Low-Carb Cabbage Enchiladas

green cabbage

olive oil

onion,

red bell pepper, chopped

Kosher salt

garlic,

cumin

chili powder

cilantro,

c. shredded Monterey jack

c. shredded cheddar

Since it didn't go over how to make a good shredded chicken for this - I didn't have a slow cooker but brought a pot of water to boil (added taco seasoning, salt, a bit of pepper, and garlic powder to the water) and boiled the chicken for about 2-3 hours on low-med. Took the chicken out of the water, Shredded it with two forks, popped it into a pan with a tbsp of olive oil and tbsp of minced garlic, added about 1/3 c of the water from the boiling and 1/3 c of red sauce, reduced the liquid in the chicken (don't dry it out!)

Salt and pepper the mixture after however you see fit.

Tried this.  Way to hard to peel the cabbage leaves back to make the shells.  Great idea, but Does not work at all.

I made this the cabbage was tough as all get out

These Low Carb Enchiladas Are An Instant Classic

Not quite traditional, but creamy, smoky, and delicious. 

Chicken Bacon Ranch Enchiladas

bacon,

lb chicken breasts,

ranch seasoning and dressing mix

(10 oz) can green Chile enchilada sauce

ranch dressing

Mexican cheese blend

flour tortillas

Green onions, chopped,

Preheat oven to 375°F and grease a 8x11-inch baking dish with nonstick spray.

In a medium bowl, stir together bacon, shredded chicken, ranch seasoning packet, and 1/2 of the enchilada sauce.

In a separate bowl, stir together the ranch dressing and remaining enchilada sauce. Spread a thin layer of the mixture over the bottom of the prepared pan.

Spread 2 tablespoons of the ranch/enchilada sauce mixture down the center of each tortilla. Top with shredded chicken, and sprinkle with cheese and roll up.

Place each rolled tortilla seam side down in the baking dish and top with any remaining sauce and shredded cheese.

Bake until bubbly and cheese has melted, 25-30 minutes. Drizzle with ranch before serving. Enjoy!
