easy vegan tacos

This vegan tofu tacos recipe is going to become your go-to taco night staple! Tofu strips are tossed in spicy chipotle-infused marinade, then cooked to perfection with fajita vegetables. Meat free, dairy free, gluten free if made with tamari instead of soy sauce.

Vegan Tofu Tacos with Fajita Vegetables

16-oz block extra firm tofu, drained and pressed

yellow onion,

red bell pepper,

green bell pepper (or

cilantro scallions

Avocado or grapeseed oil, as needed for cooking tofu and vegetables

soy sauce (use tamari

Tbsp lime juice

Tbsp agave or pure maple syrup

cornstarch

Tbsp chipotle powder

tsp cumin

oregano

water

warm taco shells

Slice a drained and pressed block of tofu...

Slice a drained and pressed block of tofu crosswise into 10-12 rectangles of about 1/2 - 1/3 inch thickness. (A tofu press like tofu press like this one is very helpful for pressing tofu).

Cook tofu rectangles in single layer batches in...

Cook tofu rectangles in single layer batches in a large heavy-bottomed saute pan with a splash of oil, about 2-3 minutes per side, until each piece becomes slightly crispy and golden in color. Set aside.

While the tofu is cooking, mix all marinade...

While the tofu is cooking, mix all marinade ingredients in a large bowl.

Slice each cooked tofu rectangle into 3 strips...

Slice each cooked tofu rectangle into 3 strips lengthwise, being careful not to break them. Gently toss in the marinade, making sure that all tofu pieces are covered in sauce. I usually let my tofu marinate until the fajita vegetables are cooked (about 5 minutes), but feel free to marinate for up to 30 minutes.

Heat 1 Tbsp oil in the same saute pan you used to cook the tofu. Add sliced onions and peppers, and cook over medium-high heat until the vegetables are still crisp but have developed a few charred spots, about 4-5 minutes. Remove, set aside.

Add marinated tofu strips and the rest of the marinade to the same saucepan. Cook over medium heat, tossing gently, until all of the liquid evaporates, and the tofu looks dark, crisp, and slightly sticky.

Add cooked onions and peppers to the tofu,...

Add cooked onions and peppers to the tofu, and reheat gently. Remove from heat, sprinkle with chopped cilantro and/or scallions.

Serve with warmed tortillas and your favorite taco...

Serve with warmed tortillas and your favorite taco toppings - avocado slices or guacamole; vegan sour cream or shredded vegan cheese; chopped purple cabbage; lime wedges, etc. This tofu taco filling also works well in burritos, grain bowls, etc.

➡️ INGREDIENTS:

For the Tacos:
1 16-oz block extra firm tofu, drained and pressed
1 large yellow onion, sliced into thin strips
1 red bell pepper, sliced into thin strips
1/2 green bell pepper (or any color you have), sliced into thin strips
2 Tbsp chopped cilantro and/or scallions
Avocado oil OR cooking spray, as needed for cooking tofu and vegetables

For the Tofu Marinade:
4 Tbsp soy sauce (use tamari for gluten-free)
2 Tbsp freshly squeezed lime juice
1 Tbsp agave or pure maple syrup
1 tsp cornstarch
1 Tbsp chipotle powder
1/2 tsp ground cumin
1/2 tsp dried oregano
3-4 Tbsp water

To Serve:
8 warm taco shells
Your favorite taco toppings - avocado slices, chopped purple cabbage, lime wedges, etc.

Easy Vegan Tofu Tacos with Fajita Vegetables | Adventures in Vegan Living Episode 9

Easy vegan bbq chickpea tacos are plant-based, gluten-free, 100% WFPB and are super simple to make. Total flavor bomb!

BBQ Chickpea Tacos

chickpeas

Mother

corn tortillas

avocado slices

corn (cut off the cob)

cabbage

cilantro

sour cream

lime

salt + pepper (to taste)

Prep your veggies by slicing the avocado, steaming corn, shredding cabbage, washing/chopping cilantro and making the cashew sour cream.&nbsp;

Add chickpeas to pan with Mother Raw bbq sauce and simmer for about 10 minutes on medium/low heat.

Grill tortillas in a pan on high heat for about 30 seconds - 1 minute on each side. Careful not to burn.&nbsp;

Assemble the tacos, season with salt + pepper, squeeze lime over top, and enjoy!&nbsp;

These tacos are easy and delicious! I wouldn’t have thought to make this combo, but they are so, so good! Make them!😋😋😋

Tasty vegan tacos with a homemade pea guacamole. Vegan recipes don't get better than this.

