Egg Mayonnaise is a simple starter dish of hard-boiled eggs and mayonnaise. Making your mayonnaise turns this into a delicious dish despite its simplicity.

Egg Mayonnaise

eggs, (hard boiled)

butter lettuce salad

mayonnaise

paprika

Fresh chives, (finely chopped)

Peel the shells from the eggs and rinse them. Cut the eggs in half lengthwise. Wash and dry a few lettuce leaves and arrange in a serving dish. Extend the mayonnaise with a few drops of cold water to make the mayonnaise just thin enough to coat the egg halves without being runny. Taste the sauce and modify the seasoning to taste if necessary.

Place the eggs on top of the lettuce, and coat the top of the egg with the extended mayonnaise. Sprinkle with paprika and garnish with a few chopped chives.

Follow our recipe for pastry case canapés then fill with curried egg mayo, herbs and a dot of fruity relish

Spiced egg & coriander mayonnaise vol-au-vent filling

vol-au-vent cases (see 'goes well with')

eggs

tsp mild curry powder

onions

coriander

lemon juice

mango chutney to serve

Put the eggs in a bowl and roughly crush into small pieces with a fork. Mix in the mayonnaise, curry powder, spring onions, coriander, lemon juice and some seasoning. Chill until ready to use.

Divide between 10 vol-au-vent cases, sprinkle with coriander leaves and top with a small dollop of mango chutney.
