An old catering/ restaurant trick

If your legs are tired from all the standing, cooking and cleaning, lay on the floor on your back, with legs up the wall for 10 minutes before the party. It will totally revive you!

Lockdown has me making more things from scratch (not to mention that corn tortillas are hard to find here), and I found an easy and delicious recipe for 50:50 corn &amp; wheat tortillas from https://wellingtonbakehouse.com/2015/07/26/half-half-tortillas-perfect-for-soft-tacos/

Only change I made was that I rolled the dough into a thick even log and sliced off disks of dough (~55g) for each tortilla.  I used a tortilla press to speed things up and then cooked them in a dry cast iron skillet, about 1 minute per side (until they have brown spots) and finishing with one last flip to the first side where I press on the tortilla to make it puff a la Pati Jinich.

I tried these once, they worked perfectly and now I am hooked.  Cinqo de mayo is a perfect time to up my tortilla game!

Super Easy Chicken Fajitas. Marinated chicken breast sautéed with peppers and onions. Ready in only 20 minutes!

Easy Chicken Fajitas

chicken breast

lime juiced

chili powder

chili chili

cumin

paprika

garlic powder

onion powder

red bell pepper (thinly sliced)

yellow bell pepper (thinly sliced)

green bell pepper (thinly sliced)

onion (thinly sliced)

cilantro desired)

lime wedges for serving (if desired)

*NOTE: Cook time does not include marinating time*

Add oil, lime juice, both chili powders, cumin, paprika, garlic and onion powder to a ziplock bag. Reserve 2 tablespoons of the marinade.Add in chicken and marinate for 30 minutes.

Spray a cast iron skillet or a regular skillet with cooking spray.Add the chicken and cook over medium-high heat until cooked, about 3-4 minutes per side.

Take the chicken out of the pan and let it rest for 5 minutes.

Meanwhile add the peppers, onions and the reserved marinade to the same pan the chicken was in. Sauté for 3-4 minutes or until tender.

While the peppers are cooking slice the chicken breast.

Toss the chicken back into the pan with the peppers.

Serve immediately with fresh cilantro and lime wedges if desired. I like to serve these Chicken Fajitas with flour tortillas, sour cream, salsa and guacamole!

Easy to prepare, but overall flavor was very bland.

Absolutely delicious. Wouldn't change a thing. Everyone loved it. Will be adding to regular dinner rotation.

This was really good. Better than the “saucy” fajita recipes you often see and yet didn’t take long to marinate (I did one hour). Needs SALT though.
