These are delicious and so easy to make. My 9 and 7 year old boys helped me and probably could've done it themselves.  They taste like a true snickerdoodle cookie. We will be making these again!

This is not a good recipe. First of all why anyone uses cream of tartar in a cookie recipe...I just don’t know what to say to that. It might work if you chilled it overnight, I don’t know because I only chilled it for 30 minutes, and the recipe doesn’t even call for that. Bad all the way around.

Looking for the best Snickerdoodle Cookies? Turn off your search light and pull out a jug of milk because these are IT, soft and fluffy inside, slightly crispy on the outside, with fragrant cinnamon in every single bite. And I'll show you 3 variations!

unsalted butter (room temperature, 113 g)

all-purpose flour (172 g)

baking powder

salt

cinnamon (divided, use 1 teaspoon for rolling)

chocolate chip (6 oz, 169 g)

brown sugar (lightly packed, 132 g)

all-purpose flour (130 g)

cocoa powder (45 g)

cinnamon (for rolling)

sugar (for rolling)

Measure out 3/4 cup of sugar and set aside 2 tablespoons for rolling. Add the remaining sugar and softened butter to the stand mixer bowl and beat with the paddle attachment until combined and fluffy, about 1 minute.

Add egg and vanilla, and beat for another minute until thoroughly combined.

In a small bowl, sift together flour, baking powder, and 1 teaspoon of cinnamon. Then stir in the salt until evenly distributed.

With the mixer on low speed, add the flour to the liquid mixture and mix until just combined. Scrape the sides and bottom of the bowl as necessary.

For classic snickerdoodles

Add the chocolate chips to the cookie dough and stir to distribute.

For chocolate chip snickerdoodles

Beat brown sugar with softened butter until combined and fluffy, about 1 minute.

In a small bowl, sift together flour, baking powder, and cocoa powder. Then stir in the salt until evenly distributed.

For chocolate snickerdoodles

Allow the dough to rest in the refrigerator for 10 minutes while you preheat the oven to 375°F.

Mix the 2 tablespoon of sugar with 1 teaspoon of cinnamon in a shallow dish for topping.

Take the dough out of the fridge and portion with a small ice cream scoop. For smaller cookies, use 1 flat scoop of cookie dough. For larger cookies, use a full scoop, enough to form a dough ball about 1 ½” in size.

Roll the dough in the palm of your hand to form a ball. Roll the dough ball entirely in cinnamon sugar and set on a parchment line baking sheet about 2” apart. Don’t flatten them.

Bake for 8 - 10 minutes, depending on the size of your cookies.

Allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Preheat oven to 375 degrees F.

In a small bowl, mix together 2 TBS sugar and 1 ½ tsp cinnamon. Set aside.

Make the cinnamon sugar coating:

Sift flour into a medium bowl.

Add cinnamon, cream of tartar, baking soda and salt and stir to combine. Set aside.

Cream together butter, shortening and sugar in the bowl of a standing mixer fitted with the paddle attachment (or with a hand mixer).

Add egg and vanilla and beat again until smooth.

Add dry ingredients and stir until combined.

Use a 2 TBS cookie scoop to measure dough, then roll it into balls.

Roll each dough ball in the cinnamon sugar mixture until it’s evenly coated.

Place cookies on a baking sheet, either ungreased or lined with parchment paper.

Bake in the preheated oven for 8-10 minutes until puffed and mostly set, but still soft.

Remove from oven and transfer to a wire cooling rack to cool!

Position racks in the upper and lower thirds of the oven and preheat to 375º. Line two baking sheets with parchment paper.

In the bowl of a stand mixer fitted with the paddle, or in a bowl with a wooden spoon, cream the butter and sugar until lightened and fluffy, 3 minutes. Beat in the egg, then the vanilla, scraping down the bowl and paddle as necessary.

In a separate bowl, sift or whisk together the flour, cream of tartar, baking soda and salt. Add the dries to the butter mixture with the mixer on low, mixing until just combined. Give the batter a final turn by hand to make sure it is homogeneous.

Combine the sugar and the ground cardamom in a smallish bowl. Drop 1" balls of dough (I like to use the #40 purple-handled spring-loaded ice cream scoop) into the sugar three or four at a time and roll to coat. Place the balls on the parchment-lined baking sheets, spacing them 2 - 3" apart (they will spread a lot). Sprinkle about 1/8 teaspoon of spiced sugar on top of the balls.

Bake the cookies for about 10 minutes, rotating front to back and top to bottom halfway through, until the edges are just turning golden, but the centers are still soft. Cool the cookies for a few minutes on the baking sheets, then remove them to a cooling rack.

The cookies are at their peak a few hours after baking, when the cardamom flavor comes out, and the cookies are still soft. They will keep for a day or two in an airtight container at room temperature.

Snickerdoodle Cookie Recipe

Preheat the oven to 350 degrees. Prepare two baking sheets with parchment paper or silicone mat, set aside. 

In a large bowl, beat together butter, sugar, and eggs with a hand or stand mixer. Do this for a couple minutes until light and fluffy. 

In a separate bowl whisk together flour, salt, cream of tartar, and baking soda. Add this mixture into the sugar and butter mixture. Beat again until dough forms. 

In a small bowl mix together cinnamon sugar coating. Using your hands or a small cookie scoop form ½ inch round balls of dough. Roll each ball around in the cinnamon sugar coating it generously. 

Place dough balls two inches apart on your baking sheet.

Bake the cookies for 8 to 10 minutes until lightly golden and no longer doughy. Let cool on a cooling rack for five minutes and enjoy!

Made these today and they are fantastic and easy to make! Adding recipe to my regular rotation of cookie baking!   Thanks so much!  The only change I made was to add a teaspoon of cinnamon to the flour and other dry ingredients to boost the cinnamon flavor to the dough.

I made these cookies today and they are delicious and easy to make. I made the first tray with the half inch balls and they came out a little smaller than I expected so I made the rest more like an inch and they were a better size for my family. Wonderful recipe for an old favorite!

Good cookies. Soft. Didn’t  crinkle on the top like a traditional snickerdoodle, but that’s most likely because there’s no shortening in the recipe. Very tasty.
