This icecream is really good and creamy when it is first made in soft serve form but after sitting in the freezer and and gets harder then the vanilla flavor becomes to strong and it becomes a little gritty. I would highly recommend this if you were to just eat it fresh that same day but would not recommend if you were planning on eating it the day after it is made or later.

You Can Make Amazing Ice Cream At Home!

This dairy-free Salted Caramel Ice cream is creamy, delicious and made with homemade caramel sauce, coconut cream and crunchy almonds. It&#039;s easy to make and ready in no time with or without an ice cream maker, making it the perfect easy sweet treat for summer! Paleo, vegan and includes low carb keto sweetener options.

Salted Caramel Ice Cream

coconut cream

coconut milk (chilled)

cashew butter (can sub with any other nut butter)

maple syrup OR sub

vanilla extract

almonds

coconut milk

coconut sugar

tsps coconut oil (, use refined if you are not a fan of the coconut taste)

tsp vanilla extract

sea salt

grain-free chocolate cookies (or use your favorite brand)

MAKE THE ICE CREAM: Place the coconut cream, milk, nut butter, sweetener and vanilla into a Vitamix or a high-speed blender. Blend on high for 30 seconds, or until smooth and the mixture is combined.

ICE CREAM MAKER INSTRUCTIONS: If you have an ice cream maker, have it ready and the bowl chilled prior to starting. Pour the blended mixture directly from your blender into the ice cream maker while it is moving. Churn for 20-25 minutes until it becomes a firm ball or the ice cream maker stops rotating.

WITHOUT AN ICE CREAM MAKER: If you don&#39;t have an ice cream maker, pour the mixture into ice cube trays for 2 hours, or until frozen. Blend frozen ice cubes in a high-speed blender until smooth.

TRANSFER TO ICE CREAM CONTAINER: Spoon half of the ice cream mixture into a 9 x 5 loaf pan or 2-quart ice cream container. Pour half of the caramel sauce on top and gently swirl with a knife to form ribbons.Sprinkle in half of the almonds. Pour in remaining half of the ice cream then top with more caramel sauce. Swirl again with the knife then top with almonds &amp; crushed cookies, if using. Cover and freeze for at least 4 hours or overnight.

When ready to serve, remove from freezer and allow to stand at room temperature for at least 20 minutes (or more) until desired consistency.

Start by bringing the coconut milk and coconut sugar to a light boil in a medium saucepan, stirring the mixture constantly over medium heat.Once boiling, reduce heat to low and allow the mixture to simmer slowly for about 25 minutes, stirring constantly so that it doesn&#039;t burn.The sauce is ready when it has reduced and thickened to a darker syrup. Remove from heat and stir in the coconut oil and vanilla extract. Set aside to cool, and store in an airtight jar in the fridge.

Homemade Vanilla Ice Cream Recipe

vanilla bean (or sub 1 tablespoon vanilla extract)

granulated cane sugar

If using a real vanilla bean, split it in half lengthwise using the tip of a sharp knife and scrape the seeds into a medium saucepan. Add the pods. 

Place the whole milk, heavy cream, sugar, and salt in the same saucepan in a medium pot and heat over medium heat, gently heating. 

Stir until sugar has dissolved, lowering the heat to prevent it from coming to a simmer.  Once the sugar has dissolved, remove from heat and chill. (See notes for our &#8220;cheater version&#8221;- no chilling required.)

FYI, the longer you chill the mixture the more flavorful the ice cream will become (2- 24 hours). 

Using a slotted spoon, remove the vanilla pods. Transfer the ice cream mixture to the ice cream maker and churn according to its instructions.

To store, place it in a wide, shallow glass container, top it with parchment paper, and press it against the ice cream (this will prevent ice crystals). Cover with a lid and wrap with a kitchen towel, placing in the back of the freezer away form the door. 

To scoop frozen ice cream, dip an ice cream scoop in cold water and shake it off before using.

Fantastic ice cream recipe! I tried all three options- the fast version with maple syrup was surprisingly good, a good option if no time to heat it. I made this with real vanilla beans both ways with and without xanthan and milk powder (which I happened to have both on hand), and both were really good; however, adding both the xanthan and milk powder resulted in the best creamy texture, and my wife and kids agreed. In the past, I’ve always added eggs, but no longer.  Thanks for sharing this easy method; you have a new convert to your website.

This easy homemade ice cream recipe makes the most delicious vanilla ice cream, and you can make it without an ice cream maker. Yes, really!

Easy Homemade Ice Cream Recipe

heavy cream ((2 cups, chilled))

condensed milk ((1 can))

Pour the heavy cream into a large bowl, and beat with a mixer on high to medium-high until peaks form. Mine took about 5 minutes, FYI.

Gently fold in the sweetened condensed milk until everything is well-incorporated.

Transfer to a freezer-safe dish, cover and freeze until set, about 8 hours. Tip: I usually make mine the night before we eat it.

Could try chocolate Hershey powder to make it chocolate.

I made this ice cream and we fell in love . It’s so easy to make and delicious too .it is a favorite go to meal. I will definitely be making it my go to recipe for ice cream. 5+ stars.
