to 4 hours before using. The frosting can be refrigerated, covered, for up to 4 days. Bring to room temperature and re-whip before using. The frosting can also be frozen in an airtight container for up to 3 months. Thaw in the refrigerator, then bring to room temperature before using.

This stabilized whipped cream is my all-time favorite, and it can be ready in 15 minutes! It's light and airy - perfect to top cupcakes or ice cream, dip fruit in, or just eat by the spoonful.

Mascarpone Whipped Cream Frosting

mascarpone cheese

heavy cream

Chill a large mixing bowl in the fridge (optional, but strongly encouraged).

In your chilled bowl, combine mascarpone cheese and sugar on a high speed until completely combined.

Add vanilla and heavy cream, and mix on a low setting until it is mostly combined. Now increase speed to high and whip until stiff peaks form - it may take a little while, so be patient!

Once cupcakes have completely cooled, fit a piping bag with desired tip and go to town with frosting your cupcakes.

Mascarpone Whipped Cream

This is the Best Cake Icing Ever!  it takes a lot to earn that title, and this is the ultimate easy icing for every cake, cupcake, or baked good. This is my go-to recipe any time I bake something, and you can easily make a batch of this frosting ahead of time with just a few simple ingredients. 

The Best Cake Icing Ever

milk

flour

butter

shortening (such as Crisco. Do not use butter.)

sugar (use castor sugar,

Cook milk

Whisk milk and flour together and cook in a stovetop pan on med-low heat until thickened, stirring constantly. If small lumps have formed, pour through a mesh strainer into a small(ish) bowl, using a rubber spatula to press the thickened milk through the strainer.

Chill milk

Cover the dish and refrigerate until cold. To eliminate condensation forming inside the lid, place a paper towel just under the lid but not touching the milk mixture. To speed up the cooling, place the mixture in the freezer for 1/2-1 hour.

MIX THE INGREDIENTS IN THE FOLLOWING ORDER, TAKING CARE TO BEAT WELL:

Combine and beat

Combine 1/2 cup butter and 1/2 cup shortening. Beat 4 minutes on high speed.

Add and beat

Add 1 cup of sugar. Beat 4 minutes on high speed.

Add cooled milk, flour mixture, and vanilla extract. Beat 4 minutes on high speed

Add 3 tablespoons of powdered sugar. Beat 4 minutes  on high speed

Ready to use

This Vegan Buttercream Frosting is my go-to frosting for cake recipes! It only has 4 ingredients and is super fluffy, creamy and decadent. This frosting is perfect for all of your special occasions!

Vegan Buttercream Frosting (Only 4 Ingredients)

vegan butter (softened)

vegan milk (add more if needed)

salt

Beat the butter and vanilla for about 2-3 minutes with a stand mixer or a handheld mixer, until fluffy.

Add 1 cup of powdered sugar. Fold it in with a spatula so it doesn’t fly everywhere, then beat for about 1 minute. Add the rest of the frosting in small increments too, until fully incorporated.

Add in a ½ tablespoon of vegan milk at a time until it reaches your preferred volume and consistency. Add that last ½ cup if you desire.

Then beat for about 5 minutes, using the spatula to mix everything together every other minute, until the frosting is fluffy, white, smooth and creamy.
