These Paleo Almond Butter Jelly Energy Bars are one of our favorite bars that fuel us for workouts and snacking on the go. Made with few ingredients; no oils and no refined sugar.

Paleo Coconut Almond Butter Jelly Energy Bars

c almond meal/flour

coconut flour (sifted

c unsweetened coconut, shredded

tsp baking powder

tsp Cinnamon

tsp sea salt

c non dairy milk (almond

c dried plums (prunes)

c natural creamy almond butter (no sugar added)

vanilla

tbsp natural creamy almond butter

prunes

almond or coconut milk milk

unsweetened coconut, shredded, to top

color

Preheat oven to 350F. Grease or line an 8&#215;8 pan with parchment paper. Set aside.

Sift coconut flour and almond meal together in a bowl. Add shredded coconut, baking powder, salt, and cinnamon and mix.

Blend dried plums and creamy almond butter. I used a  Food Processor  for this. After blending, Set aside.

Whisk the egg, milk, and vanilla together.

Add your blended almond butter and prune mix to dry ingredients. Stir gently. Then fold in the egg/milk/vanilla.

Press batter into lined or greased 8&#215;8 pan. Once that&#8217;s set, make your topping.

Blend together 2-3 tbsp coconut or almond milk, 1 tbsp almond butter, and 1/2 cup or less of prunes and a handful of berries (optional for color). Best in food processor to blend ingredients until jam or jelly paste is formed.

Spread this over the batter in your 8&#215;8 pan. Sprinkle shredded coconut on top.

Bake 350F for 25 minutes. Remove and check progress of batter. If you want these bars to be more sticky and moist, then bake 26-28 minutes and remove. If you&#8217;d like them thicker and chewy, bake for 30 minutes.

Remove from fridge and let cool. Then place in fridge.

Store in fridge for 30 minutes before slicing

These Protein Granola Energy Bars are a powerhouse of nutrition and energy! They're loaded with the goodness of oats, honey, chia seeds, protein, and chocolate chips. Perfect for taking with you, wherever you go.

Protein Granola Energy Bars (Gluten-free, Nut-free)

old fashioned rolled oats

vanilla protein powder

TB chia seeds

cinnamon

tsp table salt

sunflower (SunButter) butter (or a nut butter, if you prefer)

pure honey

milk (any kind)

mini chocolate chips

tsp pure vanilla extract

Preheat oven to 350F with rack on lower middle position. Grease an 8&#215;8 baking pan and set aside.

In a large bowl, combine the oats, protein powder, chia seeds, cinnamon, and salt. Whisk to combine.

In another bowl, combine the sunflower butter, honey or maple syrup, milk, chocolate chips, and vanilla extract. Mix until incorporated. Pour mixture into the large bowl of dry ingredients. Stir and fold until fully combined. Using a rubber spatula, scrape mixture into the greased baking pan. Firmly and evenly press down.

Bake 18 minutes, or until edges turn golden grown. Center should still be soft. Let cool in pan completely before cutting into bars. If needed, cover and chill in fridge for easier cutting.

No-Bake Oatmeal Peanut Butter Energy Bars quickly come together with wholesome ingredients like oats, nuts, chia seeds, dried fruit, peanut butter, and honey!

Oatmeal Peanut Butter Energy Bars

nuts (such as pecans, walnuts, cashews, almonds, etc.)

oats

raisins (OR dried cranberries)

chia seeds

nutmeg

peanut butter (OR alternative nut butter)

honey

vanilla extract

In the bowl of a large food processor, pulse the nuts until finely ground (but stop before they start turning to nut butter!). Add the oats, raisins, chia seeds, cinnamon, and nutmeg to the nuts; pulse five (1-second) pulses to combine. Add the peanut butter, honey, and vanilla to the mixture; pulse until all of the ingredients are well blended, scraping the sides of the bowl as necessary.

Scrape the mixture into an 8- by 8-inch baking dish; firmly press into an even layer. Cover and chill for two hours or until firm. Use a knife to slice into bars. Store leftovers in an airtight container in the refrigerator.

Easy Homemade Larabars Recipe (4 Ingredients)

Medjool dates, pitted

To a food processor fitted with an S blade, add the dates and vanilla. Blend until the dates start to clump up and form a thick pastes.

Add in the nuts and pulse a few times until the nuts are evenly incorporate then turn on the food processor and blend until a crumbly mixture forms (about 30-45 seconds).

Transfer to a baking sheet lined with parchment paper, use your hands to combine the mixture, and form into a ball.

Roll out the mixture to about 1/4&#8243;-1/2&#8243; and form a rectangle with your hands or press the mixture into a small square pan. Place in the refrigerator and chill for 20-30 minutes.

5-Ingredient Energy Bars

almonds*, pulsed

quick 1-minute oats, uncooked

honey (or maple syrup)**

almond butter (or nut butter of choice)

Tbsp. coconut oil, melted

salt (optional)

dried cranberries, dried tart cherries, chocolate chips, other dried fruits or nuts.

Place almonds, oats, and cranberries (or other mix ins you want) in a medium sized bowl.

Heat the honey, coconut oil and nut butter in a small saucepan over low heat until mixed.

