The Best Scrambled Egg Toast

bread (I use white, sourdough bread)

tbsp butter, plus more to butter the bread

eggs

feta cheese crumbles

parsley

Spread a thin layer of softened butter on both sides of the bread. Frythe bread over medium heat for about 2 minutes on each side, until a goldencrust forms.

Remove the bread from the frying pan and add 1/2 tbsp. of butter. Add the eggs and feta cheese and cook, stirring often, for about 3-4 minutes, until the eggs are cooked through.

Divide the eggs between the bread slices andsprinkle them with freshly chopped dill or parsley.

Scrambled Egg Toast

Air Fryer Egg Toast

bread

eggs (grade A large eggs)

salted butter (spreadable and at room temperature)

kosher salt and pepper

indent

Using a sturdy glass, carefully press down in the center of the bread slice to make a well for the egg, being careful not to tear the bread. Use your fingers to even up the indent so the egg can spread nicely. Repeat so you have 2 slices bread. See video demonstration.

Butter bread with salted butter. Use spreadable butter to make it easier to butter the bread without tearing it.

Place rack in the air fryer basket to raise the food up closer to the heating element. Spray rack with oil to ensure bread doesn’t stick.

crack

Crack one of your 2 eggs into a small dish, such as a ramekin, being careful not to break the yolk.

pour

Carefully pour egg into the indentation in one of the bread slices. Repeat with the other egg, pouring it into the second piece of bread.

season

Sprinkle the eggs with a little kosher salt and pepper to taste.

cook

Air fry at 375℉ for 6 minutes for an over easy runny egg yolk. Add another minute or 2 for a more cooked egg yolk.

serve

Carefully remove the egg toast from the air fryer with a spatula. Serve and enjoy!
