Shrimp fajitas are an easy, flavorful, one-pan meal! Shrimp are tossed with bell peppers, onion, fajita seasoning, and zesty lime juice.

Shrimp Fajitas

shrimp

onion (thinly sliced)

bell peppers (thinly sliced)

olive oil (divided)

lime

tortillas

chili powder

cumin

garlic powder

paprika

oregano

salt

pepper

avocado (or guacamole), sour cream, and salsa

In a small bowl, stir together the fajita seasoning ingredients.

Toss

In a large bowl, add the shrimp, two tablespoons of olive oil, the juice from half a lime, and the fajita seasoning. Toss it all together until the shrimp is well coated and set it aside to marinate.

Cook

Heat two tablespoons of olive oil in a large skillet over medium heat. Add the bell peppers and onions, and saute for 4-5 minutes or until softened and the onions have started to caramelize. Transfer to a plate.

Saute

In the same skillet, add the shrimp and cook for about 2-3 minutes on each side or until they turn pink.

Stir and Serve

Add the bell peppers and onions back into the skillet, give everything a toss, and squeeze more lime juice on top. Serve immediately with tortillas and extra toppings such as sour cream, pico de gallo and guacamole.

One-Dish Oven Baked Fajitas

chicken breasts ((up to 2lbs. chicken will work))

sweet bell

yellow onion, thinly sliced

tbsp homemade taco seasoning

tbsp tapioca starch ((see notes))

brown rice

guacamole

pico de gallo

greens

black or pinto beans

cilantro

lime wedges

Preheat oven to 400.

Place the sliced peppers and sliced onion in a 9x13 baking dish. Try to push the peppers and onions to the edges of the pan as much as possible to make room for the chicken. Place chicken breasts on the bottom of the dish (if you have some peppers underneath the chicken that&#039;s okay).

Drizzle the chicken and veggies with olive oil. Next, mix the seasoning mix and tapioca starch together. Then sprinkle this over the chicken, peppers, and onions. (NOTE: if using store-bought seasoning, you do not need the tapioca starch - just sprinkle directly on chicken/veggies).

Bake for about 25-30 minutes, or until the internal temperature of the chicken is 165 F (see notes). Mix peppers half way through baking time.

Remove chicken breasts from the baking dish and shred with two forks. Place shredded chicken back in dish and mix with the pepper and onions.

Preheat the oven to 400ºF. In a small bowl, stir together all the ingredients for the fajita spice mix

Slice the portobellos, bell peppers, and onions into 1/4 inch wide strips. Place the sliced vegetables on a large sheet pan. Drizzle the olive oil over the vegetables then sprinkle the fajita spice mix over top. Use your hands to toss the vegetables until everything is well coated in oil and spices.

Roast the vegetables in the fully preheated oven for 40 minutes, or until the vegetables are slightly wilted and the edges have a nice brown color. Stir the vegetables half way through the roasting time to make sure everything gets even exposure to the hot air.

After removing the vegetables from the oven, squeeze fresh lime juice over top. Sprinkle chopped cilantro over the vegetables. To serve the fajitas, scoop a small amount of the roasted vegetables into each tortilla and add a slice of avocado.

Grab some tortillas and top them with the most deliciously seasoned mix of ground beef and tender peppers and onions. You can also use this recipe to make some seriously good rice bowls!

Ground Beef Fajitas

beef

vegetable oil

green bell pepper (thinly sliced)

red bell pepper (thinly sliced)

orange or yellow bell pepper (thinly sliced)

For serving: tortillas

Heat a large skillet over medium heat. Add the ground beef and break apart, cooking until browned. Add in all spices and stir well to coat. Continue cooking for another 2-3 minutes.

Remove the beef from the skillet and set aside. Add in vegetable oil, onion and bell peppers. Sauté over medium heat until vegetables are charred and tender (~8-10 minutes). Add beef back in and stir well, then remove from heat.

Serve with tortillas and/or rice + desired toppings.
