Spicy egg masala gravy that goes great as a side dish with biryani, chapathi, pulao. This is a simple recipe to which you can make some variations to suit your taste like spices and herbs.

Egg masala

boiled eggs

tbsp oil

onions (chopped (about 2 large))

1½ tsp ginger garlic paste (or fine chopped)

tomatoes (ripe, chopped (about 2 large))

green chili

turmeric (or haldi)

Salt

½ tsp kasuri methi ((optional))

mint

tbsp curd or yogurt (or coconut

bay leaf curry leaves)

½ tsp cumin (or jeera)

(or laung (optional))

cardamoms (or elaichi (optional))

cinnamon (or dalchini (optional))

Pour 3 cups water to a pot. Gently place the rinsed eggs and boil on a medium heat. Cover the pot &amp; boil until you see cracks on the eggs. Turn off the stove and rest the eggs for 10 mins. Discard the water &amp; keep the eggs immersed in cold water to cool down.&nbsp;

Then remove the shell. Pierce with a fork randomly to make some gashes. This helps the eggs to absorb the flavors.

Boiling eggs

Heat a pan with oil. Add cumin, bay leaf, cloves, cardamoms and cinnamon. Allow them to splutter.

Add onions, sprinkle salt and fry till onions turn slightly brown or caramelize to enhance the aroma.

Optional step - Skip this step if using yogurt. While the onions fry, make a fine paste of the cashews or coconut with some water. You can also blend together tomatoes and cashews.

Add ginger garlic paste to the onions and saute till it becomes fragrant.

Next add tomatoes, fry till they turn mushy.

Add chili powder, turmeric and garam masala powder. Fry till it begins to smell good.

Pour the yogurt or cashew paste or coconut paste, fry till the mix leaves the sides of the pan.

How to make egg masala

Add eggs, mint leaves, coriander leaves. Fry for 2 mins , preferably till you get a mint aroma.

Pour water just enough to partially cover the eggs. Cook covered till the egg masala thickens.

Sprinkle some kasuri methi if you have.

Serve egg masala curry with rice, roti or paratha.

Making egg masala gravy

Make this simple and quick Dhaba-style egg masala curry for a delicious Indian meal. It gets done in under 20 minutes and uses simple pantry staples.

eggs (hard boiled)

mustard oil (or any other vegetable oil)

cumin seeds

(crushed)

whole black cardamom (crushed)

onion

ginger

garlic

tomato

tomato puree

coriander powder

Kashmiri red chili powder

turmeric powder

garam masala spice mix

salt

Start by boiling the eggs. Add 6-7 cups of water to a medium-size saucepan and keep the eggs in a single layer at the bottom of the pan. Eggs must be covered with water for at least an inch. Bring the water to a rolling boil over high heat. Add 2 tsp salt to the pan. Adding salt will prevent the eggs from breaking and the whites to run out while boiling. Try this tip and thank me later 🙂

Now reduce the heat to low and simmer for 10 minutes. Remove the pan from heat and let it sit aside for 5 minutes. Drain the hot water and fill the pan with cold water. Let the eggs cool down for 5 minutes. Drain the water, take the eggs out and peel them.

Wipe the peeled eggs with a kitchen towel and prick them with a fork all over. If you don’t wipe the eggs, they will splutter a lot while frying because of the moisture in them. Pricking also helps while frying.

Heat 2 tbsp mustard oil in a skillet over medium-high heat. Shallow fry the eggs until they are browned from all sides. Keep rotating them while frying. If it is spluttering a lot, cover the skillet with a lid.

Take out the fried eggs on a plate and keep them aside.

Heat the remaining oil (2 tbsp) in a medium-size wide pot over medium-high heat. Add the oil left from frying the eggs to this pot too. Once the oil is hot, add 1 tsp cumin seeds, 3-4 crushed cloves, and 1 crushed black cardamom and let them crackle for 3-4 seconds.

Add 1 cup finely chopped onion and fry on medium-high heat until slightly browned. Keep stirring while frying. It will take 4-5 minutes.

Now add 1 tsp chopped ginger and 1 tsp chopped garlic and fry until onions are nicely browned. It will take another 4-5 minutes.

Add ½ cup finely chopped tomato and ¼ cup tomato puree and cook for 3-4 minutes.

Add 1 tbsp coriander powder, 2 tsp Kashmiri red chili powder, 1 tsp turmeric powder, ½ tsp garam masala spice mix, and salt to taste and cook for 3-4 minutes. If the masala is getting too dry and is starting to burn from the bottom, splash a little water.

Now add the boiled and fried eggs and 2 cups of water to the pot and bring the gravy to a boil.

Reduce the heat to medium-low and simmer for 5-6 minutes. Add 2 tbsp crushed Kasuri methi and 1 tsp lime juice and mix well. Garnish with fresh chopped cilantro. Egg masala is ready to serve. Serve it hot with any Indian bread or rice.

Make 4 pieces of each cheese slice and keep on a plate.

Apply butter to pav/white rolls and roast them on medium heat (inner side down) till golden brown.

Flip them over and place cheese pieces and cook for another minute. Then keep aside.

Add butter, onions, green chillies, salt and mix well.

Break 2 eggs and sprinkle salt, onions, red chilli flakes, cheddar cheese and cilantro.

Cover and cook on low heat till egg white is just done.

Remove the lid, loosen edges and place the eggs on pav/white rolls.

Egg white should be completely cooked and egg yolk should be runny.

If you do not prefer runny yolk, cook eggs a bit longer till yolk is completely cooked.
