Delicious and easy chocolate chip cookies

The New York Times Chocolate Chip Cookies

cake flour ((8½ ounces))

bread flour ((8½ ounces))

baking soda

baking powder

salt

unsalted butter,

light brown sugar ((10 ounces))

granulated sugar ((8 ounces))

eggs

vanilla extract

Sea salt (for sprinkling)

Sift together the cake flour, bread flour, baking soda, baking powder and salt into a large bowl and set aside.

Cream together the butter and sugars on medium speed until very light, about 5 minutes. Add the eggs one at a time, mixing well after each addition, then add the vanilla. Reduce the mixer speed to low, gradually add the dry ingredients and mix until just combined, 5 to 10 seconds. Using a rubber spatula, fold in the chocolate chips.

Press plastic wrap against the dough and refrigerate for at least 24 hours, up to 72 hours.

When ready to bake, preheat oven to 350 degrees F. Line a baking sheet with parchment paper or a nonstick baking mat.

Scoop 3 1/2-ounces of dough, roll into a rough ball (it should be the size of a large golf ball) and place on the baking sheet. Repeat until you have six mounds of dough on the cookie sheet. Sprinkle lightly with sea salt and bake until golden brown but still soft, 18 to 20 minutes. Transfer the parchment or silicone sheet to a wire rack for 10 minutes, then transfer the cookies onto another cooling rack to cool a bit more, until just warm or at room temperature. Repeat with remaining dough (or keep some of the dough refrigerated for up to 3 days, and bake cookies at a later time). Store leftover cookies in an airtight container at room temperature for up to 3 days.

Bob's Red Mill Gluten Free Rolled Oats

Replace 1/2 cup of the oatmeal with 1/2 cup unsweetened coconut flakes

Place all of the ingredients in a large mixing bowl: oats, power mix-ins, nut butter, sweetener, vanilla extract, salt, mix-ins, and any other spices you'd like to add. Stir to combine. If the mixture seems too wet, add a bit more oats. If it's too dry, add a bit more nut butter. It should resemble a somewhat sticky dough that holds together when lightly squeezed. Place the bowl in the refrigerator for 30 minutes to set (this will make the balls easier to roll later on).

Remove the bowl from the refrigerator and portion the dough into balls of desired size. (I use a cookie scoop to make mine approximately 1 inch in diameter). Enjoy!

Blueberry Crumb Bars

all-purpose flour

blueberries ((20 ounces))

Preheat oven to 375 degrees F. Lightly grease a 9x13-inch baking pan.

Make the Crumb: In a medium bowl, whisk together the flour, sugar, baking powder and salt. Use a fork or pastry cutter to blend in the butter, and then the egg (the dough will be crumbly). Press half of dough into the prepared pan.

Make the Filling: In a separate large bowl, whisk together the sugar, cornstarch and lemon juice. Gently fold in the blueberries to coat evenly with the sugar mixture. Spread the blueberry mixture evenly over the crust, drizzling any excess juice in the bowl over the filling. Crumble the remaining dough evenly over the blueberry layer.

Bake for 45 to 50 minutes, or until the top is light golden brown. Cool completely before cutting into squares. Leftovers can be stored in an airtight container or wrapped in plastic wrap at room temperature or in the refrigerator for up to 4 days.

A delicious sweet and salty treat for the holidays. You can substitute white candy melts for the white chocolate and shortening.

Reindeer Chow

Rice Chex cereal

Line a large baking sheet with parchment paper or wax paper; set aside.

In a very large bowl, mix together the Rice Chex, Cheerios, peanuts, pretzels and M&amp;Ms.

In a medium bowl, melt the white chocolate and shortening in the microwave on 50% power, stirring every 30 seconds, until completely melted.

Pour the melted chocolate over the dry ingredients and quickly toss together until everything is pretty evenly coated in the white chocolate. Spread the mixture out on the prepared pan and refrigerate until it's set, about 20 minutes. Break up any chunks and store in tins or airtight containers in the refrigerator for up to 4 weeks.

Indoor Pretzel Smores Bites: a marshmallow peanut butter pretzel "sandwich" baked to gooey perfection, then dipped in chocolate. Quick and easy in the oven!

Pretzel S'Mores Bites

Square-shaped pretzels (also called pretzel snaps; 96 total)

regularly-sized marshmallows

graham cracker crumbs (2-3 sheets will be plenty)

Pretzel S'mores Bites

Place a rack in the center of your oven and preheat the oven to 350 degrees F. Line two baking sheets with parchment paper or silpat mats. Set aside.