Pour the peanut butter mixture over the oat and almond mixture and stir together.

Once mixed, transfer to an 8x8-inch baking dish and flatten into a 1-inch thick square.

Cover with plastic wrap and place in the fridge overnight or for 2-3 hours. Then, cut and store in an airtight container. Will stay good for up to 5 days in fridge. (I also like to store mine in a freezer safe baggie. When I am ready to grab a bar, I&#039;ll let it sit on the counter for 10 minutes to soften and then enjoy!)

Delicious!  I cut the recipe in half and added toasted slivered almonds, raisins, cranberries and mini chocolate chips.  A healthy on the go snack.

What can I substitute for the coconut oil?

Delicious!! So easy to prepare! Great flavor, I added dried cranberries and many chocolate chips. Would be perfect for kid and adult snack.

easy and quick recipe, super tasty result but I have been a bit annoyed. I took the bars I made for my bike ride and they kind of melted. From bite sized squares it switched to a huge block and my beewrap did not like it. Wheather was particularly hot.

I will try bring some on another ride with a cooler weather. If it happens again, I guess i would keep this recipe as a winter one.

Aloha. I made your recipe and the bars came out wonderful. My whole family liked it and what's more amazing is that my husband liked it as well. He normally doesn't like this type of snack but he ate more than one. LOL. Mahalo for an easy but more importantly, delicious recipe. Will definitely make this again.

No Bake Energy Bars

Chewy no-bake granola bars made with oats, dates, almond butter and macadamia nuts! Plus it&#39;s glazed with a vanilla white chocolate glaze!

Vegan White Chocolate Macadamia Nut Bars

oat flour

dates

brown rice syrup

coconut sugar

almond butter (or other nut butter)

brown rice crisps (or regular rice crisps)

macadamia nuts

white chocolate chips (optional)

tsp vanilla extract

tsp caramel extract

cocoa butter

almond butter

sugar

Add the rolled oats, oat flour and dates to a food processor.

Process for about 10-15 seconds until the dates and rolled oats are finely chopped.

Heat the brown rice syrup, coconut sugar and almond butter in a small saucepan until the sugar is dissolved and small bubbles start to appear.

Pour over the oat and dates mixture and process for another 10-15 seconds until well combined. You will get a sticky and soft dough.

Add the macadamia nuts, brown rice crisps and vanilla/caramel extracts to the bowl of the food processor. Process for a few seconds until combined (you don't want to process for too long to keep a crispy texture). You might have to scrape down the sides of the bowl once or twice. If you want to add chocolate chips: transfer the mixture to a large bowl, add the white chocolate chips and mix with your hands until just incorporated.

Transfer the mixture to a baking pan line with parchment paper. Using clean hands, form a log and flatten until desired thickness. Press the mixture very firmly.

Put in the refrigerator for at least 1 hour. Cut into 6-7 bars.

Bars

Add all ingredients except vanilla extract to a small saucepan.

Heat on low, stirring frequently until the cocoa butter is melted.

Remove from heat and stir in the vanilla extract and mix again until everything is well combined.

Let sit for about 10-15 minutes until the white chocolate is a little bit thicker. Be careful, it can firm up really fast if your kitchen is cold.

Using a spoon, drizzle the bars. Put in the refrigerator until the chocolate is hard (about 30 minutes).

Wrap the bars with plastic wrap and keep in the refrigerator or at room temperature.

The bars will keep for at least 2 weeks at room temperature.

I made this and the only modification I made was to leave out the 1/4 cup coconut sugar. It came out absolutely great! My family agreed that these were better than the actual bar. Thank you for such a terrific recipe!

I made this!  I popped my own brown basmati rice by cooking it, then drying it out in the oven on 200 for about 2 hours, then frying it in coconut oil!  (It only puffs slightly without commercial pressure poppers.) 
I also used raisins instead of dates, because I didn’t have any.  I stuck to the rest of the recipe pretty closely, Thomas...I even added caramel flavor!  Yum! You were right!  The rice I popped gives it such a wonderful, crunchy texture, and a warm, nutty flavor.  I love them!  So satisfying.  I made them for my son; I don’t even LIKE these in the Clif version.  But these are more flavorful and less dry.  I WILL say, mix by hand (verrry sticky and difficult) or use your kitchen aid with dough hook attachment, if you have a cheap food processor...I nearly killed mine!

Just made these, slightly different though. Here's what I did.

1 cup rolled oats
1/4 white whole wheat flour
4 dates (~100g)
4T Honey
1T Molasses
1/4 cup brown sugar
2 tbsp almond butter 
1 and 1/2 cups puffed wheat
4T Water
1/3 cup macadamia nuts
28g white chocolate chips
1 tsp vanilla extract
1/2t salt
1/4t cinnamon

Same method you used, but with the different ingredients, I had to add a bit of water after the puffed wheat to get the proper texture. Going to keep tweaking this a bit and see what I can come up with. Going to need them for the upcoming century ride I have!

I made these and they taste just like the clif bars! My usual recipe does not but are just as delicous - they also have like 1/10 of the sugar... I may try these again but without the 1 /4 c sugar because the brown rice syrup is super high in sugar already :(
