Learn how to make an einkorn sourdough starter at home with just two ingredients and a little bit of time.

Einkorn Sourdough Starter

Einkorn flour

Water

Mix 1/2 cup of flour and 1/4 cup filtered water.

Stir vigorously, making sure to incorporate everything well. Scrape down the sides.

Place a clean tea towel over the bowl and set aside. Allow it to sit for 24 hours.

Day 1:

Discard half of the mixture and repeat the process.

Add 1/2 cup flour, 1/4 cup water, stir well, and cover.

Day 2:

Repeat the day two instructions for days three through five. Discarding half, then feed.

Day 3-5

Every 12 hours, discard half the mixture and feed 1/2 cup flour with 1/4 cup water and mix well.

By day seven, there should be enough beneficial bacteria and yeast present to bake fermented sourdough goodies.

You will know it is ready if by 4-12 hours after you feed it, it bubbles and doubles in size.

Day 6 &amp; 7

My einkorn starter has a dark brown crust on the top everyday.  It’s a super thick  and tacky starter, I’m on day 5 and it stopped doubling too.

I am on day 8 of this starter, and was a little confused with what to do after day 7 so the last time I fed it was 20 hours ago. It's the first time I didn't feed it in 12 hours since day 6. Is it ok to wait 24 hours at this point to feed it then starting tomorrow do every 12 hours? Or should I feed it ASAP? I was planning on leaving it out and feeding for another 4 weeks until it's mature enough for bread.

I am so happy that I pondered across this helpful information! I started an Einkorn starter and it's day 4 and WOW I had to change to a larger jar on day 2....the blog I have been following stated to only remove a heaping spoonful of discard twice per day when feeding for the first 5 days! After that, the girl said to feed it once per day until 3 weeks is completed. I said to my husband that I feel like at the rate it's growing I will need to transfer it to a gallon jar, lol!! So, this morning I am definitely going to discard half of the jar and follow your advice. Questions: 1) Should I allow my starter to sit for an additional 7 days feeding this ratio you suggested before baking with it, since I was not discarding enough before each feeding? I wasn't sure if I know have messed up the ratios or anything. And, 2) How long will a glass container with discard last in the fridge for baking other goodies like pancakes, crackers etc.?
