Salmon with lemon and ginger rub and fennel salad

For the lemon and ginger rub

lemons

tsp fennel seeds,

tsp sea salt

tsp black peppercorns

sugar

½ tsp ground ginger

½ tsp garlic granules

For the fennel salad

fennel bulbs, hard cores removed, thinly sliced

lemon juice

tbsp blossom honey

tbsp dill

For the sauce

crème fraîche

Put a cedar grilling plank (see Know-How) in cold water, weighing it down with several cans or jars to keep it submerged. Soak for at least 4 hours (see Make Ahead).

Heat/light the barbecue for direct medium heat (coals evenly distributed over the base of the barbecue).

For the rub, heat the oven to its lowest setting. Spread the lemon zest on a baking tray and bake on the lowest oven shelf for 10 minutes or until dried out (check regularly to make sure it doesn’t burn), then set aside to cool. Grind the fennel seeds in a pestle and mortar with the salt and peppercorns. Add the dried lemon zest and sugar, then grind again until fine. Mix in the ginger and garlic granules (see Make Ahead).

Sprinkle the spice rub over the salmon, pressing down so it sticks. Cover and leave in the fridge to marinate for 15 minutes.

For the fennel salad, mix together all the ingredients in a bowl. Season with salt and black pepper, then chill until ready to serve (see Make Ahead).

For the sauce, mix all the ingredients together in a small bowl, then cover and chill until ready to serve (see Make Ahead).

Remove the cedar plank from the water and put it on the grill. Close the lid if you have one and let it heat for 5 minutes. Turn the plank over and brush it with the olive oil. Put the salmon on top, skin-side down. Close the lid again and cook for 12-15 minutes until the fish flakes easily.

Serve the fillets with the sauce and salad alongside, with dill sprinkled on top to garnish.

This shaved fennel salad is crunchy, bright, and refreshing! The recipe is simple and delicious as written, but it&#39;s also wonderful with add-ins like orange segments, thinly sliced apples, or fresh mint.

In a large bowl, whisk together the olive oil, lemon zest, lemon juice, honey, mustard, salt, and several grinds of pepper. Add the fennel and toss to coat.

Add the fennel fronds, cheese, pine nuts, and parsley and gently toss. Season to taste and serve.

Best Fennel Salad Recipe

fennel bulbs- trimmed and cored (about 1 lb)

cucumbers,

red onion, thinly sliced

extra virgin olive oil

lemon zest

lemon juice, more to taste (***Meyer lemon

Trim the ends off the fennel bulbs, cut in half legnthwise and remove their core with a sharp knife.

Using a mandolin, shave the fennel bulb paper thin and place it in a large bowl. Use a cut-resistant glove to protect your fingers. (Or finely slice as thin as possible with a chef&#8217;s knife). You should have about 6 cups packed.

Shave the cucumber and onion with the mandolin and place in the bowl.

Add the chopped dill and zest the lemon over the salad.

Toss in the olive oil, lemon juice, salt, pepper, and sweetener and toss well.

Taste and adjust salt, honey, and lemon to taste, adding more as needed.

Very bright and refreshing. Love that it is so different from other salads, not boring. I added radishes instead of onions, because that is what I got from my CSA this week. Gave it a kick.

I just found this recipe because I was looking for something to do with leftover dill and fennel. This salad is absolutely delicious!

I made this recipe (no onion) and it was a big hit.  So fresh and the fennel is very refreshing.

This was delicious.  I made it without any additional sweetness and decided to use a squeeze of agave as another reviewer had added some honey.   It would have been good with or without the added sweetness.  I did shave some Parmesan on the top.  When I was looking for fennel salads, several did have Parmesan so I did add, but just like the added sweetness, it was delicious without!!!

This may be one of my favorite recipes ever!  So cool, light and refreshing, and a breeze to make with my food processor using the thin slicing disk.
Last minute I decided to add some thinly sliced naval oranges I had which added a great burst of color and perfect flavor with the fennel. If I had had toasted sliced almonds those would be good also, but didn’t have any and didn’t miss them! ☺️
Another plus is the leftovers the next day were even better after sitting.
