Celeriac remoulade is one of the simplest salads you will ever come across, perfect as a side dish or with some leaves for a healthy light lunch. 

Mary Berry's celeriac remoulade

lemon, juice only

mayonnaise

Dijon mustard

½ lemon, juice only

sugar

salt and black pepper

This wintery butternut squash salad makes a great side dish to Christmas ham, and would also go well with griddled pear wedges as part of a vegetarian platter of festive dishes.


Roast squash salad 

butternut squash

olive oil

thyme

garlic cloves, crushed

150 grams/5½ oz baby leaf spinach

pumpkin seeds (see Recipe Tips and How-to Video)

tbsp sherry vinegar

½ tsp runny honey

½ tsp wholegrain mustard

The ultimate leftover Christmas turkey recipe. Light, fresh and flavoursome. Don’t be alarmed by the long list of ingredients – it’s simply a quick marinate and assemble job.


Bang bang turkey

soy sauce

lime juice

palm brown sugar

hot chilli powder

five-spice powder

250 grams/9 ounces leftover turkey,

vegetable oil

shallots, finely chopped

ginger,

red chillies, seeds removed (according to taste), finely chopped

200 milliliters/7fl oz turkey (or chicken) stock

150 milliliters/5fl oz coconut milk

peanut butter

tbsp rice wine vinegar

tsp palm sugar or soft light brown sugar

tbsp kecap manis (optional)

Chinese lettuce

carrot,

courgette,

radishes,

red pepper,

spring onions, halved lengthways and cut into thin strips

2–3 red chillies, sliced

coriander

mint leaves

Colourful veg are chopped into the shape of couscous for this fresh-tasting and light dish. The dressing is optional if you decide to serve this as a salad – otherwise it makes a great side dish with a stew or tagine.
