This Classic Eclair recipe is a Pate a Choux based hollow pastry shell filled with creamy custard, then dipped into a shiny chocolate glaze. Simple, yet sophisticated and all around delicious chocolate eclair recipe!

Classic Éclair

milk

sugar

vanilla extract or vanilla bean emulsion

flour

unsalted butter

whole milk ((125 g = 1/2 cup))

water ((125 g = 1/2 cup))

salt

all-purpose flour

eggs (at room temperature)

oz chocolate (chopped)

water

tbsp corn syrup

Mint leaves (washed, dried)

Whisk 6 egg yolks &amp; 3/4 cups sugar and 1/4 cup flour together in a large bowl, add a little bit of milk if the mixture is too thick and difficult to whisk.

Bring 2 cups of milk to a boil.

Slowly pour the milk into the egg yolk mixture, continuously whisking. This is called ‘tempering the yolks’.

Pour the mixture back into the pot and bring to a boil, continuously stirring and going along the bottom of the pot in zigzag motion with a rubber spatula, to prevent scorching. It WILL stick if you stop.

Cook for 1-2 minutes. Remove from heat.

Add 1 tbsp vanilla extract &amp; 2 oz butter. Allow the butter to melt and stir for it to incorporate.

Cover the custard with plastic wrap it touches the custard. To speed up the process you can transfer the custard into a jelly-roll pan, spread it thin, covering with plastic wrap will avoid skin formation. Refrigerate until ready to use.

How to Make the Custard

Line 2 baking sheets with parchment paper. Set aside.

Fit a pastry bag with plain 1/3 inch tip nozzle and drape the bag over a large glass.

Preheat oven to 425°F.

Whisk 5 eggs together.

In a heavy bottom, saucepan combine 1/2 cup milk, 1/2 cup water, 4 oz butter, ¼ tsp sugar &amp; ¼ tp salt. Bring to a boil.

Once the mixture is at a rolling boil, add 1 cup flour all at once, reduce heat to medium and start mixing the dough with a wooden spoon vigorously. Continue doing so for another 2-3 minutes to evaporate some of the moisture.

Transfer the dough to the bowl of a mixer fitted with the paddle attachment and start stirring the dough on medium speed for 1-2 minutes to cool it down slightly.

Add the eggs to the mixture in 4-5 additions, each time allowing the mixer to incorporate the eggs fully before adding more. The dough might separate at first, but it will come back together as you continue stirring and adding more eggs. The mixture should be thick but still fall off the paddle attachment in a thick ribbon. You might not add all eggs before this happens. It is ok.

Transfer the warm dough to the piping bag and pipe out 2-3 inch logs, about 2 inches apart. Place the first baking sheet in the oven and bake for 15 minutes, then reduce the heat to 375°F and continue baking until golden in color, about 25 minutes. DO NOT open the door before the éclairs are golden, they will deflate.

Keep the other sheet with piped logs in the freezer or refrigerator until the first sheet is out of the oven.

Allow the éclairs to cool.

How to make Pate a Choux

Combine all ingredients in a heatproof bowl, set over a pot of simmering water. Bottom of the bowl should not touch the water.

Warm up the mixture and allow the chocolate to melt, stirring it occasionally. Do not overheat. The mixture should only be warm, not hot.

Take off the heat and allow the chocolate to completely melt, stirring it every couple of minutes until chocolate melts.

How to make the Chocolate Glaze

Wash and dry thoroughly each leaf.

Set egg whites in a heatproof bowl, over simmering water and heat, stirring continuously until 140 degrees, or pretty hot to the touch.

Allow the egg whites to cool.

Dip each leaf into the egg whites, allowing most of the egg whites to drip off. The leaves should only be damp with egg white.

Dredge each leaf in the sugar on both sides and set on a paper towel or a cooling rack for sugar to harden up.

Mint Leaf Decoration

Fill a pastry bag fitted with a plain 1/4 inch star/plain tip with custard.