Crispy Mushroom & Black Bean Tacos with Pea Guacamole

Mixed Mushroom

1tsp Garlic Powder

1tsp Chipotle Chilli Flake

1tsp Smoked Paprika

Salt

Black Pepper

Onion

Garlic Clove

1tbsp Tomato Purée

1tsp Ground Cumin

0.5tsp Chilli Powder

Sun-Dried Tomato

Drained Cooked Black Beans

1tsp Soy Sauce

Frozen Pea

Tahini

Lime

Fresh Jalapeño

Corn Tortilla

Red Onion (to serve)

Lime (to serve)

Heat the oven to 200°C. Roughly chop the mushrooms and put them in a small baking dish. Add all of the mushroom spices and plenty of olive oil, salt and black pepper. Toss to combine and roast for 25-30 mins until golden and caramelised, stirring at least twice to get an even cook.

Meanwhile, make the beans. Finely slice the onion and mince the garlic. Fry the onion in a large saucepan with a little olive oil for 8-10 mins until softened, then add the garlic. Add the tomato purée, soy sauce and spices and cook for a few more minutes until all the flavours have combined.

Add the sun-dried tomatoes and drained beans. Rinse the bean tin and fill it halfway with water, then add this to the pan. Simmer for about 10 mins until most of the liquid has evaporated and the beans have really softened.

To make the pea guacamole, defrost the peas and then put all of the ingredients into a small blender and blitz until almost smooth. Set aside.

To assemble, brush one side of the tortillas with olive oil and heat on this side in a large frying pan. Fill one half of each tortilla with the beans and mushrooms, then close them up. Fry them in the pan over a medium heat for 2 mins on each side until crispy on both sides. 

Serve with the pea guacamole, some extra lime and pickles, if you like. 

the most annoying thing about this meal is that it’s so delicious that I’m now sad that I ate it all and don’t have any left. Will be adding this to the regular rotation for sure 

whole family loved it, skipped the chilli powder and halved the chipotle flakes as our 3 and 5 year old aren’t too keen on spice- still delicious with loads of flavour. 

Tasty although frying the tacos is a bit of a faff and not necessarily worth that over building them at the table. would be nice to roast the mushrooms with some shredded jackfruit and I think we'll do that next time.

I have made these time and time again…absolutely bloody delicious!

This is really tasty! I’d double the mushrooms next time as they shrink significantly when cooking and get a bit lost in the spicy beans. I was skeptical about the pea guac but wanted to try it as a healthier and more sustainable alternative to avocados, and it was really good; I left out the jalapeños as the rest of the dish was already fiery so the sweet peas cut through the spice nicely. Will definitely make again!

Absolutely love this recipe! I always make extra so we can have leftovers. The pea guac is genius. I add garlic, salt and corriander so it's more like actual guac and it's very tasty!

Both me and my two teenagers loved this recipe.  it’s now on our weekly list and might just be our new favourite dinner.

tahini is overpowering so be careful with how much you add

absolutely delicious. The photo on your advert caught my eye to cook this. ( was already a member) . Used a**orted exotic mushrooms which made it a meaty texture. Also swapped the peas for avocado for guacamole. Put slightly less chipotle flakes in and it was still firey. Will defo be doing this again.  thank you 

holy moly, this was stunning!! Happily added to the rotation! 

tasted great - it also makes a great filling for a wrap / burrito if you add some lettuce in and use tortillas 

delicious!!! all the best flavours. had to substitute pickled onions for cabbage but still worked! added extra salt here and there 

pea guac doesn’t taste anything like guac but it is extremely delicious. Amazing recipe!

bangin’. would recommend doing 300g of mushroom because they reduce down quite a lot and taste so good. Will be doing this one again for sure

One of my favorite meals on Mob. Make regularly 

We’re not vegans or vegetarians, but we loved it! It also scratches the takeaway itch. It does need more mushrooms though, we doubled the amount. We also replaced the chipotle flakes with a few tbs of chipotle sauce. The mushrooms took a bit longer to release all their moisture. Since we were out of cumin, I added some caraway instead. Next time, I’d probably use both. Used leftover peamole (as my husband called it) as a spread for my toast the next day.

Really tasty but couldn’t get the mushrooms to crisp up! also the pea guacamole is a lot more like hummus which took some getting used to but was a nice edition, also served with cheese and sour cream
