Elote is classic Mexican street corn, grilled and slathered in a irresistible sauce. This recipe has an added bonus: built-in handles for easy eating!

Elote (Mexican Street Corn)

corn

neutral oil

sour cream

mayonnaise

feta cheese, cotija cheese, or queso fresco

chili powder

garlic powder

cumin

salt

Lime wedges,

Cilantro,

Shuck the corn by peeling down the outside layers one at a time and keeping them attached, facing downwards away from the cob. When you&#8217;ve finished, use kitchen twine or string to tie the leaves together (see the photos).

Use your hands to rub oil on each corn cob evenly, then place them on a baking sheet.

In a small bowl, mix the sour cream, mayonnaise, feta or queso fresco (crumbling any large chunks into smaller chunks with your fingers), chili powder, garlic powder, cumin, and kosher salt in small bowl.

Place the corn on the grill and cook until it begins to blacken, then turn. Cook about 12 to 15 minutes total, until blackened on all sides.

Place the corn back on the baking sheet and use a spoon to coat it with cheese mixture. Garnish with a squeeze of lime and torn cilantro leaves. Serve immediately, using the tied husks as a handle for easy eating.

Grilled Corn

mayonnaise*

lime juice (plus wedges for serving)

lime zest

chili powder chile powder

Cotija cheese

cilantro

Sea salt (to taste)

Grill the corn according to this recipe.

In a small bowl, stir together the mayonnaise and lime juice and zest.

Spread the mayo mixture over the corn and sprinkle with the chili powder, Cotija, and cilantro. Season to taste with salt and serve with lime wedges for squeezing.

Elote, commonly called Mexican Street Corn, is grilled corn smothered in a creamy mayo sauce and topped with chili powder, cheese and lime. Serve it as a snack or side dish for summer BBQ&#039;s and potlucks. 

Elote Recipe

Tablespoons Mexican crema (,

Cotija cheese (, freshly grated,

chili powder (,

lime (, quartered)

cilantro (, for garnish, optional)

Bring a large pot of salted water to a boil over medium-high heat. Add the ears of corn and cook until tender, about 10 minutes (or cook them in the instant pot).

(Optional step): Brush corn with melted butter and grill corn on medium heat until slightly charred.

Mix the mayonnaise and Mexican crema together and spread a thin layer all around the corn ears.

Sprinkle generously with cotija cheese and then desired amount of chili powder. Serve garnished with cilantro, and with a lime wedge on the side for squeezing on top.

Enjoy immediately.

Very tasty but it's too spicy to enjoy.  I will need to make a different recipe for the kids.

I have blue cheese crumbles on hand.  What do you think?

Just like they make it in Southern Calif and into Mexico. Could not be any easier than the recipe here. I like the last tid bit about corn in a cup. I've made this with partially frozen corn kernels in cast iron skillet with butter until thawed and cooked, then toss with cheese and top with cream sauce. I like cilantro in my sauce but some don't. Spice left to individual and limes as well.

Hence "tastes better from scratch" everyone knows of that seasoning that determines exactly how much chili powder and lime flavor you'll get. I use it as well and should try this homemade instead to experience more authentic. 💯

I havent made anything I did not like from this site! The corn is a must try!