Fill each éclair with custard by inserting the tip into the top of the pastry in 3 places, closer to both ends and in the middle, and squeezing the custard in until it almost starts to come out. Wipe off excess. Leave for 15 minutes for the skin to form in the places where you inserted the custard.

Carefully, dip top of each éclair into the chocolate glaze.

Top with 1 mint leaf as a decoration.

Refrigerate until ready to serve.

Fill and Decorate the Classic Eclair

Recette de Ricardo d'éclairs aux deux chocolats. Ces éclairs aux deux chocoltats dont un dessert qui fera le bonheur des dents sucrées lors de réceptions.

Éclairs aux deux chocolats

ml (1/2 tasse) d'eau

60 ml (1/4 tasse) de beurre non salé

ml (1/2 tasse) de farine

oeufs

60 ml (1/4 tasse) de sucre

ml (1 c. à thé) d'essence de vanille

ml (2 c. à soupe) de farine

250 ml (1 tasse) de lait, chaud

120 g (4 oz) de chocolat blanc, haché

90 g (3 oz) de chocolat mi-sucré, fondu

Dans une casserole, porter l'eau et le beurre à ébullition. Retirer du feu. Ajouter la farine d'un seul coup et brasser vigoureusement à la cuillère de bois jusqu'à ce que la pâte forme une boule et se détache des parois.

Retirer du feu et laisser tiédir quelques minutes. Ajouter les oeufs, un à la fois, en battant énergiquement entre chaque addition, jusqu'à ce que la pâte soit lisse et homogène.

Préchauffer le four à 190 °C (375 °F). Beurrer une plaque de cuisson et la tapisser de papier parchemin.

À l'aide d'une poche à douille remplie de pâte à choux, former sur la plaque des éclairs d'environ 7,5 cm (3 po) de longueur.

Cuire au centre du four jusqu'à ce que les éclairs soient dorés, environ 30 minutes. Ouvrir les éclairs sur la longueur afin que la vapeur puisse s'en échapper, puis les remettre au four quelques instants pour les faire sécher légèrement. Sortir du four et laisser tiédir 5 minutes.

Pâte à choux

Dans une casserole hors du feu, fouetter le sucre, l'essence de vanille et les oeufs jusqu'à blanchiment. Ajouter la farine et fouetter jusqu'à ce que la préparation soit lisse et homogène. Ajouter le lait chaud et le chocolat blanc. Remuer à feu doux jusqu'à épaississement.

Retirer du feu et couvrir d'une pellicule de plastique. Réfrigérer.

À l'aide d'une poche à douille, fourrer les éclairs. À l'aide d'une cuillère, napper le dessus des éclairs d'un peu de chocolat mi-sucré fondu. Réfrigérer.

Crème pâtissière

Bonjour pourquoi ma pâte à choux est tombé en la sortant du four....

Assez facile à faire et résultat satisfaisant. Sauf que: j'ai eu beaucoup de crème pâtissière pour la quantité d'éclairs (ou pas assez de pâte à choux pour la quantité de crème pâtissière). La prochaine fois, je double la pâte à choux.

Pâte à choux facile à réussir. Quel est le diamètre de douille à utiliser pour ne pas avoir des éclairs trop minces? 20 mm? Difficile d'entailler le côté de l'éclair à la sortie du four. Crème pâtissière excellente et consistance parfaite. Comme tous les autres, j'aurais aimé savoir comment glacer de chocolat l'éclair pour une belle finition (pas à la cuillère...).

Ces éclairs sont absolument délicieux.  Mais comment fait-on pour que nos éclairs demeurent fermes.  Comment les conservés.  Merci beaucoup.

Excellente recette. Toute la famille a aimé. Pour le chocolat noir sur le dessous, il faut simplement le faire fondre et le napper sur les éclaires, tel que mentionné dans la recette.

