No party would be complete without a potato salad, and this one is certainly worth serving up.

Kipfler potato salad

1.5kg kipfler potatoes, scrubbed

(80 milliliters) extra virgin olive oil

Dijon mustard

tbs white wine vinegar

tsp caster sugar

Asian (red) eschalot, finely chopped

dill, fronds picked

Create this veggie version of sandwich favourite Coronation chicken using chickpeas. It makes a lovely addition to a summer picnic menu.

Coronation chickpea sandwich filler

can chickpeas, drained and rinsed

mayonnaise

1⁄2 tbsp mango chutney

tsp mild curry powder

1⁄2 lemon, juiced

raisins

red onion, finely chopped

Pat the chickpeas dry using kitchen paper. Combine the mayo, chutney, curry powder and lemon juice in a bowl. Season well.

Tip in the raisins, onion and chickpeas and mix to combine. Spoon the filler into rolls or sandwich between bread slices with a few lettuce leaves. Will keep chilled for three days.
