Creamy Ranch Chicken Skillet Dinner

Tbsp butter

flour flour

milk

mushrooms (chopped)

Tbsp parsley

tsp dill

onion powder

garlic powder

tsp basil

Salt and pepper,

chicken breasts (about 1 lb, diced)

oz cream cheese

oz frozen mediterranean blend veggies

white rice ((pasta would work too!))

Cook the rice or pasta, as directed.

Prepare the white sauce in the skillet. Melt the butter and then whisk in the flour to form a paste. Whisk in the milk and let thicken over medium/medium-low heat. Stir in the mushrooms and let cook for a few minutes. Pull out the spices (or packet) and add them into the sauce and let simmer for a few minutes.

Stir in the diced chicken pieces and cover and let cook for 10 minutes, or until chicken has cooked through.

Stir in the cream cheese cubes and let them melt into the sauce. Once the sauce is creamy, add the frozen veggies and let them simmer for a few minutes to soften and warm up.

Serve Creamy Ranch Chicken sauce over rice or pasta.

green chilies

salsa

Tortilla chips

Preheat oven to 350. Brown the ground beef in an ovenproof skillet and mix in the taco seasoning. Mix in the black beans.

In a small bowl, combine the sour cream and green chilies. Spread into a thin layer over the beef. Spread another layer of the salsa over the sour cream.

Add the chips to the mixture and top with the shredded cheese. Place the skillet into oven and bake for about 10 minutes, or until cheese has melted. Carefully remove from the oven. Add diced avocado or serve with side of guacamole.

Serve Skillet Nachos.

coleslaw mix (or 6 cups finely sliced cabbage)

soy sauce (or tamari)

Heat a large, heavy-bottomed skillet over medium heat.

Add the ground beef, breaking it up with a wooden spoon, and cook until it is browned.

Drain off any excess grease and add the garlic, sauteing just until fragrant (30-60 seconds).

Add in the coleslaw mix (or 6 cups of finely sliced cabbage) and toss it to combine with the ground beef and garlic.

Pour in the soy sauce and stir well to coat the cabbage and ground beef.

Add in the hot sauce, ground ginger, onion powder, and cloves (if using). Stir well.

Add a lid to the skillet (if you don’t have one, that’s fine - you just may need to add ¼ -⅓ cup water to prevent the cabbage from sticking) and cook until the coleslaw mix is soft, about 2-5 minutes.

Once the cabbage is cooked to your liking, remove the skillet from the heat and finish it with 1 ½ tablespoons of toasted sesame oil. Toss well to combine.

Taste and adjust salt, pepper, and seasonings to your liking.

Serve in bowls topped with sliced green onions and sesame seeds (optional).