Très belle recette, la pâtisserie c'est toujours comme ça, on pense que ça marchera pas et bang la magie prend forme.. surtout vrai ici dans la cas de la crème pâtissière .. un délice !

Cette pâtisserie, aimée depuis des lustres, se décline de plusieurs façons : chocolat blanc, thé matcha, truffe, érable, etc. Comme la version classique manquait toutefois à notre répertoire, on a décidé d’en créer une, avec une twist au goût du jour.

Éclairs au chocolat (les meilleurs)

g (1/4 tasse) de farine tout usage non blanchie

g (3 c. à soupe) de cassonade

ml (2 c. à soupe) de beurre non salé, ramolli

105 g (1/2 tasse) de sucre

g (3 c. à soupe) de farine tout usage non blanchie

ml (4 c. à thé) de fécule de maïs

œuf

jaune d’œuf

375 ml (1 1/2 tasse) de lait

ml (1 c. à thé) d’extrait de vanille

ml (1/2 tasse) de crème 35 %

60 ml (1/4 tasse) d’eau

60 ml (1/4 tasse) de lait

g (3 c. à soupe) de beurre non salé

ml (1 c. à thé) de sucre

pincée de sel

g (1/2 tasse) de farine tout usage non blanchie

œufs

ml (1 c. à soupe) d’huile végétale

Dans un bol, mélanger tous les ingrédients jusqu’à ce que la pâte soit homogène. Entre deux feuilles de papier parchemin, abaisser la pâte à 3 mm (1/8 po) d’épaisseur. Congeler 30 minutes. 


Retirer le papier du dessus. À l’aide d’un couteau, découper 6 rectangles de 14 x 3,5 cm (5 1/2 x 1 1/4 po) dans l’abaisse. Réserver au congélateur jusqu’au montage des éclairs.


Craquelin

Dans une petite casserole hors du feu, mélanger au fouet le sucre, la farine et la fécule. Ajouter l’œuf et le jaune d’œuf. Bien mélanger. Incorporer le lait et la vanille. Porter à ébullition à feu moyen en remuant constamment et en raclant le fond et les parois de la casserole jusqu’à ce que le mélange épaississe. Retirer du feu. Dans un tamis, au-dessus d’un bol, passer la crème pâtissière pour retirer les grumeaux.

Couvrir directement la surface de pellicule plastique. Laisser tiédir, puis réfrigérer 3 heures ou jusqu’à ce qu’elle soit complètement refroidie. Au moment d’utiliser la crème pâtissière, la mélanger avec une spatule pour lui redonner de la souplesse.

Dans un autre bol, fouetter la crème jusqu’à ce qu’elle forme des pics fermes. À l’aide d’un fouet, incorporer la crème fouettée à la crème pâtissière. Réfrigérer la crème légère jusqu’au montage des éclairs.

Crème légère 

Entre-temps, dans une casserole, porter à ébullition l’eau, le lait, le beurre, le sucre et le sel. Retirer la casserole du feu. Ajouter la farine d’un seul coup et mélanger vigoureusement à la cuillère de bois, jusqu’à ce que la pâte forme une boule lisse qui se détache des parois. 


Remettre la casserole sur un feu moyen et cuire en remuant pendant 3 minutes ou jusqu’à ce que la pâte s’assèche. Cette étape est cruciale pour la réussite de la recette de choux. Une fine pellicule se forme dans le fond de la casserole lorsque la pâte s’assèche. Transvider dans un bol ou dans le bol du batteur sur socle.


À l’aide d’une cuillère de bois ou du fouet plat, incorporer les œufs, un à la fois, en remuant bien entre chaque ajout, jusqu’à ce que la pâte soit lisse et homogène.


Placer la grille au centre du four. Préchauffer le four à 190 °C (375 °F). Tapisser une plaque de cuisson d’un tapis de silicone ou de papier parchemin.


