Elote (Grilled Mexican Street Corn) Recipe

Grilled Corn

mayonnaise*

lime juice (plus wedges for serving)

lime zest

chili powder chile powder

Cotija cheese

cilantro

Sea salt (to taste)

Grill the corn according to this recipe.

In a small bowl, stir together the mayonnaise and lime juice and zest.

Spread the mayo mixture over the corn and sprinkle with the chili powder, Cotija, and cilantro. Season to taste with salt and serve with lime wedges for squeezing.

Mexican Corn on the Cob (Elote)

corn (husked)

sour cream ((or Greek yogurt

mayonnaise

butter

chili powder

cayenne pepper

cotija cheese (or queso fresco crumbled)

cilantro (chopped)

lime wedges

Preheat an outdoor grill to medium-high heat. Brush grill grate with oil.

Grill corn, turning occasionally, until fully cooked and lightly charred, 10 to 12 minutes. 

While corn is cooking, mix sour cream and mayonnaise together in a small bowl until well combined. Place butter in a separate bowl and melt. In another small bowl combine chili powder and cayenne pepper. Set all three bowls aside.

Remove from the grill and immediately brush with melted butter, then spread each evenly with the sour cream mixture. Sprinkle with cheese and chili mixture. Garnish with cilantro and serve with lime wedges on the side.

This is my absolute favorite summer side dish!  I used to wait anxiously all year for the street vendors to come out so I could buy some, until I learned to make it on my own at home.  There's seriously nothing like it, it's sooo good.

This Elote Tuna Salad has all the elements of Mexican Street Corn, but is served in salad form with tuna, macaroni, and more. It has a little bit of a kick and a whole lot of satisfying flavor!

Elote Tuna Salad

dry elbow macaroni

unsalted butter

corn (from about 4 ears (you can also use frozen))

Portofino Tuna

red onion

jalapeño ((from 1 jalapeño pepper))

tsp finely chopped cilantro (plus more for topping)

cotija cheese

Tbsp regular or light mayonnaise

tsp chili powder

cayenne

Tbsp lime juice

Bring medium saucepan of lightly salted water to a boil. Once boiling, add elbow macaroni and cook until al dente. Drain and cool.

In the meantime, add butter to a non-stick grill pan or frying pan. Once melted, add corn kernels in and let cook for about 4 minutes before stirring.&nbsp;Let sit for another 4 minutes and stir again. Repeat a couple more times until the corn is nicely charred. Remove corn to a large bowl and let cool a bit.
