Salted Caramel Cashew Oatmeal Cookies

20 Kraft caramels, unwrapped

In a microwave-safe bowl, combine caramel bites, milk and. Microwave in 45-60 second increments, stirring each time. Caramel will be very hot and can burn easily. Stir in 1 teaspoon salt. Allow the caramel to cool.

Soften the butter in the microwave for 10-15 seconds. Combine the softened butter with the brown and granulated sugar. Beat on medium speed until well combined, 2-3 minutes.

Next add the eggs and vanilla extract and continue beating until well incorporated.

In a separate bowl, combine the remaining dry ingredients. Stir to combine and slowly add the dry ingredients into the dough, mixing on low speed until dough starts to form.

As the dough thickens, add the chopped cashews and chocolate chips. Beat a couple of times until they start to incorporate.

Beat in the cooled caramel just until combined.

Pre-scoop the dough using a large cookie scoop and place on a sheet pan. Sprinkle with flakey sea salt. Refrigerate for at least one hour. Remove each batch 10-15 minutes before baking.

Preheat the oven to 350° F. Line a baking sheet with parchment paper or a silicone baking sheet. Bake for 11-13 minutes. The center of the cookie should be slightly under baked but not too gooey. Allow to cool on the baking sheet for 5-10 minutes before transferring to a wire rack to cool.

Oatmeal Butterscotch Caramel Cookies

Preheat oven to 350 degrees F. and line a large baking sheet with aÂ silpat liner or parchment paper.

In stand or electric mixer, cream butter and sugars until light and fluffy, a good 2-3 minutes. Slowly add in eggs, vanilla and caramel sauce.

Easy Chocolate Chip Oatmeal Cookies

oats (or jumbo porridge oats)

quick oats (or rolled oats)

coconut (optional)

Preheat the oven to 350°F/180°C.  Prepare cookie sheets with baking paper

Add the flour, salt, baking soda, and baking powder together into a large mixing bowl.

Mix in the oats and coconut. Set aside.

Melt the butter gently in a large saucepan on low heat without letting it bubble or sizzle.

Remove from the heat, add the sugar, and mix vigorously to combine. It may look greasy and lumpy at first, but keep stirring until fluffy and fully combined.

Mix in the eggs and vanilla.

Pour the wet ingredients into the dry ingredients and add the chocolate chips.

Using an ice cream scoop, add the dough to the prepared pan 2 inches apart.

Bake for 12-15 minutes or until the edges are golden brown.

Melt the butter in a medium bowl and set it aside.

In a separate large bowl combine the flour, oats, cinnamon, baking soda, and salt. Whisk it together and set aside.

Next, take the butter bowl and add the apple pie spice, vanilla extract, and brown sugar to it. Mix it well. Add in the applesauce and the egg.

Finally combine the two bowls. Add the apple mixture to the dry ingredient bowl.

Mixing everything thoroughly.

Fold in the chopped apple pieces.

Preheat air fryer to 315 degrees.

Line air fryer basket with parchment paper.

Using a small ice cream scoop or a spoon, scoop the cookies out one by one making each cookie ball about two inches wide.

Place each ball of cookie dough on to the parchment paper, leaving about an inch and a half of space between them. It’s important to leave that space because they do spread out.

You will probably have to do multiple batches. I was able to fit in six cookies at a time.

In between batches place the bowl of uncooked cookie dough in the fridge so that it stays chilled.

Air Fry cookies for about 6-8 minutes.

Repeat until all cookies are made.

Remove cookies from basket and place on cookie rack to cool.

Combine confectioners sugar and heavy whipping cream in a bowl, mix well. If you’d like it thinner add more heavy whipping cream, if you’d like it thicker add more sugar. Once cookies are completely cool, drizzle glaze over top of them.

Moist and Chewy Banana Oatmeal Cookies

(195 grams) all-purpose flour (measured accurately)

cornstarch

(168 grams) unsalted butter, melted

(225 grams) packed brown sugar

(104 grams) sugar

tsp vanilla extract

(240 grams) quick 1-minute oats

Add the flour, baking soda, cinnamon, cloves, salt and cornstarch to a medium sized bowl and whisk together. Set aside.

Add the melted butter and sugars to a large bowl and whisk to combine. 

Add the egg and vanilla extract and whisk together until well combined. Add the mashed bananas and whisk together until well combined.

Add the dry ingredients and fold together just until well combined. Add the oats and fold together until well combined. 

Create cookie dough balls that are 1 ½ tablespoons in size. You can refrigerate the cookie dough before baking, if you’d like, but you don’t have to. I think the flavors get even better if you refrigerate the cookie dough for at least 2-3 hours, or overnight. 

When you’re ready to bake the cookies, preheat the oven to 350 degrees F. Line a cookie sheet with a silicon baking mat or parchment paper. (No need to bring the cookies to room temperature. You can bake them immediately after pulling them from the fridge.)

Bake the cookies for about 10 minutes or until golden around the edges and lightly golden on top.

Allow the cookies to cool for about 5 minutes, then move to a cooling rack lined with parchment paper to cool completely. The cookies can stick to the parchment paper a little bit. I find that it helps them to release if you give them a little twist on the paper before lifting them up. 

Store cookies in an air-tight container with parchment paper between the stacks of cookies so they don’t stick to each other. Cookies are best if eaten within 4-5 days.
