Prepare and add the brine: In a medium saucepan bring the water, vinegar, salt, and sugar to a boil. Once boiling, pour into the jar until the liquid completely submerges the cucumbers. Close the lid on the jar tightly.

Pickling instructions: Let the jar cool on the counter until it reaches room temperature. Once cooled, put the jar into the refrigerator and let the cucumbers pickle for at least two hours before serving, but for best results serve after at least 24 hours. Quick pickled cucumbers are good up to one month in the refrigerator.

These sandwich pickles are made with cucumbers, salt, rosemary, thyme, oregano, and pink peppercorns. Perfect for sandwiches--but don't stop there. Think burgers, hot dogs, salads,  even a bloody Mary!

Sandwich Pickles

English cucumber

Slice

Trim the ends from the cucumber and cut it crosswise into 3 sections. Stand each section upright and slice it lengthwise into 1/8-inch-thick (3-mm) slabs.

Pack

Pack the slabs or slices of cucumber and the oregano, thyme, and rosemary in a 1-quart (946 ml) nonreactive container with a tight-fitting lid.

Store

Pour the water, salt, sugar, and pink peppercorns into a different jar that also has an airtight lid. Shake the mixture until the salt and sugar are fully dissolved, about 1 minute. Pour the pickling liquid into the container with the cucumber and herbs and jiggle it around a little to release any air bubbles. Seal the jar and refrigerate immediately for at least 3 days—and preferably 4 days—before trying them to allow the flavors time to permeate the pickles. These will keep in the refrigerator for up to 1 week (although we've not been able to make them last that long).

Quick Swedish Pickled Cucumbers

cucumber (preferably an English cucumber, sliced thin)

dill

white vinegar

black peppercorns

Place sliced cucumbers and dill in a quart-size mason jar.

Heat remaining ingredients in a saucepan over medium heat until simmering.

Pour vinegar mixture into the jar with the cucumbers and dill.  Let sit at room temperature for at least 30 minutes before using.  If you are not eating them immediately, cover and refrigerate the cucumbers once the mixture has cooled to room temperature.  The cucumbers are best fresh but will keep in the fridge for a week.
