Eggless Pancakes &amp; Egg Substitutes for Pancakes

all-purpose flour*

Flax egg: mix 3 tablespoons warm water

banana

pumpkin puree

Chia egg: mix 3 tablespoons hot water

Commercial Egg Replacers: see package directions

In a large bowl, combine the flour, baking powder, salt, and sugar (if using). 

Select your egg replacer, and once mixed and you&#8217;ve waited the amount of time listed, add it to the middle of the bowl. If you&#8217;re using canned pumpkin or mashed banana, there&#8217;s no waiting.

Add the melted butter, if using, and milk to the bowl. 

From the middle, combine the wet ingredients with the dry ingredients, moving outwards to incorporate everything into a cohesive batter. 

Preheat a non-stick griddle or non-stick pan to medium-high heat. Grease it with butter or spray, and immediately pour a little less than 1/4 cup of batter to form each pancake.

Wait about 2 minutes, until defined edges form and the batter has begun to bubble up at the top to flip. Cook for an additional minute until the tops feel &#8220;bouncy&#8221; to the touch. 

FINALLY!! An egg free pancake recipe that tastes GREAT! I used the flax egg substitute and you couldn’t tell these pancakes were made without eggs!

Eggless Pancakes

In a mixing bowl first take 1 cup whole wheat flour. If the wheat flour is ground in a mill, then do sieve the flour once or twice before using.

Add 1 pinch salt. Skip adding salt if using salted butter.

Add 3 teaspoons sugar. You can even add 1 to 2 teaspoons sugar or skip it entirely.

Add 1 teaspoon baking powder and&nbsp;¼ teaspoon cinnamon powder.

With a wired whisk mix all the dry ingredients very well. Keep aside.

Take 1.5 cups milk in a sauce pan. Keep the pan on a low to medium-low flame and begin to heat milk. You can also use almond milk or soy milk.

When the milk is becoming hot do stir occasionally. Do not boil the milk but let it just become hot. You should see some steam coming from the milk.

When the milk becomes hot, add 1 tablespoon unsalted butter. You can also use oil instead of butter. Use a neutral flavored oil.

Mix the butter in the hot milk very well.

Then add this mixture to the dry ingredients in the bowl.&nbsp;with a wired whisk mix very well.

Break lumps with whisk and make a smooth batter. A few tiny lumps are fine in the batter.&nbsp;

The pancake batter is of a pourable consistency and not thick. If the batter looks thick, then you can add ¼ to ⅓ cup more of hot milk. Depending on quality of whole wheat flour more milk can be added.

Keep the pancake batter aside.

Then heat a heavy tawa/griddle or pan. Spread ½ to 1 teaspoon unsalted butter or oil on the tawa.

With a ladle gently pour the batter. Do not spread the batter with the ladle. The batter spreads on its own. You can even use a ¼ to ⅓ measuring cup to pour the pancake batter.

On a medium-low flame cook the pancake.

Cook it till you see bubbles forming on the surface.

When the base becomes crisp and golden, gently turn over pancake.

Cook the second side also till golden. Then remove and serve.

You can even stack these pancakes in a casserole or roti basket and then serve warm. Make all eggless pancakes this way.

Serve these fluffy whole wheat pancakes with fresh fruits or jam or whipped cream or maple syrup or honey or chocolate syrup.

This pancake recipe without eggs yields incredibly moist and tender pancakes that will be the star of any breakfast.

Pancakes without Eggs

all purpose flour

butter (melted)

Maple syrup

Add flour, sugar, baking powder, and salt to a large bowl and mix to combine.

Combine the wet ingredients separately by adding milk, vanilla extract, and melted butter to a medium bowl and mix to combine.

Once combined the liquid mixture can be added to the large bowl and mixed with the dry ingredients to form your batter.

Heat your griddle to 350 degrees and butter the surface.

Working in batches, pour 1/4 cup of batter onto griddle and let the eggless batter cook until bubbles form. Flip the pancake and cook for an addition 1-2 minutes. Repeat until all of the batter has been used.

