Apple Bread Recipe

apples

lemon juice

tbsp agave

cinnamon

applesauce (or store bought)

flour

brown sugar (not packed)

tsp baking soda

nutmeg

allspice

salt

vegetable oil

tsp vanilla extract

baking spray

oz chopped walnuts

In a medium bowl combine apple, 1/8 tsp cinnamon, agave, and lemon juice. Set aside.

Preheat oven to 350°. Spray a 9 x 5 inch loaf pan with baking spray.

In a medium bowl, combine flour, baking soda, nutmeg, cinnamon, allspice and salt with a wire whisk. Set aside.

In a large bowl mix oil, egg whites, sugar, apple sauce and vanilla; beat at medium speed with a hand or stand mixer until thick. Scrape down sides of the bowl.

Add the flour mixture, then blend at low speed until combined. Do not over mix.

Fold in apples and walnuts.

Pour batter into loaf pan and bake in the center rack about 55 minutes, or until a toothpick inserted in the center comes out clean.

Let the pan cool at least 20 minutes, bread should be room temperature before slicing.

This recipe is delicious! Made it this afternoon and it was divine, so moist and flavorful! Thank you Gina for making a recipe so delicious with only 2tbs of oil, and minimal sugar!

Scrumptious and easy recipe, thank you! I made this for Rosh Hashanah and was so pleased with how it turned out. The cake is very moist and flavorful. I used Lakanto instead of sugar, added a second diced apple, and also a little boiled cider to amp up the apple flavor.

Thanks Gina!  I just made the bread a second time!  I switched to unsweetened applesauce and I realized I had entered the sugar into my tracker as packed sugar.

Delicious!  The slow cooker applesauce is better than anything commercially available and easy peasy!

Made this last week. My husband, daughter and son in law all loved it!  I was the only one who knew it was a light recipe. It was gone in 24 hours!

Hi Gina,  we just made this recipe and absolutely loved it. I entered the ingredients into my meal tracker and the calories were a bit higher. I used regular apple sauce and regular brown sugar. Should I have used a no sugar added apple sauce and a brown sugar substitute like Splenda?  Thanks for another great recipe.

I used a combination of oat flour and almond flour it turned out great.. I have to admit I didn’t follow the amount of flour recommended exactly. I put a banana in to add some natural sweetness and used a Splenda blend. I also added chopped walnuts and pecans to the batter and made a crumble type topping with sf maple syrup  finely chopped apples and more pecans walnuts, cinnamon and pumpkin pie spice! So good!

Thanks, Michelle I think I’m gonna go ahead and try it with oat flour and the combination of almond flour.. I’ll let you know how it turns out! Gotta use all these different varieties of apples

My husband is the baker in the family and he decided to make me something slightly healthier than his usual brownies and banana bread. It was delicious and not too sweet which is how I like my baked treats.  I see a lot of Apple Bread in the future.  Maybe next time he'll make them as muffins.

I made these into muffins. Flavor is awesome, but I found them to be a little dense; it's possible I underbaked them, though a toothpick came out as clean. I used homemade chunky applesauce. Overall, I really enjoy these, just wish they were lighter and fluffier.

Absolutely delicious!!!  I only had AP flour, and didn’t use walnuts because of kiddos with nut allergies, but loved this bread!!  And it was easy and so moist, didn’t taste “light”.  Most definite do-again!

Made exactly as written but used 2 whole eggs instead of just the whites. Delicious and very moist. It was done at about 44 min in my oven. Will def make again!

Excellent! I made it as muffins, and since we can’t eat nuts I added blueberries. It made 14. This will be a staple in our house. I don’t know how to share a photo from my ipad, sadly.
