Easy Energy Balls

Old Fashioned rolled oats

Mix all ingredients together in a bowl. Freeze the bowl for 5 minutes. 

Roll the dough into 20 small balls, pressing the dough together with your hands. We used a 1 1/2-inch cookie scoop (#40) to make uniform balls. You can also make smaller balls if desired. (If the texture of your nut butter makes the dough very dry, add a little more honey or a few tablespoons milk of choice until you can press it together into a ball shape.) Refrigerate for up to 2 weeks. Enjoy!

Chocolate Date Energy Balls (Vegan & Paleo)

Line a baking pan with wax paper, set aside. (You will not be baking these, you just need a place to set your rolled bites as you make them).

Put dates, pecans and cashews in your food processor fitted with an “S” blade or in your Vitamix. Process until mixture is fine and homogeneous.

Add the rest of the ingredients in the order listed (cocoa powder, salt, almond butter, almond milk, &amp; vanilla) to your food processor and process until mixture just starts to clump together.

Roll 1 TBS portions of your “dough” into balls and place them on your prepared baking sheet.

Put them in the fridge or freezer until they harden.

Transfer to an airtight container to save for later! These can be stored at room temperature, but will last longer when kept in the fridge or freezer! I think they taste the best cold/frozen!

Chocolate Date Energy Balls

No-bake Chocolate Peanut Butter Protein Balls made with only 7 ingredients in less than 15 minutes. Each ball is packed with 7 grams of protein with no protein powder required!

Chocolate Peanut Butter Protein Balls

(45 grams) rolled, old fashioned or quick oats

(70 grams) hulled sunflower seeds

(140 grams) hulled hemp seeds

(250 grams) natural peanut butter

medjool dates

maple syrup

fine sea salt (, omit if your peanut butter contains salt)

(90 grams) semi sweet dairy free chocolate chips

water (, as needed)

To a food processor add the dates. Process them on their own until they are in very small pieces and starting to turn pasty.

Add the peanut butter, maple syrup and salt and process again to combine.

Pour in the oats, sunflower seeds, hemp seeds and chocolate. Process until everything is evenly combined. You will need to scrape down the sides of the food processor a couple of times. Pulsing rather than running the food processor is a little more effective at getting it all mixed up.

Add water a small drop at a time, pulsing in between until it starts balling up and you can easily squeeze the mixture together in your hands to form a ball. It should only need 1 to 2 tablespoons.

Remove the blade and tip the mixture out onto a clean surface. Scrape out any wet bits in the bottom of the food processor bowl with a spatula and give the mixture a quick knead to mix them in. Then break off pieces and roll into balls. I used approximately 1½ tablespoons per ball but you can make them any size you like.

Transfer to a container and store in the refrigerator or freezer. They will keep for a couple of weeks in the fridge, or up to 3 months in the freezer.

Add all of the ingredients to a large bowl. Mix together until well incorporated. Cover and chill in a refrigerator for at least 30 minutes.

Grab about a heaping tablespoon full of the mixture and press it into a ball with your palms. Repeat with the remaining oat mixture, making about 16 energy bites.

Store in a sealed container in the refrigerator.

Transfer the mixture to a bowl and stir in the chocolate chips. Use a 2-tablespoon cookie scoop to scoop and roll into balls.

Store extra energy balls in the fridge. They also freeze well. To thaw, leave them at room temperature until soft.
