easy gelato recipe

This is the easiest ice cream recipe ever. Just 3 ingredients, no ice cream maker needed, and virtually no work. The result is a super creamy gelato.

3 Ingredient No Churn Gelato Ice Cream

sour cream

sweetened condensed milk

vanilla paste

In a medium-sized bowl, whisk all of the ingredients until smooth.

Pour the mixture into a container. Cover with a lid or plastic wrap and place it in the freezer for six hours or overnight.

Strawberry Gelato

strawberries

sugar

milk

lemon juice

heavy whipping cream

Remove the stems and leaves from the strawberries and rinse in cold water.

Place the strawberries, lemon juice and the sugar in a food processor and process until liquefied.

Add the milk and run the food processor until all the mixture is smooth.

Whip the cream with a wire whisk until it begins to thicken slightly and becomes the consistency of buttermilk.

Mix the cream and strawberry mixture in a bowl and mix thoroughly.

Pour the mixture into a gelato or ice cream maker and freeze following the manufacturer’s instructions.

Place the finished gelato into a freezer safe container and allow to fully freeze before serving (2-3 hours).

Homemade cinnamon gelato is tongue-tantalizingly creamy and full of cinnamon flavor. It&#039;s SO good with apple pie!

Cinnamon Gelato

cinnamon

Vietnamese cinnamon (use up to a tablespoon as desired)

Beat

Combine sugar and egg yolks and beat until very light and the sugar crystals can&#39;t be felt when you pinch a little between your thumb and forefinger.

Aside

Combine

Combine the milk, cream, and cinnamon sticks in a heavy saucepan.

Cook

Turn heat to medium high and cook, stirring occasionally, until the mixture comes to a simmer and bubbles form around the edges of the milk mixture. DO NOT BOIL.

Remove

Add a little of the hot liquid to the egg yolks, beating constantly.

Continue

Continue to add the hot milk mixture to the egg yolks while beating - make sure the eggs don't curdle.

Strain

If you think you&#39;ve curdled some of the egg pour the mixture through a fine mesh strainer to catch any cooked egg.

Return the custard mixture to the saucepan and place over low heat.

Stir

Cook, stirring, until the custard coats the back of the spoon and your finger leaves a track. Make sure it doesn't boil.

Cool

Let cool to room temperature then stir in the ground cinnamon and vanilla.

Refrigerate

Cover and refrigerate for 4 hours or overnight.

Churn

Pour the cooled gelato mixture into an ice cream mchine and churn according to manufacturer&#39;s directions. If your ice cream maker allows different settings use the &quot;gelato&quot; setting or slow churn setting.

Freeze

Spoon into a freezer-safe container with a tightly fitting lid and freeze for an hour or so before serving.

You&#039;ll love the creamy texture and tart flavor of my lemon gelato. The recipe is easily made in a standard ice cream maker and is gaurunteed to amaze your family!

Lemon Gelato

Lemon Juice (about 6 lemons)

Using a micro-planer or a very fine grater, zest one Lemon

Cut lemons in half and juice them, straining out all the seeds.

Add the cream, milk, lemon juice, zest, sugar and salt together and using a wire whip, mix until the sugar is dissolved and completely incorporated. (the mixture should thicken some)

Yield will be about 1 quart of lemon gelato

I used monk fruit sugar with allulose which dissolves easily in liquids and it turned out fabulous! Drops the carbs from 39g per serving to about 5g per serving.  Great for those looking for a lower sugar and carb option!