Place the chopped chocolate in a heatproof bowl, then place the bowl over a pan of simmering water, making sure that the water does not touch the bottom of the bowl. Melt the chocolate and coconut oil together, stirring occasionally. Once the chocolate has nearly melted, remove the pan from the heat and continue stirring to melt the chocolate completely. Set aside, leaving the bowl on top of the pan.

Arrange 48 pretzels in a single layer on the baking sheets, leaving at least 1 1/2 inches between each pretzel to allow room for the marshmallows to expand. Slice each marshmallow in half around its middle, then place one half on each pretzel. Bake until the marshmallows have melted a little and are just barely beginning to brown, about 5 minutes. Remove from the oven and let cool for 3 minutes.

Place a scant 1/4 teaspoon of peanut butter in the center of each marshmallow, then, using the peanut butter like glue, gently press a second pretzel on top to create a pretzel-marshmallow sandwich.

Remove the chocolate from the pan of simmering water. Quickly dip half of each s'mores bite into the melted chocolate. Place the s'mores bite on the baking sheet and, while the chocolate is still wet, sprinkle with graham cracker crumbs. Repeat for remaining bites. If necessary, place the baking sheet in the refrigerator or freezer for a few minutes to allow the chocolate to set. Enjoy!

Vegan pao de queijo, Brazilian cheese bread

Preheat oven to 350 degrees. Then to a glass bowl add the tapioca flour.

To a small saucepan add the water, oil, plant milk and salt (dont forget the salt!). Bring to a gentle boil then remove and pour over the tapioca flour. Use a wooden spoon to mix until it forms a stretch dough. If the dough is not to hot you can use your hands to kneed it gently.

Let it rest for 10 minutes.

Meanwhile, boil your peeled and diced potates until fork tender. Then use a ricer or fork to mask them.

Add the mashed or riced potatoes, vegan cheese, nutritional yeast and garlic powder to the tapioca dough. Using you hands knead the dough for a few minutes until it all comes together. You want a stretchy dough that doesn&#039;t stick to your hands. * if it is sticky add more taopioca flour

Now divide the dough into 16 pieces and form into balls. You can make smaller balls if you like but the traditonal size is a golf ball size. Then transfer the balls to a lined and oiled baking sheet and bake for 30 minutes.

Crispy Baked Apple Chips. Simple oven recipe with just cinnamon and apples, no sugar or dehydrator! Easy, healthy, and so much better than store bought.

Place racks in the upper and lower thirds of your oven and preheat your oven to 200 degrees F. Line two baking sheets with parchment paper or a silpat mat.

Wash the apples. With an apple corer, very small cookie cutter, or the round side of a metal piping tip, core the apples (you can also skip this step if you don't mind a few seeds in the chips). With a mandolin (recommended) or a very sharp knife, slice the apples horizontally into 1/8 inch-thick rounds.

Arrange the apples in a single layer on the prepared baking sheets. Sprinkle with cinnamon. Bake for 1 hour in the upper and lower thirds of the oven. Remove the baking sheets and switch the pans' position on the upper and lower racks. Continue baking for 1 to 1 1/2 additional hours, until a single apple chip removed from the oven is crisp when set out at room temperature for 2 to 3 minutes (to test the apple chips, remove a single apple slice but let the others continue baking). Once you are happy with the crispness (the total time will vary based on the thickness of your slice and the type of apple), turn off the oven and let the apples sit in the oven for 1 hour as it cools down to crisp further (unless you fear you overcooked them, in which case remove the pan immediately and let it sit at room temperature).

Lemon Poppy Seed Energy Bites

Add dates to a processor and pulse a few times until dates are finely chopped.

Add oats, cashews, water, lemon juice, lemon zest, and salt. Process until the mixture resembles a sticky dough. If the dough is too wet, add some more cashews or oats. If the dough is too dry or crumbly, add more warm water 1 teaspoon at a time.

Transfer mixture to mixing bowl and fold in poppy seeds. Using a cookie scoop or spoon, scoop out mixture and roll into balls.

Leftovers keep 7-10 days in the fridge.

To a large bowl, add the almond butter, protein powder, 1/3 cup coconut flour, honey, vanilla extract, cinnamon, and 2 tablespoons almond milk. Stir until the mixture forms a dough that is soft enough to roll into balls, but not overly sticky. Add additional coconut flour or almond milk as needed to get the right consistency. Stir in the chocolate chips.

Roll

Roll into 12 balls. Enjoy immediately or store in the refrigerator for later.