Transvider la pâte à choux dans une poche à pâtisserie munie d’une douille unie de 2 cm (3/4 po) de diamètre. Sur la plaque, façonner lentement la pâte en cylindres d’environ 14 cm (5 1/2 po) de longueur et 2 cm (3/4 po) de largeur, en les espaçant. 


Déposer les rectangles de craquelins sur les cylindres de pâte sans les écraser.

Cuire au four 5 minutes. Réduire le four à 180 °C (350 °F) et poursuivre la cuisson 20 minutes ou jusqu’à ce que les éclairs soient bien dorés. Laisser refroidir complètement sur une grille. Congeler à cette étape, si désiré.


À l’aide du manche rond d’une cuillère de bois, transpercer l’éclair d’un bout à l’autre (voir note). À l’aide d’une poche à pâtisserie munie d’une douille unie de 1 cm (1/2 po), farcir chaque éclair de crème légère par les trous. 


Dans un bol assez large pour pouvoir y tremper les éclairs, fondre le chocolat au four à micro-ondes de 1 à 2 minutes, en remuant toutes les 30 secondes. Incorporer l’huile au fouet. 


Tremper rapidement le dessus des éclairs dans le fondant, en le faisant pivoter au besoin. Réfrigérer 30 minutes avant de servir. Les éclairs se conservent 3 jours dans un contenant hermétique au réfrigérateur.

Fondant au chocolat

Il faudrait absolument indiquer dans la recette de ne pas ajouter les oeufs a la pate a choux quand elle est encore chaude! Sinon les oeufs cuisent et ne monte pas le éclairs quand ils sont dans le four. Dommage car cette recette demande beaucoup de préparation/temps!

Recette excellente, sauf il faudrait vraiment mentionner de laisser reposer au four dans les étapes, car si on les fait refroidir à l'extérieur du four, ils s'affaissent.

Délicieuse recette! Ma belle-mère a fait la recette en choux au lieu des éclairs. C’était excellent, mais elle dit que la crème pâtissière était un peu trop épaisse.

Manqué la cuisson des éclairs !  Dommage!

J’aurais jamais pensé que je pouvais faire ça...  j’ai pris une grosse drill à mon mari pour faire le trou dedans... ça marche à merveille.

Classic Eclair Recipe

tsp salt

cornstarch

Tbsp unsalted butter (room temperature)

oz semi-sweet chocolate chips (*)

heavy whipping cream

In a Medium saucepan, combine 1/2 cup water, 1/2 cup milk, 8 Tbsp butter, 1 tsp sugar and 1/4 tsp salt. Bring to a boil over medium heat then remove from heat and stir in 1 cup flour all at once with a wooden spoon.

One flour is incorporated, place back over medium heat about 1 1/2 to 2 minutes stirring constantly (to release extra moisture and partially cook flour), or until dough comes together into a smooth ball and a thin film forms on bottom of pan.

Transfer to a large mixing bowl and beat using an electric hand mixer on medium speed for 1 minute to cool the mixture slightly. Add 4 eggs, 1 at a time, allowing each egg to fully incorporate between additions. Beat until dough is smooth and forms a thick ribbon when pulled up.&nbsp;

Pipe eclairs over baking sheet lined with silicone using a 1/2” round tip. Pipe 18-20 (4” long and 3/4” wide) strips, keeping them 1 1/2" apart.

Bake at 425˚F for 10 minutes. Without opening oven, reduce temp to 325˚F and, bake 30 minutes longer or until golden brown. Transfer to wire rack to cool while making pastry cream.

How to Make Choux Pastry

In a medium saucepan bring 2 cups milk, vanilla bean and scraped seeds just to a boil, stirring to prevent film from forming.

In a separate large bowl, whisk together 3/4 cup sugar, 1/4 cup corn starch and pinch of salt. Add 4 egg yolks and whisk until smooth, creamy and lightened in color - it takes a couple of minutes but it will get there.&nbsp;

Gradually (so the eggs don't curdle), while whisking constantly, add hot milk in a steady stream until all of it is incorporated. Pour mixture back into saucepan and bring to a boil while whisking constantly then whisk another 30 seconds until mixture is thick and pudding-like in consistency.

