Easy Fruit Salad with Honey Lime Dressing

strawberries, (chopped)

kiwis, (peeled and chopped)

blueberries

bananas, (sliced)

apple, (diced)

honey

lime, (juiced and zested)

Add chopped fruit to a large salad bowl; set aside.

In a mixing bowl, whisk together honey, lime juice, and zest.

Pour Honey Lime Dressing over the salad; gently toss to coat.

Cover with plastic wrap and refrigerate for 20 minutes before serving.

If you will not be serving the fruit salad right away, place all of the fruit except the banana in a large serving bowl: strawberries, pineapple, blueberries, kiwi,  and grapes.

In a small bowl or large measuring cup, whisk together the dressing: orange zest and juice, lemon zest and juice, honey, vanilla extract, and poppyseeds.

Pour the dressing over the fruit and with a large spoon, toss gently to combine. Cover and refrigerate for at least 30 minutes to allow the juices to marry (1 hour is even better). Just before serving, stir in the banana. Sprinkle with fresh mint. Enjoy!

Combine the orange juice, lemon juice, and brown sugar in a small saucepan. While stirring, bring to a boil. Simmer for 8 to 12 minutes or until the liquid reduces to 3/4 cup. Allow it to cool compltely. I like to do this by pouring it into a glass mason jar and putting that jar in a bowl of ice. Alternatively, make this the day before and store in the refrigerator overnight.

In a large bowl, combine all of the fruit. Please see the post for alternative fruit ideas. The total amount of fruit should equal 8 cups.

Pour the dressing over the fruit and toss to combine. For best results, serve right after tossing.

Glazed Fruit Salad

In a small saucepan combine the juice and pudding. Over medium heat bring the juice and pudding to a boil. Remove from heat and cool completely.

While the glaze is cooling prepare the fruit. When the glaze has completely cooled pour over fruit and fold in, until the fruit is evenly covered.

Refrigerate until ready to serve.
