Make your favorite soup recipe at home with this amazing Instant Pot Zuppa Toscana Copycat. It will make you feel like you are eating in a restaurant rather than your own kitchen.

Instant Pot Zuppa Toscana (Olive Garden Copycat Recipe)

olive oil

onion (diced)

Italian sausage (casings removed)

garlic (minced)

red pepper flakes (add more for additional heat)

chicken broth (divided)

potatoes

salt and pepper (to taste)

heavy cream

kale (stems removed and roughly chopped)

bacon (cooked and crumbled)

Press the SAUTE button. Add the oil to the inner cooking pot. When the pot is hot, add the onion and sausage and sauté for 5 minutes, breaking up the sausage. Add the garlic and red pepper flakes and mix.

Add in 2 cups of chicken broth and stir to release any onion pieces that may have stuck to the bottom. Stir in the potatoes. Add in remaining chicken broth. Season with salt and pepper.

Place the lid on top and lock into place. Turn the valve to SEALING. Select MANUAL (or Pressure Cook). Set the time for 15 minutes.

When cooking ends, carefully turn the valve to VENTING for a quick release of the pressure.

Unlock and remove the lid, then stir in the cream. Heat through, then stir in the kale and the bacon.

An easy and delicious soup that is ready in less than 30 minutes.

Black Bean Taco Soup Recipe (Freezer Meal)

turkey

onion (chopped)

taco seasoning

corn (do not drain)

black beans

tomatoes

tomatoes (do not drain)

tomato sauce

green chilis

tortilla chips

cheddar cheese (optional topping)

Brown meat and onion, drain.

Stir in taco seasoning, corn, black beans, tomatoes, tomato sauce, and green chilis. Simmer on low heat for 20 to 30 minutes.

Serve with tortilla chips and your favorite toppings.

This makes an easy freezer meal too! After cooking, let soup cool down and then dump into a gallon-sized Ziploc bag or other freezer container. When you want to eat it, let it thaw in the fridge for 24 hours and then simmer on the stove until heated all the way through or microwave until heated all the way through.