Serve these delicious pancakes with additional butter and maple syrup.

Savoury Green Pancake Recipe (vegan)

apple cider vinegar

yeast

onion powder

dry oregano

coriander spice

salt and coarse black pepper

tahini

water (plus more for thinning)

soy sauce (tamari)

rice wine vinegar

sriracha

maple syrup

avocados,

cherry tomatoes, halved

sesame seeds

Place all sauce ingredients into a jar with a lid and shake to incorporate. Set aside.

Chop any veggies you choose for the topping, eg. tomatoes, avocados, etc.

Making the Sauce and Garnishes

Rough chop spinach, slice green onions, chop cilantro, and green chilis if using.

Add oil to the bottom of a cast iron (or non-stick) heavy bottom skillet, heat over medium-high until it shimmers. Skip if oil-free.

Add garlic, green onions, and jalapenos if using. Season with a good pinch of coarse ground sea salt. *use a splash of water as needed if oil-free

Cook over medium-high heat for a minute or two while the onions sizzle and cook.

Stir in the spinach until it wilts (2-3 minutes). Remove from heat, stir in cilantro, and transfer to a bowl.

Pancake Ingredients (both options)

In a medium mixing bowl add the flour, baking powder, milk*, apple cider vinegar, S&amp;P, whisk until smooth. *Any plant-based milk will work, I&#039;ve used oat and soy.

Stir in the green onion-spinach-cilantro mixture.

Batter Tip: the batter is medium thick, if it&#039;s too thick, add a tablespoonful of milk or water to thin out (but not too much!).

AP Flour Pancake Batter Version (self-rising flour recipe in Notes)

Add chickpea flour, nutritional yeast, spices (onion powder, dry oregano, coriander spice, s&amp;p) to a medium bowl. 

Add the tahini and 3/4 cup water* - whisk until fully incorporated.

Batter Tip: If too thick, add a tablespoonful of water at a time until thick pancake batter consistency is met.

Chickpea Batter (gluten-free option)

Heat a tablespoonful of oil* in a cast iron or heavy bottom frying pan over medium-high heat until it shimmers. (Use non-stick pan if oil-free.)*or spray with cooking oil

Add a 2-4 tablespoon scoop of batter to the pan, cook for about 2 minutes until puffed up and golden. Other visual cues: the edges will start to look cooked and you may see bubbles form on the surface.

Flip and cook until golden on the other side. Another 2-3 minutes.

Transfer to a serving plate then continue cooking pancakes until all the batter is used up.

You may need to add more oil each batch if you are using a cast iron.

For the oil-free version, use a non-stick pan and skip the oil.

Frying the Pancakes

To serve, pass extra green onion slices, chopped cilantro, avocado chunks, cherry tomato halves, and a bowl of spicy sauce for dipping or drizzling.

Eggless Pancakes Recipe

¼ cup All purpose flour (Maida)

Baking powder

Unsalted butter (Melted)

Mix dry ingredients

Take dry ingredients (all purpose flour, sugar, salt, baking powder) in a bowl. Mix it using a wire whisk and make a well in the center.

Add Wet ingredients &amp; mix.

Add water and melted butter, mix till everything comes together.

Heat the pan and add butter.

Now heat the pan on medium heat. Once hot add some butter. I use the stick and just swirl around the center of the pan by holding the stick with the hand.

Pour the batter

Now take around ⅓ cup of batter. Pour into the hot pan, DO NOT spread. Let the batter flow by itself.

Flip the pancake

You will see lots of bubbles which will form and break. When the bubbles stop breaking, you will notice, edges are cooked, but the center is still wet. It is time to flip. Flip the pancake with a spatula. You will see nice light golden color in the bottom.

Cook other side

Cook the other side as well till it is golden as well, you can lift slightly with a spatula and see if it is ready or not. Repeat the same with rest of the batter.
