Put the sugar in a saucepan with 75ml water. Simmer until the sugar has dissolved, then cool and chill.

Beat the yolks with the vanilla until smooth. Add the condensed milk, brandy and cooled sugar syrup, mixing well.

Pour into a jug and chill for at least 2 hrs. Serve within 24 hrs, over ice.

Separate the egg yolks into a medium size bowl, add the coconut sugar, and beat on high with a hand mixer for 1 minute, or until the sugar has completely dissolved. Add the almond milk, coconut milk, 1/4 teaspoon fresh grated nutmeg, vanilla, and stir to combine.

In a separate bowl, beat the egg whites until stiff peaks. Add the egg whites to the nog mixture, and gently mix with hand mixer. You don&#39;t have to worry about deflating the egg whites.
