Quick and healthy One Pot Cod Fish Soup perfect for cold weather. Easy winter soup with tomato, onion, bell pepper, garlic and cod whitefish.

Easy Italian Fish Soup

olive oil

onion

garlic

celery (diced)

green bell pepper (cubed)

dry white wine

lemon (juiced)

Italian seasoning

salt

black pepper

chicken stock (or vegetable stock)

(14.5-ounce) can diced tomatoes (undrained)

tomato paste

wild Alaska Cod (or whitefish)

basil

Heat olive oil in a large pot over medium-high heat. Add onion, and cook 6-8 minutes until fragrant, stirring often.&nbsp;

Stir in garlic, celery and bell pepper. Reduce to medium heat and cook 5 minutes more.

Add wine, lemon juice, Italian seasoning, salt and pepper. Stir and cook 2-3 minutes until most of the liquid is dissolved.

Stir in the tomato chunks with liquid, chicken stock, and tomato paste. Cook 10 minutes more uncovered, or until bell peppers are just tender.

Cut cod into small, bite-size pieces and stir into soup. Bring to a low boil and simmer 5 minutes, or until fish is tender and flaky.

Remove from heat, stir in basil, and serve.

Italian Fish Soup Recipe

This unique and simple recipe uses frozen seafood and pantry ingredients to yield a creamy and delicious seafood soup, perfect for a cool day!

Frozen Seafood Soup

milk ((I used whole, but

fish

clams,

heavy cream

seafood stock ((can use chicken or vegetable stock

20-25 frozen large raw shrimp, deveined and peeled

bacon

thyme

15 oz can of whole kernel corn, drained

potatoes,

carrots,

red onion,

garlic cloves, minced or pressed through garlic presser

flour

unsalted butter

tsp table salt

bay leaf

pepper

parsley

If your bacon was frozen, place it in warm water for 10-20 minutes until thawed enough to separate the pieces.  Place the bacon in a large hot stock pot and cook each side until crispy (about 2 minutes per side).   Remove the bacon once cooked and place on a paper towel for later. 

Turn the heat to medium and saute the potatoes, red onion and carrot in the bacon grease for about 5 minutes, stirring occasionally.

Add the garlic and cook for 45 seconds, stirring the entire time.

Now add 1/4 cup of flour and stir to coat.  Pour in the milk and stock, and stir well.

Drain the clams and add them to the pot, along with the frozen flounder, frozen raw shrimp and drained canned corn.  Stir to combine.

Season with thyme, bay leaf, salt and pepper.

Simmer for 1 hour on medium/low, stirring occasionally.  Before serving, taste to see if more salt is needed.

When done, remove from heat and add heavy cream and butter.  Remove the bay leaf, sprinkle with parsley and chopped bacon bits and enjoy!
