easy quinoa recipe

This amazing creamy mushroom quinoa recipe is made in one pot and makes the perfect side! It will remind you of risotto only healthier. Quick, easy, and delicious!

One Pot Creamy Mushroom Quinoa

mushrooms

garlic

olive oil

+ pepper

white quinoa

water

nutritional yeast

cashew cream

almond milk ((or more cashew cream))

herbs ((I like thyme and rosemary))

Heat the oil in a saucepan. Once hot, add the garlic and mushrooms. Saute for 2 - 3 minutes until the mushrooms have softened.

Season from salt and pepper, then add the quinoa and water. Bring to a boil, then reduce to simmer and cover. Cook for 12 minutes.

Once the water has been absorbed and the quinoa is fluffy, remove the lid. Add the nutritional yeast, cream and milk and stir to combine. Season with a bit more salt and pepper and fold in the fresh herbs.

Serve immediately and enjoy!

Buffalo Chicken Quinoa Bowls

chicken breasts, cooked & shredded

franks red hot sauce (origninal)

cream cheese, softened

quinoa

green leaf lettuce

cherry tomatoes, halved

avocados, sliced

red onion

cilantro

optional: drizzle ranch dressing

To a medium sauce pan, add quinoa and water. Bring to a boil. Cover, reduce to simmer and cook for 15 minutes. Turn the heat off and let the quinoa sit there for 5 minutes. Then fluff the quinoa with a fork.

In the meantime, add shredded chicken, franks red hot sauce, and cream cheese to a medium bowl. Mix everything together and make sure all the chicken is coated with the sauce.

Assemble the bowls. Add 3/4 cup of quinoa, 3/4 cup of lettuce, 1/2 cup of the buffalo chicken mixture, cherry tomatoes, sliced avocado, sliced red onion, and fresh cilantro. (optional: drizzle ranch dressing on top)

Loved this so much I am making it again tonight, one week later! I swapped the cream cheese with Greek yogurt to make it a little lighter and it was the perfect substitute. I also sprinkled a little feta cheese on the top before serving. My husband loves buffalo sauce so he loved this dish. Thanks for the recipe... it’ll be one we use often!

Looks great ! i love hearty chicken  is delicious and useful for health.chicken provide vitamin A and vitamin C, and chikcen low fat protein.

I needed to find a simple chicken recipe and found this one.  It was quick and easy.  My husband loved it.  I used another blog tip to shred the chicken with my hand mixer, which then. Add it easy to mix in the cream cheese and the sauce.  Very healthy and filling, but not a heavy meal.  We posted pics on FB, and everyone loved it!

The tahini and avocado combo in this dressing is totally addictive. If you have ripe avocados to use up, this is a winning recipe

butternut squash

pouch cooked quinoa

mint

spring onions

Heat oven to 200C/180C fan/gas 6 and line a baking tray with parchment. Tip the butternut squash onto the tray, drizzle with 2 tsp oil and season well. Roast for 20 mins, then push the squash to one end of the tray, add the broccoli to the other end and drizzle with 1 tsp oil. Season and roast for 10 mins more.

Meanwhile, make the dressing. Put all the ingredients in the small bowl of a food processor, add 1 tbsp water and a pinch of salt. Blitz to make a loose dressing, adding a little more water if necessary.

Squeeze the pouch of quinoa to separate the grains, then tip into a large bowl. Add the herbs, spring onions, pomegranate seeds and pistachios. Add the remaining 1 tbsp oil, season and toss everything together. Add the roasted veg too.

Divide the salad between two plates and drizzle over the dressing. Halve the avocado and remove the stone, then slide a dessertspoon between the skin and flesh to remove it in one piece. Place on a chopping board, rounded side up, and thinly slice. Squeeze over the lemon juice, then slide a knife underneath and lift half the avocado onto each salad. Top with the sprouts and grind over a little pepper, if you like.
