These Nashville Hot Chicken Bites are spicy, flavorful, and so easy to make!

Nashville Hot Chicken Bites

cayenne pepper

lb raw boneless, skinless chicken breast

In a small dish, stir together the cayenne pepper, brown sugar, flour, paprika, chili powder, salt, and garlic powder. Place the cut up chicken pieces into a gallon zip-seal plastic bag and add the spice mix. Seal the bag and shake/massage the contents until the chicken pieces are coated with the spices.

Add the oil to a large sauté pan/walled skillet and bring over med-high heat. Once the oil is hot, add the chicken pieces (you don’t want to overcrowd the pan, so depending on the size of your skillet you may want to work in two batches instead of one) and stir to break them up and coat them in the oil. Cook the chicken for 7-8 minutes, stirring every couple minutes (you don’t want to stir super frequently because the chicken needs time to brown and get a “crust” on each side). Once the chicken is cooked through and browned on the outside, remove from heat and serve.

Garlic Green Bean and Turkey Stir Fry

Hoisin sauce

99% turkey breast

black pepper

garlic (thinly sliced)

oz beans

sesame seeds

In a small mixing bowl, stir together the water, rice vinegar, soy sauce, Hoisin sauce, sugar, cornstarch, ground ginger, and crushed red pepper flakes until combined and set aside.

Drizzle half a tablespoon (1.5 teaspoons) of canola oil and half a tablespoon of sesame oil into a large sauté pan and bring over med-high heat. Once the oil is hot, add the ground turkey and sprinkle with the salt and pepper. Cook, breaking the meat up with a spatula into bite size chunks until cooked through. Remove the cooked ground turkey to a side dish and cover to keep warm.

Drizzle the remaining canola oil and sesame oil (1.5 teaspoons of each) into the sauté pan and bring between medium and med-high heat. Add the shallots and sliced garlic. Cook, stirring frequently, until they start to brown (1-2 minutes). Add the green beans and stir. Cook, stirring regularly, for 5-6 minutes until the green beans start to soften.

Add the sauce from step one to the hot pan and stir to combine with the beans. Let the sauce get bubbly (should happen right away) and cook like that for 30 seconds before reducing the heat to med-low. Add the cooked ground turkey back to the pan and stir to coat it in the sauce. Cook another 1-2 minutes to heat through and allow the sauce to thicken. Garnish with sesame seeds before serving.

Herb and Cheese Chicken Fritters

½ lbs raw boneless skinless chicken breasts

eggs

mayonnaise

parsley

chives

basil

dill weed

all-purpose flour

oz shredded 2% milk Mozzarella cheese ((about 1 cup))

olive oil

Place the chicken breasts into the bowl of your food processor and cover with the lid. Pulse a few times or turn on for a few seconds until the chicken breasts are finely diced. Alternatively, you can finely dice the breasts by hand if you do not have a food processor.

Transfer the finely diced chicken to a large mixing bowl and add the eggs, light mayonnaise, parsley, chives, basil, salt, garlic powder, pepper, dill weed, flour, and shredded Mozzarella cheese. Stir until well combined. Use a ¼ cup measuring cup to measure out 15 equal piles of the chicken mixture.

Add a tablespoon of the olive oil to a large sauté pan, skillet, or griddle pan and bring over medium heat. Once the oil is hot, add half of the chicken piles and push down on the top of each one with the back of a spoon or spatula to flatten it into a patty. Make sure the fritters aren’t crowding the pan and aren’t touching. Cook the fritters for 3-4 minutes until the bottoms are golden, and then flip and cook for another 3-4 minutes until cooked through. Remove these fritters to a serving plate and add the remaining tablespoon of oil to the skillet. Cook the remaining fritters the same way (the second batch may cook slightly quicker) and transfer them to the serving plate when finished. Serve warm.
