What kind of mushrooms are your favorite?

Delicious! Made it as a last minute side dish to complement brisket and it was a hit! I used fig balsamic because that’s all I had and it worked just fine. Do not exceed the recommend amount of balsamic or it can get bitter. I raised them temp to 400 and gave it an extra 4-5 minutes in the oven. This was purely a personal preferences chewy. Otherwise It’s perfect as is. Easy. Impressive. Tasty!

Soy sauce is added to the mushrooms for a bit of umami flavour. The flavour fades, but deepens the taste of the mushrooms. They’re perfect on a crispy, tender bed of puff pastry.

Mushroom Tarts with Thyme

mushrooms

garlic (minced)

tbsp butter (or dairy free butter)

thyme leaves

soy sauce

puff pastry

tbsp milk (or dairy free milk)

Thyme sprigs

Preheat oven to 400F / 200C.

Heat the butter in a frying pan and add the mushrooms, garlic and thyme. Cook for a few minutes until the mushrooms are soft, darkening and release their juices. Stir in the soy sauce.

Unroll the thawed pastry and cut into six rectangles or squares, and place on baking paper on a baking tray. Score a ½ inch border around each tart. Pile the mushrooms into the centre of each. Brush the edges with the milk and bake for 20 minutes.

Serve warm, topped with sprigs of thyme.

A quick and easy mushroom stir fry recipe loaded with the goodness of garlic and flavoured with herbs

Herby stir fried garlic mushroom

400 g button mushrooms (or closed cup mushrooms)

onions

garlic

green chillis (slit (optional))

dry white wine (or water/vegetable stock)

oregano

tbsp fresh coriander (chopped)

tbsp red chilli flakes (optional)

tsp crushed black pepper

olive oil (or butter)

salt

Heat a pan with the olive oil/butter and add the onions and chillis to it

Once the onions soften and turn translucent, add the garlic

After frying this for two minutes, add in the washed and dried mushrooms. Mix well

Saute for five minutes and then add the wine/water/stock. Swirl and toss the mushrooms in it

Cook for 5-7 minutes more and add all the herbs and spices. Add the salt just before turning the flame off and mix well

Serve the herby stir fried garlic mushrooms hot as is or with some salad and bread. Enjoy
