This delicious Meatball Soup Recipe bring meatballs and pasta together with onions, carrots, celery and green beans in a hearty beef broth that has been perfectly seasoned with Italian spices.  This quick and easy soup recipe comes together in less than 40 minutes making this a great weeknight meal.

(8 ounce) tomato sauce

(14.5 ounce) fire roasted tomatoes

In a large heavy stockpot heat olive oil over medium heat.  Add the chopped onion, carrots, celery and green beans.  Cook for 7-8 minutes or until slightly soft and fragrant. Add parsley, oregano, basil, garlic powder and onion powder.  Cook for 2 minutes; stirring constantly.

Pour in beef broth, tomato sauce, fire roasted tomatoes and meatballs; simmer for 7-10 minutes.  Add the pasta and cook for an additional 10 minutes; serve promptly.

Easy Meatball Soup

breadcrumbs

milk

Parmesan cheese (finely grated)

parsley leaves (finely chopped)

tsp kosher salt

black pepper

beef

beef broth (or bouillon)

oz cannellini beans (2 cans, drained and rinsed)

oz crushed tomatoes (2 cans, undrained)

garlic (minced)

tsp black pepper

Italian Seasoning

Parmesan cheese (shredded)

thyme (to garnish)

Start by preparing the meatballs.

Preheat the oven to 400°F and line a large rimmed baking sheet with parchment paper.

In a small bowl combine the breadcrumbs and milk and allow it to soak for a bit.

In a large bowl, add all the remaining ingredients of the meatballs. Add in the soaked breadcrumbs and use your clean hands to thoroughly mix.

Take a spoon of mixture and roll it to form a 1.5-inch diameter meatball. Place on the prepared sheet pan. Repeat with remaining meat mixture.

Bake at 400F for about 12-15 minutes.

Meatballs

Once the meatballs are almost done, place the broth to a large soup pot and bring to a boil.

Add in the cooked meatballs, beans, tomatoes, garlic, and seasonings.

Simmer over medium-low heat for about 18-20 minutes to allow the flavors to meld.

Serve soup hot and topped with shredded parmesan and fresh thyme. Enjoy!

I made this for lunch today with cheese quesadillas and we loved it. It is very hardy with lots of good flavor. Definitely on our make again list!

Made this tonight. I used elk burger for meatballs because we only eat game meat. I also added two cans of light red kidney beans besides cannellini beans. This was absolutely delicious . My husband said please make again!
