Easy Mung Bean Sprouts Stir Fry - 炒豆芽

lb fresh mung bean sprouts

garlic (sliced (optional)

Thai Chilis (sliced)

salt (or more, adjust to taste)

scallions

mushroom powder (or your favorite umami seasoning)

(Optional) Prepare the mung bean sprouts by removing the ends. Wash and rinse with cold water and shake off excess water. I like to let them dry in my colander.

Heat a large non-stick wok, then add in a drizzle of oil.

When the oil is warm up, add in the salt and garlic, if using.

Sauté garlic (if using) until fragrant, then add in the chili and mung bean sprouts. Quickly toss everything together and stir-fry* until all the ingredients are incorporated.

Season with a pinch of mushrooms or umami seasoning of your choice.

Finally, fold in the chopped scallions or cilantro and serve warm.

- 8 oz King Oyster Mushrooms sliced
- 4 slices of ginger
- water for blanching

Sauce

- ½ cup water with 2 teaspoons cornstarch

Mung Bean Sprouts Stir-Fry Ingredients
- 1 lb fresh mung bean sprouts

- a handful of chopped scallions or cilantro
- a pinch of mushroom powder or your favorite umami seasoning

Garlic Shrimp Noodles

shrimp

green onions

10-15 garlic cloves

tsp (2 grams) fresh ginger

baby bok choy

servings udon noodles (or spaghetti, fettuccine, rice noodles, etc.)

tbsp neutral-tasting oil

tbsp toasted sesame oil

sesame seeds

eggs

Korean chili pepper flakes (gochugaru)

tbsp sugar

soy sauce

tbsp oyster sauce

mirin

Korean chili paste (gochujang)

black pepper,

MSG (optional)

Peel and devein the shrimp. Thoroughly pat dry with paper towels.

Thinly slice the green onions, separating the whites and greens. Finely chop the garlic. Grate a small knob of ginger (1/2 tsp). Take some bok choy and cut them in half lengthwise.

Prep Shrimp and Vegetables

In a small container, mix together Korean chili pepper flakes, sugar, soy sauce, oyster sauce, mirin, Korean chili paste, black pepper to taste, and MSG (if using).

Make Sauce

Bring a pot of water to a boil. Cook the noodles according to the package instructions. Give them a quick rinse under cold water. (Don't throw away the water yet.) Transfer the noodles to a bowl. Give them a good mix with 1 teaspoon of cooking oil (or sesame oil).

Meanwhile, blanch the bok choy for 1 minute. Remove from the water and set aside.

In a wok (or pan), heat the oil (3 tbsp) over medium-high heat. Once it gets nice and hot, add the white parts of green onion, garlic, and ginger.  Saute for 1 minute or until fragrant.

Add the shrimp. Cook for 1-2 minutes or until they’re 80 percent cooked. Reduce the heat to medium.  Add the sauce and keep moving around for 1-2 minutes. Be careful not to burn them!

Increase the heat to high. Add the drained noodles. Toss together for 1-2 minutes. Turn the heat off. Finish off with sesame oil (1 tbsp).

Divide the noodles into plates. Top with bok choy, green onions, sesame seeds, and soft-boiled eggs (if using). Enjoy~!

Vegan Pad See Ew (Thai soy sauce stir-fried noodles)

lb fresh flat rice noodles

oz firm tofu (sliced, pan-fried, and salted)

garlic (finely minced)

neutral oil (for cooking)

white pepper

Pickled chiles or red pepper flakes (see notes)

soy sauce (used

vegan fish sauce (see notes) (plus more to taste)

sugar

¼ teaspoon thick caramel sauce* (or ½ teaspoon dark soy sauce)

First, prepare the sauce by combining the soy sauce, vegan fish sauce, sugar, and thick caramel sauce (or dark soy sauce) in a bowl. Whisk until the sugar has dissolved.

Cut the homemade flat rice noodles into 1-inch-wide ribbons. See notes on how to handle store-bought fresh noodles.

Heat a large wok or nonstick skillet over medium heat and add 1 tablespoon of oil. Add the garlic and sauté until fragrant, about 1 minute.

Add the gai lan, tofu, and toss to combine.

Add the noodles and sauce. Toss the noodles until all of them are coated. (You may use a spatula or chopsticks to help if needed.)

Spread out the noodles and let cook, untouched, to char the noodles a little, 1 to 2 minutes. This step is to give the noodles the wok aroma and flavor.

Taste and season with more soy sauce or vegan fish sauce if needed. Add the ground pepper, then serve with pickled chiles and their vinegar or red pepper flakes.

Thanks for sharing this recipe. We made it last night and it was quick and tasty. However, i did notice that the writing mentions oyster sauce but there isn't any listed in the actual recipe. Was that an oversight?

Made a triple batch for company . The vegan fish sauce smelled so good! Will add this dish to our cooking rotation whenever I’m able to find fresh wide rice noodles. Thank you for helping us get quality Thai food to our table in our rural setting!