Seven Layer Bars

graham crackers (crushed (about 1½ cups crumbs))

Adjust an oven rack to the lower-middle position and preheat to 350 degrees F. Spray a 9x13-inch baking pan with non-stick spray. Line the pan with two overlapping pieces of foil or parchment paper, leaving the overhang to act as handles for lifting the bars out of the pan. Spray with non-stick spray.

Combine the melted butter and graham cracker crumbs in a small bowl. Toss with your fingers until the butter is evenly distributed. Spread the crumbs evenly over the bottom of the prepared pan (this is not meant to be a crust, so you don't need to press it flat and there will be some small bare spots along the bottom, that's okay).

In this order, sprinkle the pecans, chocolate chips, white chocolate chips, butterscotch chips, and coconut over the graham crumbs. Pour the condensed milk evenly over the entire dish.

Bake until the top is golden brown, about 25 minutes. Cool in the pan on a wire rack to room temperature, about 2 hours.

Remove the bars from the pan using the foil or parchment handles and transfer to a cutting board. Using a sharp knife or bench cutter, cut into 2 by 3-inch bars.

Ham and Cheese Rolls are soft and gooey, pizza-style rolls - the perfect party snack. These ham rolls are the best appetizer or after-school snack recipe. Made with puff pastry, mozzerella, pizza sauce, and ham, these bite-sized rolls are full of warm cheesy goodness!

Ham and Cheese Rolls

17.5 oz package (2 sheets) store-bought puff pastry(thawed but still cool)

pizza sauce

deli ham

1-1 1/2 cup shredded cheese (mozzarella)

parmesan cheese

Preheat oven to 400 F and line two large baking sheets with silicone baking mats or parchment paper and set aside.

Place a sheet of thawed puff pastry onto a baking paper dusted with flour and roll out into approximately 8&#215;12 inch rectangle (dimension may vary depending on brand of pastry you use) It should be rolled out thin but don’t thin it out too much or it won’t be able to hold the filling.

Spread athin layer of pizza sauce, arrange ham slices and sprinkle with shredded cheese (do not over-top or else you won’t be able to roll the dough into neat log, you can add more cheese onto top of each slice before baking).

Tightly roll up the dough like a cinnamon bun with the baking paper already under the dough(lift the edge of baking paper and roll). Repeat the process with the second sheet of puff pastry and the other half of the filling.

You can place rolls onto 1 prepared baking sheet and set it in the freezer for 10 minutes , it will be easier to cut, or you can cut it immediately.

Cut roll into slices, approximately 1-inch wide and place onto baking sheet keeping 2 inch apart.(while you cut the roll slices will flatten and lose their shape but using your finger shape them back into circle when place them onto baking sheet).

Combine olive oil with basil or oregano and brush the tops and edges of each slice, then sprinkle with parmesan.

Bake in preheated oven about 15-20 minutes (until the edges are golden brown).

Let them cool 5-10 minutes onto baking sheet (if the bottoms are stick a little run a thin knife under each slice and transfer them onto a serving plate).

If you want make them ahead and keep in the freezer pack them into a foil. When you’re ready to bake take them out the freezer for 15 minutes before cutting into slices, then let the slices sit another 15 minutes at room temperature to thaw completely before baking(brush with oil, sprinkle with parmesan and bake).

I made these yesterday and they went in a flash. The only thing I didn't do was to sprinkle them with Parmesan, as I didn't have any. I'll make sure I have some next time, but can't imagine how they could taste any better! One piece of advice I would give is to keep a thick edge clear of the filling, as when you roll them up, it oozes out.

Don't think you really want to bake mayo. You could use mustard. Kinda curious how it will taste with a little spicy brown mustard thrown in instead of sauce. But these are like little pizza rolls. Hence why pizza sauce is used.

Place large pot on stove on med/high heat. Place coconut oil in pot. Drop three corn kernels in oil. Place lid on pot. When kernels pop, pour ⅓ cup of kernels into the oil, replace the lid back on and shake pot continuously until kernels are done popping. Immediately remove from heat and allow to cool for two minutes. Pour popcorn in bowl, drizzle with melted butter mixture while stirring with knife. Sprinkle with sea salt while stirring. Serve

Seasoned Oyster Crackers

Buttermilk ranch dip mix (each are .4 oz.)

vegetable oil

lemon pepper

oyster crackers (small) (12 oz., about 5 cups)

Preheat oven to 250 degrees Fahrenheit.

Pour oil into small mixing bowl.  Add ranch dip mix and other spices.  Stir to combine.

Add oyster crackers into large glass bowl.  Pour oil and seasoning mixture over crackers.  Stir to coat.

Dump crackers on baking sheet.

Bake for 15-20 minutes, stirring gently after 10 minutes.

Remove from oven and allow to cool before serving.
