A hearty beef and kidney stew, slow-cooked until you can cut the meat with a fork!

Slow-cooker beef and kidney stew

beef

¼ small shredded white cabbage (approximately 2 cups)

carrots

onion

mushrooms

potato (grated (approximately 1 cup))

garlic (finely chopped)

beef stock (made

red wine

tomato paste

Worcestershire sauce

thyme

sunflower

flour

salt

black peper

cornflour / cornstarch (optional for thickening)

Coat the cubed meat with flour and brown in sunflower oil. Transfer the browned meat to a slow-cooker.  See note 1.

Add the diced kidney to the pan and fry until it is no longer pink.  Add the kidney to the slow-cooker.

Fry the chopped onions and garlic in the same pan until just translucent.  You may need to add a little extra oil.  Add the onions to the slow-cooker.

Fry the mushrooms in the same pan until they soften and release their juices.  Add to the slow-cooker.

Add the shredded cabbage, sliced carrots and grated potato to the slow-cooker.  See note 2.

Pour in the prepared stock and the red wine and add the tomato paste, worcestershire sauce, thyme, salt and pepper.

Stir well then put the lid on the slow-cooker and leave on high for 6 hours, or on low for 8 to 9 hours.

Check the consistency of the stew.  If it is too thin, make a slurry of 2 teaspoons of corn starch (cornflour) in 2 tablespoons of water and drizzle in slowly, stirring, until the desired thickness is reached.  See note 3.

Serve with mashed potatoes and your favourite side vegetables.  If you are feeling really hungry, add a slice of crusty bread to mop up the juices.

Don&#8217;t give dinner a second thought with this easy-to-throw-together midweek red curry rice recipe.

Red curry rice with prawns

vegetable oil

gluten-free Thai red curry paste

spring onions,

raw, peeled sustainable king prawns

packs ready-cooked Tilda brown basmati rice

frozen peas, defrosted

tbsp coconut milk

tbsp fish sauce

coriander,

Heat the vegetable oil in a large, high-sided frying pan or wok over a medium-high heat. Stir in the curry paste and fry for 1 minute.

Add the spring onions and stir-fry for 1-2 minutes to soften. Add the prawns and stir-fry until completely pink and cooked through.

Add the rice, peas, coconut milk and fish sauce, then heat for 3-5 minutes until piping hot.

Stir in the chopped coriander, then serve with lime wedges to squeeze over.

A little sweet, a little salty, with a hint of chilli ... this twice-cooked pork belly with a sticky glaze makes the perfect addition to your Asian recipe repertoire.  Serve with rice and your choice of vegetables.

olive oil (for browning the pork.)

/ 480 ml chicken or vegetable stock

soy sauce

hoisin sauce

lemongrass paste

runny honey

ginger

garlic (minced)

chili flakes (optional)

brown sugar

white wine vinegar

Place the rashers of meat in a pan of stock and bring to the boil.

Reduce the heat to a simmer, cover the pan with a lid, and leave to simmer for two hours.  Top up with extra stock if necessary. See notes.

While the meat is simmering, measure all the ingredients for the glaze into a small bowl and mix well.  Set aside.  See notes.

After two hours, remove the meat from the stck oand leave on a plate until it is cool enough to handle.

Cut the meat into 1&quot; pieces.

Heat 2 tablespoons of olive oil in a large frying pan then add the cut pork.

Turn the heat down to medium and fry the pieces of pork, turning frequently, until they are browned on all sides.  See notes.

Add the glaze ingredients and bring to the boil.  Stir until the glaze has thickened and the pork is well coated.

Serve immediately with rice and your choice of vegetables.
