Grease a 9x13&quot; baking dish and add the crushed Doritos to the bottom of the pan.

Cook ground beef and add taco seasoning as directed on the package. Spread over Dorito layer.

Beat cream cheese until smooth, slowly add in salsa. Spoon over ground beef layer and smooth out evenly.

Top with 1½ cups shredded cheese. Bake at 350˚ for 25-30 minutes, or until hot &amp; bubbly.

Garnish with shredded lettuce, diced tomatoes and remaining ½ cup cheese.

1¼ lb ground beef

(1-oz) packet taco seasoning

chicken soup

sour cream

black beans, drained and rinsed

Preheat oven to 350ºF. Lightly spray a 9x13-inch baking dish with cooking spray.

Prepare rice. Melt butter in a skillet. Add rice mixture. Sauté over medium-high heat until golden brown.

Slowly stir in water, seasoning packet, and diced tomatoes. Bring to a boil. Cover and reduce heat to low. Simmer 15 to 20 minutes, until the rice is tender.

While the rice is cooking, brown ground beef in another skillet. Drain. Add taco seasoning, water, and salsa. Simmer for 5 minutes, until liquid has been absorbed. Remove from heat.

In a large mixing bowl, combine cooked rice, taco meat, cream of chicken soup, sour cream, and black beans.

Spread mixture into prepared pan. Top with shredded cheese.

Bake uncovered for 30 minutes.

This cheesy Doritos Casserole is made with ground beef, tomatoes, chiles, sour cream and much more! It's an easy taco casserole recipe that's full of savory goodness.

Doritos Casserole

olive oil

yellow onion, about 1 medium onion

garlic,

(10- ounce) can Ro-tel tomatoes and chiles

(9.75- ounce) bag Doritos, very coarsely crushed

Optional garnish – diced tomatoes, cilantro, jalapeños, avocado

In a large skillet, heat oil over medium heat. Add in the onions and cook for 5 minutes. Add in the garlic and the ground beef and cook until the meat is no longer pink, breaking up the clumps with a wooden spoon. 

Add in the taco seasoning, Ro-tel, and salsa. Cook for 5 minutes, stirring occasionally.

Stir in the sour cream evenly and then remove the mixture from the heat.

Pour half of the meat mixture into the bottom of a 9&#215;13 pan. Top with 1/2- cup of the cheese and half of the Doritos. Repeat the process with the remaining ingredients, topping with the remaining 1/2- cup of the cheese.

Cover the pan with foil and bake for 20 minutes.

Remove the foil and bake for 10 more minutes.

This leftover tacos&nbsp;recipe is the perfect excuse for you to eat tacos and use those leftovers from yesterday and even the day before. You can get very creative with the toppings according to whatever you have in your fridge.

Corn tortillas

Tablespoons vegetable oil

Cup of leftover rice (Mexican style rice)

Cup leftover Picadillo*

Cup leftover salsa Verde pork stew

Cup shredded cabbage

Cup finely chopped onion

Cup Mexican Queso fresco (optional)

¼ Cup Mexican cream to drizzle the tacos (also optional)

Spicy salsa of your choice

Heat oil in a skillet or griddle. Warm both sides of each tortilla on the skillet until they are warm and soft. Set aside on a plate.

Top each tortilla with about 1 tablespoon of rice, and 2 tablespoons of the filling of your choice. You’re going to have enough filling to add extras to your tacos.

Garnish with the shredded cabbage, onion and tomatoes. Finally, add the queso fresco and drizzle with cream (if using any of these). Serve with a spicy salsa.
