My easy egg salad recipe makes the best egg salad sandwiches. It starts with perfectly hard boiled eggs and a creamy dressing. Make egg salad sandwiches or serve in lettuce wraps for a light meal.

Easy Egg Salad

eggs

Dijon mustard

plain Greek yogurt

¼ teaspoon each of salt and pepper (or to taste)

red onion (or to taste)

Cook eggs: Fill a pot with cool water and add the eggs. Bring to a boil over high heat. Cover the pot with a lid, turn off the heat and let the eggs cook in the hot water for 12 minutes.

Transfer the eggs to a bowl of ice water and let them sit for 5-10 minutes. Peel the eggs.

In a large bowl, whisk together the Dijon mustard, plain Greek yogurt (or mayonnaise), salt and pepper.

Chop the eggs and add them to the bowl, along with the chopped red onion.

Stir until well combined.

Taste and season, as needed.

Serve egg salad in a sandwich with lettuce, on toasted bread topped with sliced avocado, or in lettuce wraps.

This deli-worthy egg salad is deliciously creamy with the perfect balance of flavors and textures!

Perfect Egg Salad

celery

parsley ((and/or fresh dill))

mayonnaise

lemon juice

salt

paprika

garlic powder

black pepper

Place the eggs in a saucepan covered by an inch of water and bring it to a rolling boil.  Cover the pan, remove it from the heat and let it sit for 10-12 minutes.  Drain the water and place the eggs in an ice bath to cool.  Peel and discard the shells.  Cut the eggs in half, scoop out the yolks and set aside.  Dice the egg whites.In a medium-sized mixing bowl, mash the egg yolks with the mayonnaise, mustard, lemon juice, salt, pepper and paprika.  Add more salt and pepper to taste.  Gently stir in the egg whites, celery, green onions and parsley until everything is coated and equally distributed.  If the mixture is too dry, add some more mayonnaise. Cover the bowl and let the egg salad chill in the fridge for at least 1-2 hours before serving to allow the flavors to meld.  Serve on a bed of lettuce as a salad, with crackers, on toast, or as a filling for sandwiches, croissants or wraps with some lettuce.  Makes 4 generous servings.

This recipe is awesome.  I usually end up having to make some adjustments to most recipes but this egg salad is spot on.

I´ve made egg salad for years now. But the little things you add to it makes the change! Wonderful taste and I will make it like that in future.  Because we have a couple of chicken since last year, we get a lot of eggs. Hope we don´t get a problem with cholesterol.  ;-))
This receipe and the mayonaise recipe and the "eierlikör"  are great recipes. Did not know it was so easy to make.