Transfer pastry cream to a medium bowl (whisk in 2 tsp vanilla extract if using). Cut butter into pieces and quickly whisk into the custard until fully incorporated Cover with plastic directly over the surface of the cream, let it cool slightly then refrigerate 30 minutes or until cool.&nbsp;

With a small pastry tip, poke 2-3 holes through the bottom of each cooled pastry. Pipe cream inside, scraping off excess. Refrigerate eclairs while making chocolate glaze.

How to Make Pastry Cream:

Place 4 oz of chocolate chips into a small heat-safe bowl.&nbsp;

Heat 1/2 cup heavy whipping cream (in a saucepan or microwave) until it is just at a simmer then remove from heat and pour over chocolate chips. Let rest 2 minutes then whisk from the center outwards until smooth sauce forms.&nbsp;

Dip the top half of filled and chilled eclairs into the chocolate sauce, allowing excess to drip off.

Magic Chocolate Éclair Cake (No-Bake!)

graham crackers (about 2 sleeves)

vanilla pudding mix ((2 boxes))

tub Cool Whip

semisweet chocolate chips

½ cups half & half

corn syrup (optional for shine)

Set out a 9X13 inch baking dish. Lay graham crackers over the bottom of the dish, in a single layer. Break them, if needed, to fit the bottom of the pan.

In a large mixing bowl, combine the pudding mix and milk. Beat with an electric mixer, on medium-high, until thick and smooth. Then use a spatula to fold in the Cool Whip.

Spread the pudding mixture evenly over the graham crackers. Then lay a second layer of graham crackers over the top.

In a clean mixing microwave-safe mixing bowl, combine the chocolate chips, half &amp; half, and corn syrup. Microwave for 1 minute. Then stir to melt the chocolate chips. If needed, microwave another 30-60 seconds. Stir until smooth.

Pour the chocolate ganache topping over the graham crackers. Smooth into an even layer. Then cover and refrigerate for at least 4 hours. Cut and serve.

This is the only eclair recipe you will ever need! Everything you need to know about how to make perfect French eclairs in your home kitchen!

The perfect eclair recipe

Unsalted butter

Water

60 g Whole milk

Salt

70 g Bread flour (high protein content flour, eg. 13%)

110 g Egg

Sift flour then measure and set aside

Place butter, water, milk, salt and sugar into a saucepan over medium heat

As soon as the mixture starts to boil remove from heat, add the flour in one go and whisk vigorously with a Rubber spatula until it forms one smooth ball and flour bits are not visible

Place the saucepan back to the stove and cook the dough for 3-5 min over medium heat mixing constantly. There should be a thin skin formed on the bottom up the saucepan

Transfer the dough into a bowl and let it cool down slightly before mixing the egg in. Only add a small amount of egg at a time, consistently whisking after each addition. You should reach a consistency which is not too runny, not too firm but just fine to pipe. The exact quantity of egg will need somewhat your judgement

With a French star nozzle tip pipe 6 equal size eclairs on Perforated &quot;air&quot; baking mat leaving enough space in between them as they will puff. Optionally dust with icing sugar, that also helps to avoid cracks. Place the tray into the freezer for 30 min at least

Pre-heat oven to 200 C / 392 F (no fan)

Lower oven temperature to 170 C / 338 F (no fan) and bake the eclairs for 40 min. Do not open the oven door in the first 30 min. If you are baking it the first time it is a good idea to take one eclair out of the oven at 40 min and check its consistency. If it is golden in colour, nicely puffed up, does not deflate on room temperature and the middle of the eclair is not raw (it is ok if it&#039;s a bit wet, it will dry while cooling down) then it is considered to be done
