The Canadian Fried Dough Pastry recipe is really easy to make. The dough is is slightly sweet, thanks to the added vanilla and cinnamon.

Canadian Fried Dough Pastry

water

dry yeast

sugar

milk

salt

vanilla

eggs

all-purpose flour

oil (for frying)

granulated sugar (for dusting)

cinnamon

In a large mixing bowl, stir together the yeast, warm water and pinch of sugar.

Allow to stand a couple of minutes to allow yeast to swell or dissolve.

Stir in remaining sugar, milk, vanilla, eggs, oil, salt, and the flour to make a soft dough.

Knead by hand or with a dough hook for 5 minutes, adding flour as needed to form a firm, smooth, elastic dough.

Place in a greased bowl. Place bowl in a plastic bag and seal. If not using the dough right away, you can refrigerate it.

Let rise in a covered and lightly greased bowl about 30-45 minutes.

Gently deflate dough. If dough is coming out of the fridge, allow to warm up for about 40 minutes before proceeding.

Take a piece of dough the size of a golf ball and roll out into an oval.

Heat about 4 inches of oil in a wok or frying pan. Temperature of the oil should be about 385°F.

Before putting in oil, stretch the ovals into a tail shape, thinning them out and enlarging them, like a beaver’s tail.

Add 1-2 dough pieces at a time to the hot oil.

Turn once to fry until the undersides are dark brown.

Lift the tails out with tongs and drain on paper towels.

Fill a large flat bowl with a 2 cups of white sugar.

Put the tails in sugar with a little cinnamon and shake off excess.

You can add jam, Nutella or a few drops of lemon juice!

5 Minute Air Fried Honey Cinnamon Tortilla Chips are the best treat! Drizzled with warm honey and cinnamon gives a candied taste and a delicious crunch!

Air Fried Honey Tortilla Chips

white flour tortilla wraps, (large or small)

honey

cinnamon, (divided)

⁣cooking oil spray⁣

Mix honey and one and a half teaspoons of cinnamon until well incorporated.

Spray both sides of the tortilla with cooking oil spray (I used avocado oil spray).

Sprinkle a little cinnamon on one side of the tortilla, then spread about a tablespoon of the honey mixture on the other side covering it all, using a spoon or brush. ⁣⁣⁣

Using a pizza cutter, cut the tortilla into large triangles.

Place in an oil sprayed air fryer basket for 3-5 minute at 350F. Place the tortilla in a plate then drizzle the remaining melted honey inside the air fryer on top of the crispy tortilla. Enjoy warm or when cooled.

Elephant Ears

Tbsp sugar

unsalted butter

tsp pure vanilla extract

(1/4 oz each) packets rapid rise yeast

all purpose flour

Tbsp cinnamon

vegetable oil, peanut oil or canola oil

Dough: In a small saucepan, combine milk, salt, butter and 2 tablespoons of sugar on medium heat. Heat while stirring until butter melts and sugar dissolves. Remove from heat, Let cool until warm, about 110°F. Sprinkle yeast on top and let sit for 10 minutes until mixture is foamy and yeast has bloomed.

Pour mixture into the bowl of a stand mixer fitted with the dough hook. Add vanilla. Mix on low gradually adding the flour until a dough forms. Once all is added, increase the speed and knead for 5 minutes, or until smooth and dough pulls away from the sides of the bowl. (Alternately, knead by hand on a lightly floured non-stick surface.)

Cover bowl with a damp cloth and let rise 45-60 minutes or until it has doubled in size. Combine cinnamon and reserved 6 Tbsp of sugar, set aside.

Fry: In a large pot or 12-inch deep skillet, heat 2-3 inches of vegetable oil to 360-365°F. Keep roughly in this range.

Pinch or slice balls of dough about the size of an egg. Roll out into thin sheets. Drop into oil and fry for 1-2 minutes per side or just until puffed and golden. (It may take less time depending on the oil temp and thickness)

Drain on paper towels and immediately sprinkle with cinnamon sugar. Serve and enjoy. (You can also  brush them with melted butter if desired, then sprinkle with cinnamon sugar.)

My grandmother would make these with leftover dough when she would make kraut burgers and cinnamon rolls. We call it grebble. Great memory, thank you!
