Maple Roasted Butternut Squash Quinoa Salad with Cranberries. A healthy butternut squash recipe filled with fall flavors. Great for a side or healthy lunch!

Butternut Squash Quinoa Salad

red onion (diced (about 1/4 cup))

butternut

olive oil

maple syrup

salt

black pepper

chicken stock (or vegetable stock

quinoa

cranberries

toasted pepitas (pumpkin seeds, or roughly chopped toasted walnuts

chopped fresh thyme (or 1/4 cup chopped fresh parsley)

apple cider vinegar

Dijon mustard

Place a rack in the center of your oven and preheat the oven to 400 degrees F. Place the red onion in a small bowl and cover with water. Set aside. (This keeps the onion’s flavor but helps soften its harsh bite…and endless onion aftertaste.)

Place the butternut squash in the center of a large rimmed baking sheet. Drizzle with olive oil and maple syrup, then sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper. Toss to evenly coat, then spread the squash into a single layer. Bake for 15 to 20 minutes, turning once, until tender. Remove from the oven and set aside.

While the squash is baking, bring the broth (or water) and quinoa to a boil in a medium pan. If you are using water, add 1/4 teaspoon kosher salt. Once boiling, reduce the heat to a simmer, cover, and let cook 15 minutes, until the water is absorbed. Remove from the heat and let stand with the lid on for 5 minutes. Fluff with a fork, then transfer to a large serving bowl.

In a small bowl or large measuring cup (or a mason jar with a tight-fitting lid), combine the dressing ingredients: olive oil, vinegar, mustard, maple syrup, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Drizzle enough of the dressing over the warm quinoa to moisten it, then stir to combine.

Scrape the roasted butternut squash and any pan juices into the bowl with the quinoa. Add the cranberries, pepitas, and thyme. Drain the red onion then add it to the bowl. Toss to combine, adding more dressing as desired. (I like to reserve a little of the dressing for adding to leftovers.) Serve warm or at room temperature.

Quinoa is a fine, protein-rich grain that keeps you full until your next meal, which makes this veggie quinoa salad a wonderful lunchbox filler.

Authentic Mediterranean Quinoa salad with Feta cheese.

oregano leaves

Rinse the quinoa, immerse it in boiling water and add salt. Cook the quinoa for 15 or 20 minutes /depending on your taste, drain and rinse it in cold water.

Take a salad bowl and add the previously chopped avocado, lemon juice, the herbs, and mix it well.

Take the cherry tomatoes and cut them in two, add a cup of sliced red onion, rinsed under cold water in a sieve, and cut the feta into small cubes.

In a large bowl, toss together quinoa, avocados with lemon, cherry tomatoes, feta, red onion, extra virgin olive oil. Mix well.

Everyone always loves this Thai Quinoa Salad recipe that perfectly balances fresh, crunchy vegetables and quinoa, drizzled with a delicious peanut sauce.

Thai Quinoa Salad

quinoa (, uncooked)

red cabbage (, shredded)

red bell pepper (, diced)

red onion (, chopped)

carrots (, shredded)

edamame (, shelled)

cilantro (, chopped)

green onions (, chopped)

cashews (, halves)

peanut butter (, crunchy or smooth)

ginger

Tablespoons low-sodium soy sauce

Tablespoon honey

Tablespoon red wine vinegar

sesame oil

Sriracha hot sauce

(if necessary)

Cook quinoa according to package directions. You should have a little over 2 cups of quinoa.

Make sauce: Add peanut butter and honey to a microwave safe bowl and heat in microwave for 10-20. Stir until smooth. Add in ginger, soy sauce, vinegar, sesame oil, olive oil and sriracha and stir until smooth and creamy. If necessary, thin the dressing by adding a little more olive oil or some water. Taste and add more hot sauce, if desired. Drizzle half of the dressing over the cooked and cooled quinoa. Toss to combine.

Combine veggies: In a large bowl combine the red pepper, onion, cabbage, carrots, edamame, and cilantro. 

Add quinoa and as much of the remaining dressing as you&#39;d like, to taste. Add cashews and garnish with green onions. Enjoy.

In a medium saucepan over medium high heat, toast quinoa until slightly fragrant 2 minutes. Add vegetable brother (or water) and salt and stir. Bring to a boil, reduce heat to low and cover. Cook until the liquid is absorbed, 20 to 25 minutes. Remove from heat and let rest, covered, for 5 minutes. Fluff quinoa with a fork and set aside.

Spoon out some of the avocado flesh, leaving some in the pit. Chop up scooped out avocado.

In a large bowl, stir together the cooked quinoa, chopped avocado, tomatoes, cucumber feta, dill, and red onion.

In a small bowl, mix together olive oil, lemon zest, lemon juice, dried oregano salt and pepper. Add to quinoa mixture and mix. Season with salt and pepper.

Spoon quinoa mixture into a mound on each avocado half and garnish with more feta and dill. Serve immediately.
