Deliciously moist and decadent fig bread, with all the flavors of Fall!

Favorite Fig Bread (Fig Cake) Recipe

flour ((plus extra for dusting))

sugar

tsp baking soda

tsp baking powder

½ tsp ground cloves

nutmeg

cardamom

cinnamon

salt

vegetable oil

milk

eggs

tsp vanilla extract

figs

walnuts ((or pecans))

tbsp softened butter ((for greasing the pan/pans))

Preheat oven

mix dry ingredients

Mix dry ingredients (flour, sugar, baking soda, baking powder, ground cloves, ground nutmeg, cardamom, cinnamon, and sea salt) in a large bowl until combined.

crush walnuts

Place the walnuts in a ziplock bag and pound with a mallet until crushed. Another option is to use a small food processor. Fold the walnuts in with the dry ingredients.

mix wet ingredients

 In a medium bowl, whisk the wet ingredients (oil, milk, eggs, and vanilla and chopped figs).

Fold wet ingredients into the flour mixture and stir just until incorporated. Pour batter into a greased and floured bundt pan, or two loaf pans.

Bake fig bread

Bake in the oven, on the middle rack, for approximately one hour for a bundt pan. If using loaf pans, bake for approximately 45 minutes or until golden brown.

Cool before slicing

Cool the fig bread for approximately 10 minutes before removing it from the pan. Cool on wire racks completely before slicing it.

bananas,

all purpose flour

baking powder

walnuts, crumbled

Figs

Mix flax meal with water and let it sit for 5 minutes.

Flax Eggs:

Preheat oven to 350F (175C) and line a 8x4 inch loaf pan with parchment.

In a large bowl, combine flax eggs with maple syrup and olive oil until smooth.

Add in mashed banana, chopped figs and cinnamon.

Add in flour, baking powder and salt. Don’t over mix.

Fold in walnuts and pour the batter in the prepared pan.

Slice one or two figs and place them on the top. Gently press them down with your fingers.

Bake for 1 hour or until an inserted skewer comes out clean.

Remove from oven and let it cool for 10 minutes. Then remove from the pan and let it cool completely before serving.

Absolutely terrible.  Cost a fortune and I ended up throwing ito te garbage.  Totally bland and very dense.  Certainly not light and moist like they promised.  I'll go back to my original receipe which is always woderful!!  April

Disappointed as I used the almond meal in place of all purpose flour.  I think I should've pour perhaps 4 cups of almond.   I cooked it for 1:15 hrs and placed a skewer and it was clean, very brown top.  Let it cool but it is far too moist, almost a raw consistency.   Don't alter recipe, stick to all purpose flour

The bread looked beautiful when it came out of the oven.  I let is cool completely and was looking forward to a slice. However, it was a gooey mess on the inside. I was able to get about 4 slices from the ends but overall it was a mess. Although I must say that the flavors were wonderful.

This recipe was SO good! Please ignore the negative comments because mine turned out fantastically. I used ripe figs from our tree that I had previously frozen. Defrosted them and drained off the extra water. Also, I used eggs instead of flax eggs and pecans to replace the walnuts. Used very ripe bananas and regular flour. I especially loved that you can press the "3X" button to triple the recipe.... Which I did and baked in 10 medium loaf pans to freeze. Very handy. The only thing I would add too is a splash of lemon juice to keep the figs from turning color in the batter.
