Ham and Cheese Quiche

Recipe video above. Tastes like Quiche Lorraine, minus the carbs and a load of prep time. Buy pre chopped ham and pre shredded cheese, and you'll get this in the oven in 5 minutes flat! Excellent breakfast or brunch that keeps for days, serve slices like quiche OR stuff into rolls, make burritos! (see in post for photo)

Crustless Quiche - Ham and Cheese

cream (, heavy/thickened (halve if subbing milk, Note 1))

salt ((Note 2))

tsp black pepper

100 grams/ 3.5 oz ham (, diced)

shredded cheese ((anything that melts except mozzarella, Note 3))

green onion (, sliced)

Preheat oven to 180°C/350°F. Grease with butter or spray a 22.5cm / 9" pie dish (Note 4)

Whisk eggs, cream, salt and pepper.

Scatter most of the ham, cheese and green onion in the pie pan.

Pour in egg mixture. Top with remaining ham, cheese and green onion.

Bake 35 minutes until golden on top and centre barely wiggles. Don't overcook, it will lose custardy-ness.

Remove from oven, rest 5 minutes and watch it deflate!

Cut then serve with a simple side salad, or stuff into soft rolls, or wrap into burritos (then pan fry to crisp!)

Mini Quiche Recipe - Add A Pinch

Quiche Lorraine is from the North East region of France which borders, Belgium, Germany and Luxembourg. This is a dish for all meals: breakfast, brunch, lunch or dinner. This has such a rich custard like texture with a salty cheese and bacon flavors what is not to love!

Authentic Quiche Lorraine

flour (plus 2 Tbsp.)

unsalted butter (cold,

water (cold)

eggs (large)

bacon (thick cut)

Gruyere

nutmeg

Preheat oven to 375'F

To make the dough: place flour, butter and salt in a food processor and pulse until the mixture becomes a coarse meal. Slowly add the water 1 tablespoon at a time until the mixture comes together like a ball.

Place on a lightly floured surface and flatten out to form a 12" disc. Fit into a quiche pan. Freeze for 30 minutes.

Put a piece of parchment paper on the top of the dough, and top with pie weights.

Bake for 15 minutes.

Remove from oven, and remove pie weights and parchment paper. Brush bottom and sides with one beaten egg.

To make the filling: While the dough is baking, cook bacon slices in a pan until almost crispy. Transfer to a plate lined with paper towels to drain.

In the bowl of a mixer beat 4 remaining eggs and add heavy cream, pepper, and nutmeg.

Beat until it begins to thicken, and it is a light yellow color.

Sprinkle bacon and Gruyere onto the top of the dough. Pour egg mixture on top.

Bake for about 20 minutes. the quiche should puff up. The quiche should also have a light golden color on the top.

Easy veggie quiche recipe that uses milk instead of cream and loads of veggies to lighten up this breakfast classic while keeping it simple & quick to make.

Easy Veggie Quiche

avocado oil

onion, sliced into thin strips

red pepper,

garlic

lb. mushrooms, sliced

spinach

refrigerated pie crust

milk ((I used whole milk but 2% is fine))

grated cheese ((sharp cheddar, swiss,

Preheat oven to 350° F.

Heat oil in a medium sized pan. Add onions and peppers and sauté for 2-3 minutes until onions start to turn translucent.

Add mushrooms and garlic and cook until mushrooms are cooked through, approximately 5 minutes. Add spinach and cook 1 minute longer until spinach is wilted. Remove pan from heat and set aside.

Unroll refrigerated pie crust and press into 9-inch pie pan. Set aside.

Crack eggs and whisk until frothy. Add milk, salt, pepper, and nutmeg and whisk to mix in.

Remove any excess liquid from the cooked veggies by squeezing them in a kitchen towel or paper towels over the sink (this keeps the crust from getting soggy).

Place veggies on top of crust in pie pan in an even layer. Sprinkle cheese on top. Pour egg mixture evenly over the veggies and cheese.

Bake for 40-45 minutes until starting to brown on top. Remove from oven and let sit for 5-10 minutes before cutting and serving.

A recipe for the easiest, cheesiest vegetarian quiche and the golden, crisp pastry it's baked in. Or, frozen shortcrust is your friend! Make it today.

Easy Cheesy Vegetarian Quiche

flour

cold butter

water

egg, beaten

onion, diced

milliliters cream

milk

cup cheese: I use a mix of vintage cheddar and a parmesan-style cheese

In a large bowl mix the flour and salt, then rub in the butter with your fingertips until it resembles breadcrumbs and is starting to stick together.

Add the water a teaspoon or so at a time until the flour and butter mixture comes together in a dough. It shouldn’t take very long and you shouldn’t need much water.

Place the dough into a container and put it in the fridge for 30 mins to an hour to firm up so it doesn’t fall apart or stick when rolling out, but not so much it’s too hard to use!

Roll the chilled dough out onto a floured surface until it’s as thin as you’re comfortable with. I also fold it gently into quarters, then place the quarter in the tin/pie plate/whatever you’re using (for this, I use a 20cm springform pan) with the point in the centre of the base, then gently fold out to a circle.

Fit the pastry to the receptacle (same if you’re using frozen shortcrust pastry that’s been thawed), prick a few holes in it with a fork, cover with baking paper and any old dried beans/proper baking beads you have on hand and blind bake for about 10 minutes. Remove the paper and bake another 10 minutes.

Brush the base with beaten egg to glaze (this helps stop the bottom from getting soggy from the wet ingredients) and bake another 10 or 15 minutes.

While the base is baking, make your filling.

Pastry directions

Cook onion in frying pan in a little oil until soft. You don’t want too much colour on it, unless you’re adding other veggies. If so, saute them along with the onion.

Beat eggs in a bowl with whisk, add cream, milk and cheese, whisk until just combined. Pour into pastry case.

Bake at 180C for about 35-45 minutes or until filling is set and brown. It should still wobble a bit in the middle, but you definitely don’t want it too undercooked. The old “stick a skewer in it and if it comes out clean it’s done” kind of works for quiches too – go with your gut.

Stand the quiche for five minutes before removing from the tin (or serve in the pie plate it was cooked in), and easy cheesy vegetarian quiche is all yours. Voila!

Refrigerated Quiche: If you’ve stored the baked quiche in the fridge as recommended above, you should have refrigerated each slice separately in foil. Keeping each individual portion in the foil, reheat your homemade quiche in a 325°F oven for 15 to 20 minutes or until fully heated through. Using a thermometer, check that the center of each quiche slice has reached at least 165°F—then you’re ready to chow down!
Frozen Quiche: If you’ve frozen a full quiche as directed in the storage instructions above, remove it from the freezer and place it in the refrigerator to thaw overnight. Once your quiche has thawed, unwrap the plastic wrap and bake it in a 350°F oven for 20 to 25 minutes or until heated through. If you froze your quiche in individual slices, let the slices thaw overnight in the fridge on a paper towel-lined baking sheet. The next day, cover each individual slice in foil and bake them at 350°F for 15 to 20 minutes. Using a food thermometer, make sure each portion of your quiche has reached a safe internal temperature of at least 165°F.
